1 tablespoon cooking oil
3 Idaho potatoes, sliced
3 Granny Smith apples, sliced
1/2 cup grated cheddar or Monterey Jack cheese

Steps:

  • Preheat oven to 400 degrees and lightly oil a 9 by 9-inch glass or ceramic casserole dish. Shingle one layer of potatoes to cover the bottom of the casserole dish. Sprinkle over with some of the sliced onions, then layer with some of the sliced apples. Season with salt and pepper. Repeat the layering process until the entire product is used, making sure you finish with a layer of potatoes. When using a microwave, be sure to wrap the casserole in plastic and poke 2 holes in the plastic. Cook at high heat for 15 minutes. Remove the plastic and transfer to the preheated oven. Cook until well browned, approximately 10 minutes. Sprinkle with the grated cheese and bake until melted and lightly browned.
  • When using the oven, cover the casserole or wrap with aluminum foil bake 45 to 50 minutes. Remove the foil and bake until well browned. Sprinkle with the grated cheese and bake until melted and lightly browned.

1/2 cup chicken stock
3/4 cup fresh breadcrumb
3/4 cup sharp cheddar cheese, coarsely grated
6 slices bacon, cooked and crumbled

Steps:

  • Preheat oven to 350 degrees.
  • Butter 13X6 inch oval baking dish.
  • Melt butter in heavy large skillet over medium heat.
  • Add onions and saute until tender, about 10 minutes.
  • Toss apples with flour in medium bowl.
  • Arrange half of sweet potatoes in bottom of prepared dish.
  • Top with half of apple slices.
  • Arrange remaining potatoes and then remaining apples.
  • Cover with sauteed onions.
  • Pour stock over all.
  • Bake until sweet potatoes are tender, about 45 minutes.
  • Mix breadcrumbs, cheese and bacon in small bowl, then sprinkle mixture over potatoes.
  • Bake an additional 20 minutes.
  • Broil until topping browns, if needed.
  • Let cool 5 minutes before serving.

2 cups half-and-half
4 tablespoons freshly grated horseradish
2 tablespoons fresh thyme leaves
8 ounces Gruyere cheese, grated (about 2 cups)

Steps:

  • Prepare a grill for medium-high heat. Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with the butter.
  • Oil the sliced sweet potatoes and onions with the canola oil and sprinkle with salt and pepper. Grill the sweet potatoes and onions until slightly charred on each side and just halfway cooked. Set aside.

4 large sweet potatoes, baked until soft and peeled (or two 15.5 oz. cans sweet potatoes, drained)
1/3 cup unsalted butter, melted
1/3 cup firmly packed light brown sugar
1/3 cup dark corn syrup
1 tablespoon brandy

Move over marshmallows here's a new twist on an old favorite. Apples and maple syrup add a sweet surprise to this candied yam inspired casserole, sure to be a staple for Thanksgivings to come. And your young chefs will love making it almost as much as eating it! I found this recipe inb Working Mother magazine. I have not tried this recipe, but I'm posting it for safe keeping.

3 tablespoons all-purpose flour
3/4 cup pure maple syrup
1/2 teaspoon salt
1/4 cup dark brown sugar
3 large sweet potatoes, peeled and sliced 1/4-inch thick (3 pounds)
3 granny smith apples, peeled and cored and thinly sliced (1 1/2 pounds)

Steps:

  • Heat oven to 350. Let the kids coat a 9x13-inch baking pan with 1 tablespoon of the butter; set aside.
  • In a small pan, melt remaining butter over medium-low heat. Whisk in flour until well blended and cooked, about 1 minute. Add maple syrup, salt and brown sugar. Simmer, whisking frequently, until the sugar dissolves and sauce thickens, about 4 minutes. Remove sauce from heat.
  • Help kids arrange a row of sweet potato and apple slices, alternating and overlapping them, in the prepared pan. They can continue to make rows until the pan is full. Pour the sauce evenly over potatoes and apples. Cover pan tightly with foil and bake 40 minutes.
  • Raise oven temperature to 450. Remove foil from pan and use a spoon to baste the juices over the top. Bake an additional 30 minutes, or until potatoes are tender and nicely browned, basting juices over the top every 10 minutes. Serve immediately or keep warm in a 200 oven up to 30 minutes.
