Steps:
- Place potatoes in a large saucepan. Add enough water to cover. Bring to a boil and add salt. Reduce heat to medium high and simmer, covered, until potatoes are tender when pierced with a knife, about 10 minutes. Drain and return to the saucepan. Heat 1/2 cup half-and-half and 1/4 cup butter in a glass measuring cup in the microwave 1 minute. Mash half-and-half mixture into the potatoes. Stir in 2 oz. goat cheese.
- Sprinkle pistachios and fresh sage over potatoes.

Steps:
- Pour water into a multi-functional pressure cooker (such as Instant Pot®). Place potatoes and whole garlic cloves into a steamer basket inside the pot. Close and lock the lid and set the venting knob to sealing. Select high pressure and set the timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Remove lid and trivet, leaving sweet potatoes and garlic in the pot. Add goat cheese, butter, salt, and black pepper and mash to desired consistency. Serve warm.

- Preheat the oven to 375 degrees F.
- Place the potatoes, garlic, and 1 tablespoon of salt in a large pot with enough water to cover the potatoes. Bring to a boil over high heat, reduce to a simmer, and cook for 20 to 25 minutes, until very tender.
- Drain the potatoes and garlic and process them together through a food mill fitted with the coarsest blade set over a bowl. While the potatoes are still hot, stir in the goat cheese, butter, sour cream, half-and-half, 4 teaspoons salt, and 2 teaspoons pepper, until smooth.
- Pour the mixture into a 9-by-12-by-2-inch oval baking dish, smoothing the top. Sprinkle the Parmesan on top and bake for 30 to 40 minutes, until lightly browned. Serve hot.

- Gnocchi:.
- Steam or boil potatoes until cooked through and soft.
- Peel potatoes and pass through mouli or ricer, make a well in the centre.
- Add flour,nutmeg, parmesan and egg yolks and mix into a soft dough, Adjust seasoning.
- Roll into a sausage shape and cut into bite size pieces.
- Blanch gnocchi in salted boiling water when gnocchi floats to top its cooked.
- Scoop with a spider and refresh in ice cold water then drain.
- To serve:.
- Heat olive oil in a frypan. Add garlic and tomatoes and balsamic vinegar to the pan, add gnocchi, and toss in pan. Add the greens and allow to wilt slightly, season to taste.
- Place in a bowl and crumble the goat cheese over the top.
BAKED GOATS CHEESE SCALLION MASHED POTATOES
This is a rich, creamy casserole that is sure to please cheese and tater lovers. :) My sis and me came up with this as we love mashed potatoes, but wanted something a little different for a change. I hope youll enjoy it! :)

Steps:
- Place potato cubes in a pot with water. Bring to a boil and let simmer for 15 minutes or until tender when pierced with a fork. Drain.
- Return potatoes to the pot and add cream cheese and milk. Mash with a masher until rather creamy. Season with garlic, nutmeg and salt to taste.
- Now add in HALF of the mozzarella and HALF of the cheddar cheese (meaning 1/4 cup of each). Mash a little more.
- Add in scallions, mix well.
- Pour mashed taters into a 9X13 baking dish and sprinkle with remaining cheese.
- Bake in the preheated oven at 180°C/350°F for 20-25 minutes or until nicely browned on top. If you like the top very brown, you can put the dish on the top rack for the last 5 minutes.
- Enjoy!
