BAKED HALIBUT
My best friend that lives in Alaska gave me this recipe. She owns her own restaurant and makes her own sourdough bread.

- 1. The ingredients do not have to be perfect in this recipe. The mayo, Parmesan cheese, garlic salt, garlic powder and parsley are mixed together just to coat the top of the Halibut.
- 2. Heat oven to 400. Put glass dish with a couple tablespoons of butter in the oven until the butter is melted.
- 3. Put the fish fillets, skin side down on the hot butter. Sprinkle a little lemon juice over the fish. Sprinkle a little white wine over the fish.
- 4. Mix together mayo (just enough to make it spreadable ), Parmesan cheese, garlic salt, garlic powder and parsley and spread over fish fillets.
- 5. Bake until fish is done and topping is golden (15 minutes-ish).
BAKED HALIBUT

- Preheat your oven to 425°, line a baking sheet with parchment paper or foil, and position your oven rack in the center of your oven. (If using parchment, cut the parchment to fit your baking sheet, with no overhang.)
- In a small ramekin, prepare the marinade/seasoning by combining the pressed garlic cloves, Dijon, lemon juice and zest, the paprika, and a couple of good pinches of salt and pepper with a fork; add in the olive oil, 1 tablespoon at a time, and blend that in until combined.
- Place the halibut fillets onto the prepared baking sheet, and brush each fillet with the seasoning mixture (or pour it directly over), and if you have a few minutes, allow it the fillets to marinate for 10 to 20 minutes.
- Place the seasoned fillets into the oven and bake for 10 to 12 minutes; then, switch your oven setting to "broil", and allow the fish to broil for 2 to 3 minutes until it has a bit of color, and is tender, flaky and cooked through. (To be clear, do not use the broiler underneath the main oven.)
- To finish, sprinkle over some fresh dill, add lemon slices or wedges, and serve with your choice of side.

GLOUCESTER BAKED HALIBUT

- 1. Preheat oven to 400°F (204°C). Add garlic and salt to olive oil in its measuring cup. Let steep for 30 minutes (or longer, time permitting).
- 2. Place the saltines and thyme in a medium bowl. Pour in a quarter cup of infused olive oil, leaving the sliced garlic behind in the cup. Coat all of the crumbs with olive oil. Fold in cheese.
- 3. Spread crumbs on a plate. Brush each fish fillet all over with remaining oil and season with salt. Use any oil left in the cup to grease a rimmed baking sheet. Roll fish on all sides in the crumbs, pressing to coat well and trying to use all of the crumbs. Put fish on a baking sheet, leaving an inch or so between each fillet.
- 4. Bake until crumbs are crisp and golden and fish is cooked through, about 20 minutes. Serve immediately.

BAKED HALIBUT WITH PARMESAN CRUMB TOPPING

- Gather ingredients.
- Heat the oven to 450 F. Spray a rimmed baking sheet with nonstick cooking spray or line the pan with nonstick foil.
- Cut the halibut into four (6-ounce) servings. Arrange the fillets on the prepared baking sheet, skin-side down.
- Tear the bread into pieces and put in the food processor.
- Pulse until the breadcrumbs are fine.
- In a medium bowl, combine the crumbs with the Parmesan cheese, parsley, garlic and onion powders, salt, pepper, and melted butter. Mix well.
- Sprinkle the buttery seasoned breadcrumbs on the halibut pieces; pat down to help the crumbs adhere to the tops of the fish fillets.
- Bake the halibut fillets for about 10 to 12 minutes, or until the fish registers 145 F on an instant-read thermometer . Alternatively, test the fish for flaking with a fork.
- Serve the halibut with fresh lemon wedges or slices. Enjoy.

BAKED HALIBUT WITH WINE AND HERBS

- Preheat oven to 450 degrees F.
- In a medium gratin dish or baking dish, make a bed of herbs with the thyme, parsley and bay leaves, scatter the garlic on top. Reserve 4 parsley sprigs, for garnish. Season both sides of the fish with salt and pepper and lay on top of the herbs. Add in the vermouth, and drizzle 2 tablespoons of the oil over the fish, cover loosely with foil. Bake until the fish is opaque, about 20 to 22 minutes.
- Carefully, pour the pan juices into a small saucepan and set the fish aside. Keep the garlic and 4 thyme sprigs for garnish. Bring the sauce to a boil, over high heat, reduce by about 1/2, about 5 minutes. Whisk in the remaining 2 tablespoons olive oil and the lemon juice. Season with salt and pepper, to taste. Set aside. De-bone the fish; running a spoon handle along each side of the center bone, then lift the bone out. Peel side off and discard. Divide fish steaks in half crosswise, among 4 serving plates. Pour sauce over fish and serve with a dollop of tapenade, if using, on top and garnish with the thyme sprigs, garlic, and tomatoes.
- To make the tapenade: Combine the olives, oil, thyme, and lemon zest, stir to combine. Season with pepper and set aside.

- Pat dry Halibut with a paper towel to remove any excess water. Then season with salt and pepper and squeeze lemon juice all over the fish. Set in a baking pan or dish.
- Do the same for tomatoes, and vegetables, if using any. Use a baking tray if using more vegetables.
- Bake Halibut for about 6 -7 minutes, depending on its thickness. Be careful; they bake up pretty fast. It will finish baking after you add the sauce.
