When you're cooking for a crowd, break out the slow cooker for an easy, delicious side dish. These crockpot cheesy potatoes are the stuff of legend at potlucks everywhere. Don't count on having any leftovers the next day, but if you do, rewarm them in the microwave and serve them with scrambled eggs for a hearty next-day breakfast.

1 tablespoon butter
1 small onion, diced
3 cloves garlic, finely chopped
2 bags (20 oz each) refrigerated shredded hash brown potatoes
3 cups shredded Cheddar cheese (12 oz)
2 cups sour cream
1 can (10 1/2 oz) condensed cream of mushroom soup
1/4 cup water
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In 8-inch skillet, melt butter over medium heat. Cook onion and garlic in butter, stirring frequently, 2 to 3 minutes or until translucent and soft.
  • In large bowl, stir onion mixture and remaining ingredients until well combined.
  • Place in slow cooker. Cover and cook on Low heat setting 3 hours; stir. Cover and cook on Low heat setting 2 to 3 hours longer or until center of casserole reaches at least 165°F and edges are bubbly. Stir.

2 cups sour cream
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
2 cups shredded processed cheese
½ cup chopped onion
¼ teaspoon salt
¼ teaspoon pepper
1 (32 ounce) package frozen hash brown potatoes, thawed

Steps:

  • In a large bowl, stir together the sour cream, cream of mushroom soup, cheese, onion, salt and pepper. Gradually mix in the hash browns until evenly coated.
  • Coat the inside of a slow cooker with cooking spray or butter. Spoon the hashbrown mixture into the slow cooker. Cover, and cook on High for 1 1/2 hours, then reduce heat to Low, and cook for an additional 2 1/2 hours.

4 thawed uncooked boneless skinless chicken breasts (do not cook 1st or your recipe will be dry and not come out right.
1 32 oz package frozen potato any shape.( tater tots, hash browns, or home fries )
16oz bag of shredded cheese of your choice or two 8 oz different flavors
( 8 oz sharp cheddar and 8 oz colby jack is awesome)
1 can of cream of **anything soup. (we like cream of asparagus) (also cream of chicken)
1/4 cup of milk

Steps:

  • *spray bottom and sides of crockpot with cooking spray *put 1/2 bag of frozen potatoes in first, *place uncooked chicken breasts on top of the potatoes *sprinkle 8 oz of cheese on top of the chicken, *add the rest of the bag of potatoes, * add the other 8 oz cheese. *mix can of cream of **whatever soup with 1/4 cup milk and pour over top. *do not mix or stir. **set crockpot on high for 4 hours or low for 8-10 hours. **sometimes I add some bacon crumbles with the cheese and it is like a loaded baked potato.

1 (32 ounce) bag hash browns (Mrs. O'Briens work the best)
1 (10 1/2 ounce) can cream of celery soup or 1 (10 1/2 ounce) can cream of chicken soup
1 (16 ounce) container sour cream (Cheddar Top the Tater)
1 lb of already browned crumbled hamburger
1 (12 ounce) bag of shredded cheddar cheese

Steps:

  • Cook and crumble the hamburger until it's done and then transfer to your crock pot.
  • Add your cream of soup and stir into hamburger.
  • Add half the bag of hash browns and stir.
  • Add your top the tater or sour cream.
  • Add the rest of the potatoes and stir.
  • Let cook on high for about 1 hour and then add the cheese.
  • Then let cook on low for 1-2 more hours.

When my mom first gave me this recipe, I was pretty skeptical - but it became an instant favorite in our house!! I like it because it is fast and simple to make, inexpensive, and reheats very well. I'll post the ingredients for the original version and offer the healthier alternatives at the end of the recipe.

1 (30 ounce) bag frozen hash browns
14 ounces kielbasa, cut into bite sized pieces
2 cups chicken broth
1 onion, diced
8 ounces Velveeta cheese

Steps:

  • In crock pot, combine hash browns, kielbasa, broth and onions. Stir well and cook on low 6-8 hours.
  • 30 minutes before serving, cut cheese into cubes and stir into soup. Cover and cook on high 30 minutes or until cheese is melted.
  • We like this soup pretty thick, but if you prefer a thinner soup now is a good time to add some extra broth or milk. Wait until after the cheese has melted to add extra liquid so you can be sure of the consistency.
  • Serve hot with crusty bread!
  • To make this recipe A LOT healthier, use turkey kielbasa, fat free/low sodium chicken broth, and Light Velveeta. I routinely use these substitutions and the soup still turns out fantastic! If I have the time, I do like to remove the casings from the turkey kielbasa as I think they tend to get a little chewy when cooked all day. Just split them carefully with a knife and peel away the casings before chopping. Enjoy!
