SWEET POTATO AND BRUSSELS SPROUT OKONOMIYAKI



Sweet Potato and Brussels Sprout Okonomiyaki image

For this nontraditional okonomiyaki recipe, you need to julienne the potato. Use a mandoline with the shredder attachment, or slice it very thinly into planks and then crosswise into very thin strips. Makes a terrific appetizer!

3 ounces brussels sprouts, ends trimmed, very thinly sliced (about 1 cup)
1 medium sweet potato, julienned (about 4 cups)
1 scallion, thinly sliced
1 large egg, beaten to blend
Kosher salt
1/3 cup all-purpose flour
6 tablespoons vegetable oil, divided
Sriracha, Kewpie mayonnaise, bonito flakes, and furikake (for serving)

Steps:

  • Combine brussels sprouts, sweet potato, scallion, and egg in a large bowl; season with salt. Mix with your hands until vegetables are evenly coated. Sprinkle flour over vegetables and toss to combine (mixture shouldn't be gummy, but a handful should clump together).
  • Heat 1 Tbsp. oil in a large nonstick skillet over medium-high. Add half of vegetable mixture; press into a thin even layer across bottom of skillet. Cook until pancake begins to set, about 1 minute. Drizzle 1 Tbsp. oil around edge and shake to ensure pancake can slide around; cook until golden brown underneath, about 2 minutes longer. Slide pancake onto a baking sheet or the underside of a flat pot lid, then invert pancake back into skillet. Drizzle 1 Tbsp. oil around edge of pancake and cook until second side is golden brown, about 2 minutes. Repeat with remaining vegetable mixture and 3 Tbsp. oil to make another pancake. Serve topped with Sriracha, mayonnaise, bonito flakes, and furikake.

This recipe is adapted from "The Best Diabetes Cookbook". It has a wonderful combination of flavors and goes well with a pork or with roasted chicken.

1 1/2 cups sweet potatoes, peeled, cut in 1 inch cubes
3/4 lb Brussels sprout, cut in half
1 tablespoon butter
1/2 medium onion, chopped
1 -2 garlic clove, minced
1/4 cup chicken stock
4 teaspoons brown sugar or 4 teaspoons honey
1/4 teaspoon cinnamon
2 tablespoons pecan pieces, toasted

Steps:

  • Place the potatoes in a medium size saucepan, add enough water to cover, cover and bring to a boil; cook until potatoes pierce easily when pierced with a fork drain and reserve.
  • Rinse the sprouts under running water, removing any yellowed or wilted outside leaves, cut in half and place in a microwave safe dish; microwave for 5 to 6 minutes stirring 2 to 3 times, drain and set aside.
  • In nonstick skillet, melt the butter, saute onion and garlic just until tender.
  • Add sweet potatoes,brussels sprouts, stock, sugar, cinnamon and pecans;cook for 3 minutes or until vegetables are lightly glazed.

This quick and easy pan-fried dish uses up leftover Brussels sprouts for a delicious Boxing day brunch, or a low fat, low calorie weeknight dinner

2 large sweet potatoes , cut into chunks
2 tsp olive oil
2 red onions , thinly sliced
300g Brussels sprouts , thinly sliced
grating of nutmeg
3 eggs

Steps:

  • Put the sweet potatoes in a bowl, cover with cling film and microwave on high for 5 mins until tender but still holding their shape. Uncover the bowl and leave to cool a little.
  • Meanwhile, heat the oil in a wide non-stick frying pan and add the onions. Cook for 5-8 mins until starting to caramelise. Add the sprouts and stir-fry over a high heat until softened. Push the sprouts and onions to one side of the pan and add the sweet potatoes, squashing them down in the pan with the back of a spatula. Leave undisturbed for 5 mins until starting to crisp on the underside. Season, add the nutmeg, mix in the sprouts and onions, and flip the potato over, trying not to break it up too much. Cook for a further 5 mins until really crispy.
  • Meanwhile, poach 3 eggs in a pan of barely simmering water. Serve the hash topped with poached eggs.
