6 cups peeled and diced sweet potatoes (around 2 - 3 large depending on their size)
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon thyme
1/2 teaspoon pepper
2 teaspoons salt
1/2 teaspoon paprika
up to 1/3 cup olive oil
1 head of garlic (around 12 - 15 cloves), minced
1 medium onion, diced

Steps:

  • Preheat oven to 450 degrees
  • Add diced sweet potatoes to a glass casserole dish
  • Sprinkle sweet potatoes with garlic powder, onion powder, thyme, pepper, salt, and paprika
  • Drizzle on olive oil to coat, up to 1/3 cup
  • Toss to combine
  • Roast at 450 degrees for 55 - 65 minutes, stirring 3 - 4 times to avoid burning
  • Once sweet potatoes have about 15 minutes left to cook, add the minced garlic and diced onion to a skillet with 1 teaspoon of olive oil
  • Cook garlic and onion for 12 - 15 minutes on medium heat, stirring often, until soft and caramelized
  • Once sweet potatoes have finished cooking, remove from oven and add the garlic and onion mixture.
  • Stir to combine

1 pound sweet potatoes, cut into long, thin rectangles
1 large carrot, cut into long, thin rectangles
1 parsnip, cut into long, thin rectangles
extra-virgin olive oil, or as needed
salt and ground black pepper to taste
4 sprigs fresh thyme
2 tablespoons maple syrup, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Scatter pieces of sweet potato, carrot, and parsnip onto a jelly roll pan; drizzle with olive oil and season with salt and black pepper.
  • Roast in the preheated oven until vegetables are partially soft, about 30 minutes. Scatter thyme sprigs over vegetables and drizzle with maple syrup. Return to oven and bake until vegetables are soft, about 15 more minutes.

1 package medium, firm or extra-firm tofu, drained
2 tbsp soy sauce
1 tbsp cornstarch or arrowroot powder (optional, helps it crisp up)
1 tsp each garlic powder and black pepper (optional, for extra seasoning)
water or vegetable broth for cooking
2 cups peeled and cubed sweet potato
3 cloves garlic, minced
4-5 cups chopped green cabbage (1 small cabbage or 1/2 a large one)
1 cup peeled and grated carrot (about 2-3 carrots)
2 red bell peppers, thinly sliced
1 bunch green onions, chopped into 1 inch pieces
3/4 cup (100 g) raw cashews
cooked brown rice, for serving (optional)
fresh chopped cilantro, for serving (optional)
3 tbsp soy sauce or gluten-free tamari
3 tbsp hoisin sauce (use gluten-free if needed)
1 tbsp maple syrup or coconut sugar

Steps:

  • To make the tofu, preheat the oven to 400 degrees F. Cube the the block of tofu and place in a bowl. Add the soy sauce, cornstarch, garlic powder and black pepper and toss to coat. Place the cubes of tofu on a baking tray and bake for 30-40 minutes until browned.
  • To make the sauce, whisk the soy sauce, maple syrup and hoisin sauce together in a small bowl. Set aside.
  • To make the stir fry, add the cubed sweet potato to a wok or large skillet with about 1/4 cup of water or broth, cover and let steam until almost fully cooked, approximately 7-8 minutes. Add the cabbage, garlic, bell peppers, carrot and green onion.
  • Cook over high heat, stirring frequently for 6-7 minutes until the cabbage and peppers are cooked tender but not overcooked. If the pan gets too dry, add 1-2 tbsp water or broth as needed. Add the cashews when there are a couple minutes left (or reserve to use as a topping).
  • Add the sauce and stir to combine.
  • If serving right away, divide between four bowls (on top of brown rice, if desired), top with the baked tofu and fresh cilantro and enjoy! Otherwise, store in the fridge in a container for up to 3 days.

1 head of garlic
oil
generous ½ cup unsweetened non-dairy yogurt of choice
2 tablespoons lemon juice
2 tablespoons tahini
1 small handful chopped fresh parsley
1 small handful chopped fresh mint
sea salt and ground black pepper, to taste
2 small-medium sweet potatoes, peeled ((about 750 grams total))
2-3 tablespoons arrowroot powder
cayenne, cinnamon, thyme, garlic powder, rosemary, turmeric or any other SALT-FREE seasoning that you like (we're adding salt at the very end)
high heat-tolerant oil spray ((I like avocado oil))
fine sea salt, to taste

Steps:

  • Preheat the oven to 425°F. Line a large baking sheet with parchment paper and set aside. If your baking sheet is well-seasoned, you can skip the parchment lining.
  • Make the dip: Cut the top ½ inch off of the garlic head. Tear a piece of foil (enough to wrap around the garlic) and place the garlic head in the middle. Drizzle oil on top, letting it seep into the garlic cavities. Wrap the garlic up and place it in the oven. Roast the garlic until squidgy and golden inside, about 45 minutes. Set aside to cool.
  • Place the yogurt into a small bowl. Squeeze the cooled roasted garlic into the bowl. Add the lemon juice, tahini, parsley, mint, salt, and pepper to the yogurt mixture. Mash and stir it all together with a fork until combined. Cover the bowl and set aside in the refrigerator.
  • Make the fries: Cut the sweet potatoes into 3-inch long and ½ -inch thick fries. Place the cut sweet potatoes into a large bowl and cover them with cold water. Let them sit for at least an hour or up to overnight in the refrigerator.
  • Drain the sweet potatoes and lay them on a clean kitchen towel. Place another clean kitchen towel on top and loosely roll them all up. Massage the little towel sweet potato roll-up for a bit so that the fries are as dry as possible.
  • In another large bowl, toss the cut sweet potatoes with the arrowroot powder and SALT-FREE seasonings of your choice (salt is happening later). The cut sweet potatoes should have a light, powdery coating of arrowroot.
  • Spray the parchment on your baking sheet evenly with the oil spray. Arrange the sweet potatoes in rows on the baking sheet. Spray the tops of the sweet potatoes with the oil spray before sliding them into the oven.
  • Bake the sweet potato fries for 25 minutes or very lightly browned in spots and the arrowroot is forming a light "webbing" on the undersides of the fries. Remove the fries from the oven and carefully flip them all over. Slide the sweet potato fries back into the oven and bake for another 25 minutes.
  • At the end of the 25 minutes, the sweet potato fries should have some strong brown spots and crisp exteriors. If they still look like they need crisping, carefully flip them one more time and bake until they've reached your desired doneness.
  • Quickly transfer the fries to a large bowl and toss them with a fat pinch of sea salt. Warning: when they're piping hot, they won't FEEL completely crispy yet. Place the hot fries on your serving plate in a single layer along with your roasted garlic tahini yogurt dip. After they sit for a few seconds, they will start to get that super crispy quality.

Steps:

  • Preheat the oven to 450°F.
  • In a small bowl, mix the spices and salt together. (Variation: If you want a crispier sweet potato wedge, add 3 tablespoons cornstarch here.) Wash the sweet potatoes, keeping the skins on. Slice the potatoes into short wedges by doing the following: slice each potato in half crosswise, then in half lengthwise. Place each piece cut side down and slice it in half. Then flip them over and cut that piece down the center into two wedges (see this video, but cut them in half). In a large bowl, mix the potatoes with the olive oil and spices.
  • Line a baking sheet with parchment paper, and spread the potatoes on the sheet in a single layer. Roast the potatoes for 30 to 35 minutes until tender and starting to become crisped and brown (no need to stir). Serve immediately.

6 cups cubed sweet potatoes, (about 3 large potatoes)
1/2 cup non-dairy milk, (I used soy)
1/4 cup brown sugar
2 tbsp vegan butter
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
3/4 cup pecans
1/3 cup all-purpose flour
1/4 cup brown sugar
1/2 tsp cinnamon
1/4 tsp salt
2 tbsp vegan butter, (melted)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large saucepan, bring 8 cups of water to a boil. While water is heating up, peel and chop the sweet potatoes into 1/2" inch cubes. Place in boiling water and boil for about 10 minutes until potatoes can be easily pierced with a fork.
  • Drain the water from the cooked sweet potatoes and let cool 10 minutes. Mash potatoes with a masher or large fork. Add the remaining sweet potato ingredients and blend together with an immersion blender or a wooden spoon. Transfer to a 2-quart casserole dish and spread evenly.
  • To make the pecan topping, place pecans, flour, sugar, cinnamon, and salt in a food processor and pulse a few times to combine. Once pecans have broken into uniform pieces, add the melted butter while the motor still running. Pulse a few more times until the crust is fully hydrated. The pecan topping should stick together when pressed between your fingers. If it is too dry, add one additional tablespoon of melted butter.
  • Spread the pecan topping evenly over the sweet potato puree and bake for 20-30 minutes until topping is golden brown. Remove from heat and let cool 10 minutes before serving.
