This is a delicious recipe for sweet and sour pork with pineapple, a traditional Cantonese dish, and a favorite in both America and China.

For the Sweet and Sour Sauce
1 cup water
1/2 cup ketchup
1/2 cup rice vinegar
1/2 cup rock sugar ​(or granulated sugar)
1/2 tablespoon potato starch (mixed with 1 tablespoon water)
Salt (to taste)
For the Pork Marinade
1 pound pork tenderloin (cut into 1-inch cubes)
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
1 tablespoon rice wine
1/2 teaspoon five-spice powder
1/4 teaspoon ground white pepper
2 cloves garlic (minced)
1 egg (lightly beaten)
3 tablespoons corn flour (or cornstarch)
1 tablespoon all-purpose flour
For the Stir-Fry
3 cups neutral cooking oil (for deep-frying the pork)
1 clove garlic (sliced)
1/2 white onion (diced small)
1/2 yellow bell pepper (cut into 1-inch diamond shape)
1/2 green bell pepper (cut into 1-inch diamond shape)
3 1/2 ounces fresh pineapple (or canned pineapple, cut it into 1-inch chunks)
1/2 tablespoon white sesame seeds, for garnish

Steps:

  • Gather the ingredients.
  • Put all of the ingredients in a saucepan and stir to mix evenly. Place over medium-high heat.
  • Stirring constantly, bring the sauce to a boil and then reduce the heat to a simmer. Cook the sauce, continuing to stir, until the texture has turned thick and sticky, about 25 minutes.
  • Gather the ingredients.
  • Place the pork in a bowl and add both kinds of soy sauce, rice wine, five-spice powder, ground white pepper, and minced garlic; marinate for 10 minutes.
  • Add the egg, corn flour, and all-purpose flour into the pork marinade and mix evenly. Place in the refrigerator for 30 minutes.
  • Gather the ingredients.
  • Heat the oil to 325 F/170 C in a wok or deep saucepan.
  • Gently slide in some of the pork tenderloin cubes, without overcrowding, and deep-fry, in batches if necessary, until golden brown in color, stirring occasionally. Make sure the oil comes back up to temperature before each batch.
  • Place the cooked pork on a plate lined with a couple of sheets of paper towel.
  • Remove all but 1 tablespoon of oil from the wok and stir-fry the garlic and onion over medium-high heat until fragrant.
  • Add the bell peppers and pineapple to the wok and stir-fry for a minute or two.
  • Return the pork to the wok, along with the sweet and sour sauce, and mix evenly. You can add as much sweet and sour sauce as you prefer.
  • Garnish with the sesame seeds . Serve with cooked white rice , if desired.

Steps:

  • Juice half of the pineapple, use the juice for the base of the sauce in step two and then the leftover chunks in step 4
  • Add water, vinegar, pineapple juice, ketchup and sugar into a pan.
  • Dissolve cornflour in 1 tablespoon water and add to pan.
  • Continuously stirring, bring all ingredients to the boil, then turn down to simmer and add pineapple, before stirring for another 2 minutes.

1/3 CUP ORANGE BLOSSOM HONEY / GRANDMAS MOLASSES MIXTURE
8 OZ CRUSHED PINEAPPLE ( RAN THROUGH A FOOD PROCESSOR INTO A PASTE )
1 TBSP ALLSPICE
1 TBSP GROUND CLOVES
5 TBSP GROUND MUSTARD
1 1/2 - 2 CUPS OF BROWN SUGAR
GLAZE
8 OUNCE CRUSHED PINEAPPLE WITH JUICE ( RAN THROUGH A FOOD PROCESSOR )
1 CUP APPLE CIDER
1 CUP BROWN SUGAR PACKED
1 TSP GROUND NUTMEG
1 TSP GROUND ALL SPICE
1/2 TBSP GROUND MUSTARD

Steps:

  • IN A LARGE NON REACTIVE CONTAINER PLACE ALL INGREDIENTS OF CURE AND MIX THOROUGHLY, PREPARE PORK REMOVING EXCESSIVE FAT AND RINSE. MIX CURE AGAIN AND REMOVE EXCESSIVE FOAM FROM TOP PUT PORK INTO A LARGE 12 QT CONTAINER THEN ADD IN LIQUID CURE, PLACE IN FRIDGE FOR 7 DAYS ( 1 DAY IS A 24 HOUR PERIOD OF TIME ) REMOVE FROM FRIDGE AND REMOVE PORK ( NOW HAM ) FROM CURE AND DISCARD CURE,, RINSE MEAT SET ON DRYING RACK TO DRIP AND AIR DRY FOR 1 HOUR OR LONGER, START SMOKER ( IF YOU HAVE ONE ) AT A TEMP OF 225 F AND LET COME UP TO TEMP. PLACE HAM IN SMOKER WITH APPLE OR MAPLE WOOD FOR NO MORE THEN 4 HOURS, CONTINUE TO COOK TILL AN INTERNAL TEMP OF 145 -150 F, REMOVE LET STAND FOR 10 MINUTES PRIOR TO CUTTING PREPARE GLAZE, MIX THOROUGHLY AND PLACE IN SMALL CROCK POT TO HEAT, RIGHT AFTER THE SMOKING PROCESS HAS STOPPED START GLAZING THE HAM EVERY 10 TO 15 MINUTES. 1/4 cup ketchup
1/4 cup brown sugar
1/4 cup water
2 tablespoons white vinegar
1 tablespoon soya sauce
1/4 cup white wine
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • Heat ketchup, sugar, water, wine, vinegar, soya sauce in a medium pan over medium, stirring constantly.
  • Mix cornstarch and water together in a small bowl. Stir slowly into sauce mixture. Stir until thickened.
  • Can add cooked meatballs, peppers, onions and carrots into pan. Heat for 20 minutes, or until late warm throughout.

I have tried a few different recipes for sweet and sour sauce from this site and from other cookbooks and none of them ever seemed to be quite right, so I experimented a few times and this is the one I liked the best. Now it's the only sauce I use for my sweet and sour pork or chicken.

2 cups pineapple juice, divided
3 tablespoons cornstarch
1 cup white sugar
¾ cup ketchup, or more to taste
⅔ cup apple cider vinegar
2 tablespoons soy sauce, or more to taste
2 tablespoons crushed pineapple, or more to taste
1 teaspoon garlic powder

Steps:

  • Whisk 1/4 cup pineapple juice and cornstarch together in a small bowl until smooth.
  • Combine cornstarch mixture, remaining 1 3/4 cup pineapple juice, sugar, ketchup, vinegar, soy sauce, crushed pineapple, and garlic powder in a large pot over high heat. Cook, stirring frequently, until sauce comes to a gentle boil. Reduce heat and continue to simmer until sauce is clear and reaches desired consistency, 15 to 25 minutes.
