8 to 10 slices of streaky bacon (, long enough to wrap around the pork 1 1/2 times.)
1 lb / 500g pork tenderloin (, at room temperature)
Salt and pepper
1 tbsp olive oil
2 tbsp honey ( or maple syrup (honey works better, it's thicker))

Steps:

  • Preheat oven to 200°C/390°F (180°C fan).
  • Lay out bacon: Lay the bacon strips vertically on a board, slightly overlapping (see photo in post). There should be enough bacon so when rolled will wrap the length of the pork.
  • Season the pork with salt and pepper. Tuck the thin end of the fillet under so the pork is roughly the same thickness from end to end.
  • Brown pork: Heat the oil in an oven-proof skillet over high heat. Sear the pork on all sides until nicely browned. (Don't worry about cooking through, it will go in the oven.) Turn off heat, remove pork and allow to cool enough to handle.
  • Wrap pork in bacon: Place pork on the arranged bacon at the end closest to you. Use a long knife to lift the bacon under the pork and roll the pork so the bacon wraps around the fillet. Finish with the bacon seam side down.
  • Honey: Use the knife to transfer back into the skillet. Drizzle over honey and brush all over.
  • Bake 25 minutes: Transfer skillet to oven for 25 minutes and roast pork until the internal temperature is 65°C / 149°F. (Note 1) Baste with pan juices at the 20 minute mark, mopping up plenty of the honey and juices pooled in the pan (this will make bacon deep golden).
  • Rest 5 minutes: Remove from oven and let it rest for 5 minutes. Baste once more just before serving. To serve, cut into thick slices. Serve with remaining pan juices.

4 strips bacon, cut into lardons
3 tablespoons fennel seeds
2 small pork filet mignon, about 10 ounces each
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
1 shallot, minced
1/2 cup port wine
2 cups seedless red grapes
1 1/2 cups chicken stock
3 tablespoons chopped fresh chives, for garnish
4 sweet potatoes, peeled and cut into large dice
2 tablespoons heavy cream, warmed
4 tablespoons unsalted butter, cubed
Pinch of cayenne pepper
Pinch of ground cumin
1 tablespoon light-brown sugar
Kosher salt

Steps:

  • For the Pork Tenderloin with Roasted Grapes: Preheat the oven to 375 degrees F.
  • Cook the bacon lardon in a large skillet over medium heat until crisp, 5 to 6 minutes. Use a slotted spoon to remove the bacon and drain on a towel-lined plate. Reserve the bacon for the potatoes. Reserve the skillet with bacon fat to cook the pork.
  • Toast the fennel seeds in a small skillet over medium heat until fragrant, about 2 to 3 minutes. Transfer to a spice grinder and grind into a fine powder.
  • Season the pork generously with salt and pepper. Return the large skillet with bacon fat to medium-high heat. Place the pork in the pan and cook on all sides until rich golden brown, about 8 minutes. Remove the pork from the pan, dust the pork with the toasted ground fennel seeds, and place on a sheet pan fitted with a rack. Roast in the oven until the internal temperature reaches 150 degrees F, about 14 minutes. Allow to rest 10 minutes until ready to serve.
  • Drain the fat from the skillet and place over medium-low heat. Add the extra-virgin olive oil and shallots and cook until softened, about 2 minutes. Season with salt then pour in the port and scrape with a wooden spoon to release the bits from the bottom of the pan. Add the grapes and cook the grapes until they split and let out their juices, about 10 minutes.
  • Add half of the chicken stock, let it reduce slightly, then add the remaining stock and let cook until sauce is reduced by half and thickened, 8 to 10 minutes. Taste and re-season if needed.
  • For the Mashed Sweet Potatoes: Add the sweet potatoes to a large pot and cover with cool water. Bring to a boil and cook until tender, about 15 minutes. Drain and return the cooked potatoes to the pot.
  • Add the heavy cream and butter and combine with a hand mixer until smooth. Mash with a potato masher. Add the brown sugar, heavy cream and cumin and mix with a spatula to combine. Season to taste with salt. Add the cayenne, cumin, light brown sugar, reserved bacon and some salt and fold to combine.
  • Slice the pork on a bias. Serve with the sweet potatoes and top with the grapes, sauce and chives.

1 pork tenderloin
Kosher salt and freshly ground black pepper
8 ounces cream cheese, at room temperature
1/4 cup pesto
1/4 cup pine nuts, toasted
1/2 cup drained and sliced sundried tomatoes in oil
1/2 cup baby spinach leaves, rinsed and spun dry
10 slices of bacon

Steps:

  • Preheat the oven to 400 degrees F.
  • Place a sheet pan in the oven to preheat.
  • Slice the pork tenderloin lengthwise, so it will open like a book, being careful to not cut all the way through. Open the loin and gently pound with a meat mallet until it is an even thickness and rectangular in shape.
  • Sprinkle the meat with salt and pepper. Spread the cream cheese in an even layer on the meat, leaving a 1/2 inch of pork uncovered around the edges. Spread the pesto on top of the cream cheese, then sprinkle on the pine nuts and sundried tomatoes. Top with an even layer of spinach. Starting on one of the longer sides of your rectangle, roll the meat closed into a long tube and set aside.
  • Place a piece of plastic wrap on a flat surface and lay out the bacon so the slices overlap slightly. Lay the rolled pork tenderloin at one end of the bacon strip arrangement, seam-side down. Using the plastic wrap, roll the bacon up and around the meat.
  • Using butcher's twine, tie around the bacon at 2-inch intervals along the length of the roll, so that the bacon cannot come loose during cooking. Tuck the meat closed on both ends and secure with toothpicks.
  • Place the pork, seam-side down, on the heated sheet pan and roast until the bacon is browned and the pork is cooked, about 45 minutes. Let the pork rest for a few minutes before slicing.

2 tablespoons olive oil
1 large red onion, diced
8 ounces thick-cut bacon, cut into large chunks or thick lardons
2 sprigs fresh thyme
1/3 cup brown sugar
1/4 cup strong brewed coffee
1 tablespoon apple cider vinegar
1 pork tenderloin
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper

Steps:

  • For the bacon-onion jam: Heat the oil in a cast-iron pan on medium heat; add the onion and cook until beginning to brown, 5 to 7 minutes. Add the bacon and thyme and reduce the heat to low. Cook for 10 to 12 minutes, then transfer the bacon and onion from the pan with a slotted spoon into a small saucepot. Reserve the bacon fat in the pan for cooking the tenderloin.
  • Put the saucepot with the bacon-onion mixture over medium-low heat and add the brown sugar and coffee. Cook the mixture down to a thick consistency, 25 to 30 minutes. Stir in the apple cider vinegar.
  • For the pork tenderloin: Preheat the oven to 425 degrees F. Pat the tenderloin dry with paper towels, sprinkle with the garlic powder and season well with salt and pepper.
  • Heat the reserved bacon grease in a cast-iron pan over medium-high heat and place the tenderloin in the hot fat. (This comes out even better if you use the same pan you made the jam in; you get all the flavor from the jam.) Sear on all sides, then transfer the pan to the oven to finish cooking to an internal temperature of 135 degrees F, 12 to 15 minutes. Let rest for 5 to 10 minutes before slicing. Serve with the bacon-onion jam.

1/3 cup Dijon mustard
3 tablespoons packed light brown sugar
1 1/2 teaspoons garlic powder
1/2 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Lay the bacon onto a rimmed baking sheet lined with a baking rack. Bake until the bacon has rendered some of its fat but is still completely flexible and hasn't begun to brown, about 15 minutes. Remove from the oven and let cool 5 minutes. Raise the oven temperature to 450 degrees F.
  • Generously sprinkle the tenderloin with salt and black pepper.
  • In a small bowl, stir together the mustard, brown sugar, garlic powder and cayenne. Coat the tenderloin all over with the mixture.
  • Starting at one end, wrap the bacon strips around the tenderloin, overlapping them slightly so they are shingled.

6 slices thick-cut bacon, chopped
12 ounces amber lager
1/4 cup apple cider vinegar
3 tablespoons brown sugar
2 teaspoons mustard seeds
1 teaspoon red pepper flakes
1 teaspoon chopped fresh rosemary
1/4 cup olive oil
2 pork tenderloins (1 1/2 to 2 pounds total)
2 tablespoons garlic pepper seasoning
3 cups arugula
1 lemon, juiced

Steps:

  • Preheat the oven to 375 degrees F.
  • Cook the bacon in a saucepan over medium heat until crisp, 10 to 12 minutes. Remove to a paper towel-lined plate.
  • Drain all but 1 to 2 tablespoons of the bacon grease. Add the lager, vinegar, brown sugar, mustard seeds, red pepper flakes and rosemary to the skillet and bring to a boil. Reduce to a simmer until the mixture becomes a very thick syrup, 25 to 30 minutes.
  • Meanwhile, heat a large, heavy-bottomed skillet over a medium-high heat and add 2 tablespoons of the olive oil. Sprinkle the pork with the garlic pepper seasoning and add to the skillet. Cook, turning as needed, until the pork is browned all over, about 5 minutes. Transfer the skillet to the oven and bake until cooked through (145 degrees F on a meat thermometer), 15 to 20 minutes. Transfer the pork to a cutting board and tent with foil to rest, about 5 minutes.
  • Finish the bacon jam by stirring the bacon into the reduced beer mixture.
  • Toss the arugula with the lemon juice and remaining 2 tablespoons olive oil, then transfer to a platter. Slice the tenderloin and shingle it around the arugula. Top with the bacon jam and serve.

  • Preheat the oven to 400 degrees F. Pat dry the pork tenderloin and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper, then wrap with the bacon, overlapping the slices.
  • Heat the oil in a large nonstick skillet over medium-high heat until hot, then brown the pork and shallots, 6 to 8 minutes. Flip the pork tenderloin browned-side up and transfer the skillet to the oven. Roast until the pork reaches 145 degrees F in the center, 15 to 18 minutes.

  • Preheat the oven to 475 degrees F. Season the pork all over with salt and pepper. Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat. Add the pork and cook, turning, until browned on all sides, about 8 minutes. Remove to a plate.
  • Wipe out the skillet; add 1 more tablespoon olive oil and heat over medium-high heat. Add the carrots and cook, stirring, until browned around the edges, about 4 minutes. 1 tablespoon olive oil for brushing

This a quick easy way to BBQ your pork tenderloin and it stretches quite far too. Use any spice mixture that you like; I love Fennel spice recipe #48753, and have included it in this recipe. It goes well with the pork as well as lamb.

fennel, spice : (use only 2 teaspoons, store remainder)
1 cup fennel seed
3 tablespoons coriander seeds
2 tablespoons white peppercorns
3 tablespoons kosher salt
1 pork tenderloin (approximately 5 inch long and 3 inch diameter, cut into 6 medallions each approximately 3/4 inch eac)
3 slices bacon, cut in half
2 skewers, long enough to hold 3 medallions side by side approximately 9-inch if using bamboo skewers soak them

Steps:

  • Fennel Spice:
  • Put the fennel seeds, coriander seeds, and peppercorns in a heavy pan over medium heat.
  • Watch carefully, tossing frequently so the seeds toast evenly.
  • When light brown and fragrant, pour the seeds onto a plate to cool. They must be cool before grinding or they will gum up the blades.
  • Pour the seeds into a blender and add the kosher salt.
  • Blend to a fine powder, shaking the blender occasionally to redistribute the seeds.
  • Store in a tightly sealed glass jar in a cool, dry place, or freeze.
  • Assembling the Skewers:
  • Rub both sides of the pork medallions with the spice rub.
  • Take a 1/2 slice of bacon and wrap it around the outer edge of each medallion.
  • Secure it by pushing a skewer right through the middle of the medallion; place 3 medallions on each skewer.
  • You should now have 3 round pieces of pork showing, the bacon from one medallion touching the next one (see picture) on each skewer.
  • Barbecue on High heat; flip after 4 minutes; continue cooking until browned and cooked.

1/2 lb bacon, sliced thin
1 large onion, sliced thin
1/4 cup soy sauce
12 -16 ounces apricot preserves

Steps:

  • Wrap tenderloin in bacon.
  • Place onions in bottom of 9x13" casserole dish.
  • Lay tenderloins on top of onions.
  • Mix soy sauce and apricot preserves and pour on top of wrapped tenderloins.
