SWEET POTATO AND BACON HASH

Steps:
- Preheat the oven to 375 degrees F and lightly grease a sheet pan with the olive oil.
- Lay the cubed sweet potatoes in an even layer on the sheet pan. Roast until just tender, about 10 minutes. Set aside.
- Meanwhile, add the bacon to a cast-iron pan on medium heat. Cook until the bacon is crispy and the fat has rendered, about 7 minutes. Remove to a paper towel-lined plate and set aside.
- Add the jalapeño rings to the bacon fat and fry until blistered and lightly browned. Transfer to the paper towel-lined plate with the bacon.
- Turn the heat to medium high. Add the cubed sweet potatoes in an even layer and season with the cinnamon and some salt and pepper. Fry until crispy and golden brown on all sides, about 7 minutes. Add the bacon and jalapeños to the pan and fold to combine. Add a few shakes of malt vinegar. Transfer to a serving dish and garnish with cilantro.

Steps:
- Put the potatoes in a saucepan with enough water to cover.
- Bring to a boil; lower heat and simmer for 5 minutes; drain.
- Let the oil get heated in a large cast iron or nonstick skillet over medium heat.
- Add in the bacon; stir/saute for 4 minutes.
- Add in the bell pepper and onions; stir/saute 2 minutes.
- Add in the potatoes, salt, celery seed, black pepper, and nutmeg; cook 4 minutes and stir occasionally.
- Add in broth and vinegar; stir.
- Toss gently until liquid is absorbed.

- Pre-heat oven to 425 degrees.
- In a bowl toss sweet potato with olive oil (enough to thoroughly coat). Arrange in a single layer on a baking sheet and roast for 10 minutes or until they're just tender but not over-cooked.
- Coat a skillet with olive oil (just enough to cover the bottom), add onion and apples and sprinkle with salt. Cook over medium heat until the apples start to become tender, stirring occasionally (about 4-5min but this will depend on the type of apple you use).
- Add sweet potato and cook a few minutes longer to let everything get cooked through and let all those fall flavors come together! Remove from heat and serve.
- This is good just as it is but you could also garnish with nuts or add a protein to make it a complete meal.

- Heat a large skillet (that has a tight-fitting lid) over medium heat. Add the bacon and cook on both sides until crisp. Transfer bacon to a cutting board to cool. In bacon grease in the still-hot pan, saute the onion until it begins to soften, about 3 minutes. Add the sweet potatoes and russet potatoes and stir to combine. Reduce the heat to low-medium and put the lid on the skillet. Allow the hash to cook, covered, until the potatoes become tender, about 10 minutes (if the potatoes are cut into larger pieces, they will need to cook for slightly longer).
- Remove the lid from the skillet and turn the heat up to medium-high. Add the apples and cook the hash, stirring frequently, until the ingredients begin to brown, about 7-8 minutes. Season with salt and pepper.
- Transfer the hash to four plates or bowls for serving. Chop the cooked bacon and sprinkle it evenly over the hash. Top each portion with an egg.

- Combine diced sweet potatoes and one cup water in a microwave safe bowl. Microwave 3 minutes. Drain in a colander, and shake to release residual water droplets.
- Place bacon into a 12” skillet over medium high heat. Cook, stirring occasionally, until fat renders and the bacon is crisp, 7-8 minutes. Remove with a slotted spoon and set aside.
- Add sweet potatoes to the rendered bacon fat, toss to coat in the fat, then spread into a single layer. Saute 5-6 minutes, stirring every 1-2 minutes, until the edges start to brown.
