4 mini pitas, split open
1/4 cup almond butter
1/4 cup chocolate-hazelnut spread
1 banana, thinly sliced
Confectioners' sugar, for dusting.

Steps:

  • Spread one side of the inside of each pita with 1 tablespoon almond butter and the other side with 1 tablespoon chocolate-hazelnut spread. Sandwich one-quarter of the banana slices between the 2 sides of each pita and cook on a grill pan over medium heat until the chocolate spread has melted, 4 to 5 minutes per side.
  • Dust with confectioners' sugar and serve immediately.

2 medium sweet potatoes (about 1-1/4 pounds), peeled and cubed
2 cans (15 ounces each) chickpeas or garbanzo beans, rinsed and drained
1 medium red onion, chopped
3 tablespoons canola oil, divided
2 teaspoons garam masala
1/2 teaspoon salt, divided
2 garlic cloves, minced
1 cup plain Greek yogurt
1 tablespoon lemon juice
1 teaspoon ground cumin
2 cups arugula or baby spinach
12 whole wheat pita pocket halves, warmed
1/4 cup minced fresh cilantro

Steps:

  • Preheat oven to 400°. Place potatoes in a large microwave-safe bowl; microwave, covered, on high 5 minutes. Stir in chickpeas and onion; toss with 2 tablespoons oil, garam masala and 1/4 teaspoon salt., Spread into a 15x10x1-in. pan. Roast until potatoes are tender, about 15 minutes. Cool slightly., Place garlic and remaining oil in a small microwave-safe bowl; microwave on high until garlic is lightly browned, 1 to 1-1/2 minutes. Stir in yogurt, lemon juice, cumin and remaining salt., Toss potato mixture with arugula. Spoon into pitas; top with sauce and cilantro.

2 large pitas, split in half widthwise (to make 2 rounds)
4 tablespoons (1/2 stick) unsalted butter, melted
1 tablespoon light brown sugar
1/2 teaspoon ground cinnamon
2 large pitas, split in half widthwise (to make 2 rounds)
1/4 cup olive oil
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 400 degrees F.
  • For the sweet pita chips: Brush both sides of the pita halves with the melted butter. In a small bowl, combine the brown sugar and cinnamon. Sprinkle the rough or interior side of the pita halves with the sugar mixture. Stack the pita halves on top of each other and cut into 8 wedges, like cutting a pie, to make 16 wedges total. Spread the pita wedges on a baking sheet and bake until crisp, 8 to 9 minutes.
  • For the savory pita chips: Brush both sides of the pita halves with the olive oil. In a small bowl, combine the paprika, garlic powder and salt. Sprinkle the rough or interior side of the pita halves with the paprika mixture. Stack the pita halves on top of each other and cut into 8 wedges, like cutting a pie, to make 16 wedges total. Spread the pita wedges on a baking sheet and bake until crisp, about 10 minutes.

These sweet cookies are so good! This recipe came from my grandma. I made them at home; my family and friends kept asking for more!

1 pita bread (white or whole wheat)
water
oil (for frying)
syrup (atir)

Steps:

  • First you take the pita and you put it in a bowl .
  • Pour water in the bowl and make the pita into dough by mixing it with your hands. In the end it should look like a pizza dough!
  • After your done with that role the dough and make it look like the shape of a pencil but bigger of course .
  • Start cutting it like your cutting a cucumber, looking like shapes of a rectangle. Eventually there should be about 30 pieces .
  • After you're done, press each piece a little with your hand to flatten it out.
  • Take them and put them in the fryer until they look golden.
  • Pour the syrup (atir) over them and enjoy!

PEPPERMINT PATTY SANDWICH COOKIES

4 ounces bittersweet chocolate, chopped
3 sticks (1 1/2 cups) butter, at room temperature
1 cup flour
1/2 cup cocoa powder
1/2 teaspoon baking powder
1/2 cup light brown sugar
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
2 eggs, at room temperature
1/4 cup plain yogurt
3 cups confectioners' sugar
1/4 teaspoon peppermint extract
10 chocolate-coated peppermint candies, such as York Peppermint Patties, chopped
5 candy canes, crushed, optional

Steps:

  • Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
  • Melt the chocolate and 1 stick of the butter over medium heat in a double boiler. Remove from the heat and set aside to cool slightly.
  • In a medium bowl, whisk together the flour, cocoa powder and baking powder. Set aside.
  • To the bowl with the melted chocolate, add the brown sugar, granulated sugar, vanilla and salt. Whisk to combine. Whisk in the eggs, one at a time, followed by the yogurt. Using a rubber spatula, fold in the flour mixture being careful to avoid over-mixing.
  • Scoop 1-tablespoon mounds of the batter on the prepared baking sheets, leaving about 1-inch between each cookie. Bake the cookies for about 9 minutes, rotating the trays halfway through. Slide the cookies on the parchment onto a cooling rack and cool completely.
  • Meanwhile make the filling. In a medium bowl, use an electric hand mixer to beat the remaining 2 sticks butter and the confectioners' sugar; mix until light and fluffy, starting on low speed to avoid splatter and work up to medium speed, 3 minutes. Add the peppermint extract, salt and peppermint candies. Beat on medium speed until the candies are broken apart and evenly distributed, 2 minutes.
  • Spread the filling on the flat side of half of the cookies. Top with the remaining cookies. Roll the edges in the crushed candy canes if using and serve immediately or store in an airtight container until ready to serve.

These are so easy to make and addictive to eat! They are a hit with all my friends, some of whom just eat them without any dip. They are great on their own or with dessert hummus. Try them with my recipe for Pumpkin Pie Dessert Hummus; you won't be disappointed.

2 tablespoons olive oil
1 teaspoon ground cinnamon
½ teaspoon white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cut each pita bread into 8 wedges and brush with olive oil. Sprinkle cinnamon and sugar on top and place wedges on a baking sheet.
  • Bake in the preheated oven until crispy on the edges and slightly soft in the middle, 12 to 14 minutes; they will harden as they cool.
  • Serve immediately or store in an airtight container after cooling.

1 (16.5 ounce) tube refrigerated sugar cookie dough
1/4 cup all-purpose flour plus extra for dusting
2 cups semisweet chocolate chips, divided
1/4 cup heavy cream
1 teaspoon pure peppermint extract
1 teaspoon vegetable oil

Steps:

  • Position an oven rack in the lower third of the oven. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • In a medium bowl, knead together the cookie dough and 1/4 cup flour until smooth. Lightly flour a work surface. Roll out the dough to 1/4-inch thick. Using a 2 1/2-inch cookie cutter, cut out circles from the dough. Knead together any scraps of dough and roll out again. Continue to cut out pastry circles until there are 24 pieces in total. Place the dough circles on the prepared baking sheets. Bake until the cookies are slightly golden around the edges, about 10 minutes. Cool for 10 minutes and transfer to a wire rack to cool completely. Reserve 1 parchment paper-lined baking sheet.
  • Combine 1 cup of chocolate chips and the cream in a small bowl. Place the bowl over a pan of simmering water and stir until the chocolate has melted and the mixture is smooth. Whisk in the peppermint extract and refrigerate the mixture for 1 hour. Using a 1/2-ounce cookie scoop or a tablespoon measure, place the chocolate mixture in the center of the flat side of 12 of the cookies. Place the remaining cookies on top and gently squeeze to distribute the filling evenly. Place on a baking sheet and freeze until the filling has set, about 25 minutes.
  • Combine the remaining chocolate chips and the vegetable oil in a small bowl. Place the bowl over a pan of simmering water and stir until the chocolate has melted and the mixture is smooth. Dip the top of each cookie in the melted chocolate and return to the baking sheet. Sprinkle the tops with crushed candy canes or peppermint candies. Refrigerate until firm, about 1 hour. Store in an airtight plastic container.
