One-Pot Spaghetti with Sausage image

2 tablespoons extra-virgin olive oil
8 ounces sweet or hot Italian sausage, casings removed
1 onion, halved and thinly sliced
1 carrot, grated
4 cloves garlic, sliced
1 tablespoon tomato paste
10 ounces spaghetti, broken in half
1 14-ounce can cherry tomatoes
Kosher salt and freshly ground pepper
2 tablespoons chopped fresh parsley

Steps:

  • Heat 1 tablespoon olive oil in a large wide pot over medium-high heat. Add the sausage and cook, breaking up the meat into small pieces with a wooden spoon, until lightly browned and no longer pink, about 5 minutes. Pour off the fat from the meat.
  • Add the remaining 1 tablespoon olive oil and the onion to the skillet; cook, stirring occasionally, until the onion softens, about 5 minutes. Stir in the carrot, garlic and tomato paste and cook until the garlic softens, 1 to 2 minutes.
  • Add 4 1/2 cups water, the spaghetti, cherry tomatoes, 1/2 teaspoon salt and a few grinds of pepper to the pot. Increase the heat to high and bring to a boil, then reduce the heat to a simmer; cook, stirring occasionally, until the pasta is tender and the sauce thickens, 10 to 12 minutes. Remove from the heat and add the parsley; season with salt and pepper and toss.

2 tablespoons of cooking oil (like olive oil or butter)
1 medium onion, diced
1 sweet bell pepper (red, orange or yellow), diced
4 large cloves of garlic, minced (about 2 tablespoons)
1 lb. of ground Italian sausage (hot or mild)
1 tablespoon of dried fennel seed (optional)
2 teaspoons of dried Italian seasoning OR oregano
1/2 teaspoon of black pepper
1/2 teaspoon of sea salt
1/4 teaspoon of crushed red pepper flakes
1 (15 oz) can of fire-roasted diced tomatoes
3 cups of low-sodium broth (beef, chicken, or vegetable)
8 ounces of dried spaghetti, broken in half
3/4 cup of full-fat canned coconut milk OR heavy cream
1 tablespoon of lemon juice OR vinegar (like white wine vinegar or balsamic vinegar)
1/2 cup of grated or shredded cheese (like Parmesan, mozzarella or an Italian blend - optional)

Steps:

  • Place a medium-sized Dutch oven, stockpot, or saute pan (with tall, straight sides) over medium-high heat and measure in the cooking oil.
  • Let the oil warm a minute, then add the onion & bell pepper. Cook 3-5 minutes, stirring occasionally. Reduce heat to medium and stir in the garlic. Cook for about 1 minute, then add the ground sausage. Cook 3-5 minutes, while breaking the meat into small chunks with a spatula.
  • Add the dried spices, diced tomatoes, broth, and spaghetti (broken in half). Stir everything and push the spaghetti down until it's submerged in the broth. If needed, add more broth or water 1/4 cup at a time until the spaghetti is just barely covered by the liquid.
  • Cover with a lid and bring the mixture to a simmer (this should take about 2-3 minutes). Stir the pasta to make sure it's not sticking to the bottom, replace the lid, then reduce heat to medium-low and cook for 10 minutes.
  • Stir in the canned coconut milk or heavy whipping cream, replace the lid again, and cook for another 5 minutes, or until the noodles are tender to your liking.
  • Remove from heat, uncover, and add the lemon juice (or vinegar) + grated cheese. Stir well, taste and (if needed) add more salt or lemon juice. Let the spaghetti sit for 5-ish minutes so the sauce can thicken up. Ladle into bowls and (optional) top with extra cheese, cracked black pepper & olive oil.

6 oz uncooked spaghetti, or your favorite pasta
1/4 lb italian sausage links, casings removed
2 tsp olive oil
1 sweet onion, thinly sliced
1 pt cherry tomatoes, halved
1/2 c loosely packed fresh basil leaves, thinly sliced
1/2 c half and half cream
shaved parmesan cheese, optional

Steps:

  • 1. Cook the spaghetti according to package directions. Meanwhile, in a large nonstick skillet over medium heat, cook the sausage in oil for 5 minutes. Add onion; cook 8-10 minutes longer or until meat is no longer pink and onion is tender.
  • 2. Stir in the tomatoes and basil; heat through. Add the cream; bring to a boil. Drain spaghetti; toss with sausage mixture. Garnish with cheese if desired.

1 large vidalia onion (or other sweet)
1 (28 ounce) can diced tomatoes
2 medium summer squash
3 minced garlic cloves
2 bay leaves
1/4 teaspoon red pepper flakes

1/2 teaspoon black pepper

1/4 cup extra virgin olive oil

Steps:

  • Heat olive oil on medium high heat in a large fryig pan.
  • Remove sausage from casing and cut into 1/2 inch slices.
  • Peel onion and slice in 1/4 inch slices.
  • After heating oil in large fryinng pan, add italian sausage.
  • Once the italian sausage is browned, add the onions and garlic.
  • Cook until onions are transluccent.
  • Add tomatoes, undrained.
  • Add all spices and mix thoroughly - taking care not to break up sausage.
  • Bring to a boil and turn down to medium low.
  • Cover tightly.
  • Wash squash
  • Slice squash into 1/4 inch slices.
  • Remove cover.
  • Add squash into sauce and stir lightly.
  • Replace cover.
  • Turn down burner to low.
  • Simmer for approximately 30 minutes.
  • Serve over jasmine rice or pasta.

Steps:

  • Cook sausage and onion in a large skillet until no pink remains. Drain fat.

1 lb rigatoni pasta
1 1/2 lbs mild Italian sausage or 1 1/2 lbs hot Italian sausage
4 tablespoons extra virgin olive oil
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
3 cubanelle peppers, seeded and cut into strips
1 yellow onion, cut into slices
2 garlic cloves, chopped
1/2 teaspoon dried oregano
6 fresh basil leaves, shredded
1/2 cup white wine
1 tablespoon butter
1/2 teaspoon salt
1 teaspoon ground black pepper
1/2 cup flat-leaf Italian parsley, fresh
1/2 cup parmesan cheese, grated fresh

Steps:

  • In 6 quarts of boiling salted water, cook the pasta until al dente. About 10 to 13 minutes. Drain and set aside.
  • Stir in 2 Tbls of olive oil into the pasta.
  • In the meantime, fry the sausage in a large frying pan in 2 Tbls of olive oil until the sausage cooked through and browned all over.
  • Remove the sausage from the pan and let stand.
  • Drain the excess oil in the frying pan.
  • Add the peppers, onions, garlic, oregano and basil to the pan, cover and cook on medium heat until the peppers are tender and slightly browned.
  • Cut the sausages into 1 inch pieces and add to the peppers.
  • Increase the heat and add the white wine.
  • Cook until the wine is reduced by half.
  • Stir in the butter and the parsley.
  • Season with salt and pepper.
  • Plate the pasta and spoon the sausage mixture on top.
  • Optional: Plate the pasta, pour a good quality, or homemade vodka sauce over the pasta, then top with sausages and peppers.
  • Serve with Parmesan cheese.

ITALIAN SAUSAGE SPAGHETTI



Italian Sausage Spaghetti image

This is my favorite method of making Italian sausage spaghetti. By browning the sausages first and then cooking them in the sauce at a long, slow simmer, the sausage is loaded with flavor and firm, but tender--almost meatball-like in texture. And we hardly need any seasonings because the long cook time allows the sauce to get infused with all the sausage-y goodness!

1 tablespoon olive oil
4 (6 ounce) sweet Italian sausage links
¼ cup white wine
1 (32 ounce) jar marinara sauce
1 ½ cups water
1 (16 ounce) package spaghetti
½ cup freshly grated Parmigiano-Reggiano cheese
2 tablespoons chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Heat olive oil in a saucepan over medium heat. Transfer sausage links into the hot pot. Cover with a lid and cook until beautifully browned and just barely cooked through, about 5 minutes per side. You can increase the heat a little if you like, but make sure the oil does not smoke. Turn off the heat and remove sausages to a plate to cool completely.
  • While the sausages are cooling, add wine to the same pot over medium-high heat. As it comes up to a simmer, stir the caramelized bits on the bottom of a pan with a spoon or spatula. Simmer until it reduces by about half, 1 to 2 minutes.
  • Add marinara sauce. Pour water into the jar of pasta sauce, seal, and shake to rinse out the jar. Pour that liquid into the pot and return to a simmer. Reduce heat to low.
  • Slice each fully cooled sausage into 4 pieces. Transfer sausage and any accumulated juices into the simmering sauce. Stir and increase heat to just between low and medium-low. Cook at a gentle, steady simmer, stirring occasionally, for 1 hour. Taste and adjust seasonings. Skim about 1/2 of the fat from the surface, and continue to cook until reduced and thick, about 30 minutes longer.
  • Meanwhile, bring a large pot of generously salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until almost tender yet firm to the bite, 10 to 11 minutes. Drain spaghetti and transfer it directly into the pot of hot sauce. Mix until thoroughly combined. Cover with the lid and let sit for 1 minute so the pasta can absorb some of the sauce.
  • Evenly divide pasta onto 4 plates and top each serving with 4 pieces sausage. Sprinkle with Parmigiano-Reggiano and parsley.
