2 tablespoons olive oil
1 white onion, (diced)
4 cloves garlic, (minced)
1 pound ground beef, (lean or extra-lean )
1 (15-ounce) can corn kernels, (drained and rinsed)
1 (15-ounce) can black beans, (drained and rinsed)
1 envelope taco seasoning ((2 tablespoons))
1 (14-ounce) jar chunky salsa, (mild or medium)
1 cup minute rice, (uncooked)
1½ cups low-sodium chicken broth
2 cups shredded Mexican cheese, (divided)

Steps:

  • Preheat the oven to 375F°F.
  • Spray a 9 x 13-inch baking dish and set aside.
  • In a large frying pan, cook white onion and garlic with olive oil over high heat until the onions have softened and the garlic is just starting to brown. Pour the onion mixture into the prepared baking dish.
  • Using the same frying pan, cook ground beef over high heat. Break up beef into crumbles while baking. Be careful not to overcook, it shouldn't be crispy.
  • Once the meat has thoroughly cooked, drain off a bit of the grease and then pour it into the baking dish.
  • Add corn, black beans, taco seasoning, salsa, uncooked minute rice, and 1 cup of shredded cheese to the baking dish and stir well to mix. Leave the remaining cheese for the top.
  • Pour chicken broth over ingredients and mix well.
  • Cover baking dish with foil and bake for 35 minutes.
  • Remove from the oven and check that the rice has softened. If not, place it back into the oven for an additional 5 minutes and check again. If the rice has softened, remove all foil and sprinkle the remaining 1 cup of cheese over top of the casserole, and bake uncovered for an additional 5 minutes to melt the cheese.
  • Serve hot.

1 1/2 lbs ground beef
1 onion, chopped
1 green bell pepper, seeded and diced
1 -2 tablespoon fresh minced garlic
1 large jalapeno pepper, seeded and finely chopped (optional)
2 -4 teaspoons cumin (or to taste)
salt and black pepper
2 (10 ounce) cans red enchilada sauce
1 (15 ounce) can black beans (rinsed and well drained)
2 cups frozen corn
9 corn tortillas
2 cups shredded Mexican blend cheese, divided (can use more or less)
2 plum tomatoes, finely chopped
sour cream
green onion
coarsley crushed tortilla chips

Steps:

  • Set oven to 350 degrees.
  • Grease an 11 x 7-inch baking dish.
  • In a large skillet brown the ground beef with onion, garlic, green bell pepper and jalapeno (if using) until the beef is no longer pink; drain any fat then return to skillet and add in one can of enchilada sauce, black beans, corn and cumin.
  • Bring the ground beef mixture to a boil; reduce heat to medium-low and simmer for 20-25 minutes stirring occasionally, then season with salt and lots of black pepper.
  • Arrange 3 corn tortillas in the bottom of the baking dish, cutting as needed to cover bottom of the dish.
  • Spread 1/4 cup canned enchilada sauce over the tortillas in the baking dish.
  • Cover the sauce with 1/3 of the cooked ground beef mixture, then about 1/3 of the shredded cheese.
  • Repeat the layers twice but omitting the final cheese layer on top.
  • Drizzle any remaining canned enchilada sauce (from the second can) on top.
  • Cover with foil and bake in a 350 degree F oven for 25 minutes.
  • Remove foil and sprinkle with more cheese (any amount desired) then return to oven and bake for another 5 minutes or until the cheese has melted.
  • Let stand 10-15 minutes before slicing.
  • Top with sour cream and/or tomatoes, green onions and crushed tortilla chips if desired.
  • Delicious!

1 teaspoon oregano
1 can (15 oz, black beans, drained and rinsed)

1 can (15 oz, tomato sauce (or 2 small, 8 oz cans))
6, 8 " flour tortillas
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350 and grease a 9x13 baking pan with nonstick cooking spray. Set aside.
  • In a large skillet, heat beef and onion until no longer pink. Add taco seasoning and oregano and mix well.
  • Stir in beans, corn, tomatoes and tomato sauce. Mix well and heat for 5 minutes on medium high or until bubbly. Remove from heat.
  • Spoon about 1 cup of beef and beans mixture into the bottom of the prepared pan. Add 2 tortillas on top, overlapping to fit into the pan.
  • Add 1/3 of the ground beef mixture and top with 1/3 of the shredded cheese.
  • Repeat this twice, ending with cheese on top.
  • Bake for 15 minutes or until cheese is melted.
  • Serve topped with fresh cilantro or chopped green onions.
  • Add sour cream, hot sauce, olives, guacamole or salsa on the side.

1 pound ground beef
1 tablespoon taco seasoning
1 large onion (chopped)

1 red bell pepper (diced)
1 cup uncooked white rice

1 15oz can fire roasted tomatoes
1 15oz can black beans, drained
1 15oz can corn kernels, drained or 1 cup frozen corn
2 cups chicken broth
Salt and freshly ground black pepper (to taste)
2 tablespoons unsalted butter
1 1/2 cups shredded Mexican blend cheese (divided)
Scallions and parsley or cilantro (to garnish)

Steps:

  • Heat the olive oil in a large lidded skillet, over medium high heat.
  • Add the ground beef and cook, breaking it apart with a wooden spoon, until no longer pink, about 2 minutes. Then, stir in the taco seasoning and continue cooking until the beef is browned, 2-3 minutes.
  • Add the onion and garlic, and sauté until softened and fragrant, about 2-3 minutes.
  • Add the bell pepper and sauté until softened. Then, add the rice, tomato paste, fire roasted tomatoes, black beans, corn kernels and chicken broth. Give it a good stir and season with salt and pepper.
  • Bring to a boil. Cover, reduce the heat to a simmer and cook for 20 minutes.
  • Stir the butter and half of the cheese and top with the remaining half. Cover and continue cooking until the cheese has melted.
  • Garnish with the herbs and serve immediately.

This Mexican casserole is made with ground beef, tortillas, vegetables and cheese, all layered together and baked to golden brown perfection. A quick and easy dinner for busy weeknights!

2 teaspoons vegetable oil
1 pound ground beef
1/2 cup onion (finely diced)
1 packet taco seasoning
15 ounce can diced tomatoes (drained)
3/4 cup frozen corn kernels (thawed)
2 cups red enchilada sauce
8 6-inch tortillas (halved)
2 cups shredded cheddar cheese
cooking spray
salsa, sour cream, cilantro, avocado (optional, for garnish)

Steps:

  • Preheat the oven to 350 degrees F. Coat a 2 or 3 quart casserole dish with cooking spray.
  • Heat the oil in a pan over medium heat. Add the ground beef and crumble with a spoon. Cook until browned, 6-7 minutes.
  • Add the onion and cook for an additional 4-5 minutes or until softened.
  • Stir in the taco seasoning and 2 tablespoons of water.
  • Add the tomatoes and corn and stir to combine.

Brown rice usually takes about 45 minutes so I'm including that in the cooking time. *If you would like some heat or a chile flavor consider adding tabasco, jalapenos or diced mild green chilies. I just made this with salsa instead of tomatoes and added black pepper. I was very pleased with the results. A simple flavored hearty meal. I'm used to mexican dishes having cumin and it may work with this but I liked it being different and it may appeal to people who don't like cumin. I think black olives and bell pepper would be good in it too. Some people may also want to add layers of cheese but I was really surprised at how good it was without it. To cut down the fat more you could cook the onions with the ground beef and skip the butter.

1 beef bouillon cube

  • Cook rice according to package directions, adding bouillon cube to cooking water.
  • When the rice is nearly done, saute onion in butter.
  • Crumble beef and add to onion with garlic, mustard, chili powder, salt and pepper. Cook until meat loses pinkness. Drain grease if needed.
  • Layer half the meat mixture in the bottom of a 2-quart casserole.
  • Spread cooked rice over meat.
  • Spoon tomatoes over rice.
  • Spoon beans with liquid over tomatoes.

2 large ripe avocados, halved and pitted
2 tomatoes, finely chopped
1 small onion, chopped

Steps:

  • Preheat the oven to 350 degrees.
  • Place the meat and onion in a skillet over medium-high heat on the stove and cook until the meat is completely browned and the onions have softened. Drain any excess grease.
  • Reduce the heat to medium and add in the taco seasoning, corn, diced tomatoes, and black beans. Stir to combine well.
  • Cut the corn tortillas in half.
  • Place a layer of corn tortilla in the bottom of a well-greased 9x13 baking dish.

  • Cook ground beef and diced onion. Drain off excess fat, and then add the taco seasoning, corn, beans, and rotel.
  • Put a layer of tortillas down in a 10x13 inch baking dish. Layer meat mixture on top. Sprinkle half of cheese on top. Layer more tortillas, then more meat, and finish with the remaining cheese.
  • Bake at 350 for 20-25 minutes, or until the entire mixture is hot and the cheese is melty. Remove from oven, let cool for 10 minutes, and then serve with garnishes.

1 egg
1/3 cup milk

Steps:

  • Preheat the oven to 325 degrees F (160 C).
  • Coat two 20 ounce individual oven safe baking dishes with non-stick spray. Click for 20 ounce oven safe baking dishes.
  • Dice the onion.
  • Pour the olive oil into a medium frying pan over medium heat and cook the ground beef and onion about 5 minutes. Drain off any excess grease from the beef.
  • Add the garlic, green chiles, cumin, oregano, and chili powder.

¾ cup water
1/2 cup green onions (chopped)
1 cup corn kernels (thawed from frozen, or freshly cooked)
16 oz. salsa (your choice of salsa; we use medium heat)
12 6-inch corn tortillas (you can also use flour tortillas if preferred)
20 oz. hatch chiles (five 4 oz. cans of diced chiles)
10 oz. enchilada sauce (mild)
1 lb. Mexican blend cheese (shredded)
chopped green onions and fresh tomatoes for garnish

Steps:

  • Preheat oven to 350°F. Grease a skillet with cooking oil and place over medium heat on the stove. When hot, add 2 lbs. ground beef and cook until all beef is broken up and browned.
  • Combine ground beef with 1¼ oz. packet taco seasoning, ¾ cup water, and 1 cup chopped green onions. Stir in 16 oz. salsa and 1 cup corn kernels.
  • Spray 9 by 13-inch baking dish with non-stick spray. Layer corn tortillas along the bottom.
  • Top with ⅓ of the diced hatch chiles, ground beef mixture, Mexican cheese blend, and enchilada sauce.
  • Repeat the layers twice in that order, then top everything off with your remaining cheese.
  • Cover with foil and bake at 350°F for 45 minutes. Then, remove foil and bake another 10 minutes.
  • Allow Mexican ground beef casserole to sit loosely covered with foil for 10-15 minutes before serving. Top with green onions and fresh diced tomatoes. Serve and enjoy!

1-2 tablesp. oil
1 large onion, diced
1 teasp. ground cumin
1 teasp. ground coriander
½ teasp. chilli powder
1-2 fresh chillies, chopped
2-3 cloves garlic, chopped
1 teasp. fresh ginger, grated
1 can tomatoes, chopped
125ml stock or water
Juice of ½ lemon
Salt and black pepper

Steps:

  • Set oven Gas Mark 4, 180°C (350°). In a large pan heat the oil and brown the beef. Then brown the onions. Transfer to a casserole dish. Add the spices to the pan and heat, stirring for 1-2 minutes. Add garlic, ginger, tomatoes, stock, lemon juice and seasoning. Pour the sauce over the meat and onions. Place in the oven for 1½ hours or until the meat is tender. This dish will taste even better 2-3 days later.

Steps:

  • Preheat oven to 350°F (175°C) and grease a 9x13 or 2-quart casserole dish.
  • Crush the tortilla chips and layer the bottom of the casserole dish. Set aside.
  • In a large skillet, brown the ground beef over medium high heat.
  • When the beef is browned add the RoTel tomatoes, green chiles, and taco seasoning. Mix well. Reduce heat and simmer for another 3 to 5 minutes.

  • Preheat the oven to 350°F. Coat a 9×13-inch pan or 2-quart baking dish with nonstick spray and set aside.
  • Meanwhile, in a very large skillet, heat the oil over medium heat. Add the beef and, using a spatula, press the beef into an even, flat layer in the pan. Let cook untouched for 4 minutes.
  • Stir the beef, breaking it up, and continue cooking until the meat is cooked through, about 3 minutes.

2 tbsp vegetable oil
2 onions, sliced
2 cloves garlic, crushed
700g stewing beef, cut into 2cm cubes
2 tbsp hot pepper or chilli sauce
2 tsp hot chilli powder
1 small hot red chilli, deseeded and chopped
400g can chopped tomatoes
500ml hot beef stock
2 tbsp tomato purée
1 red pepper, deseeded and thinly sliced
2 tsp paprika pepper
1 tsp dried oregano
400g can kidney beans, drained
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 160⁰C/325⁰F/140⁰C Fan/Gas Mark 3. Pour 1 tbsp of the oil into a large ovenproof casserole dish or deep sauté pan and heat on a medium setting.
  • Add the onions and garlic and fry gently until softened. Lift out and drain.
  • Add the remaining oil and fry the beef until evenly browned. Return the onions and garlic to the pan.
  • Add the pepper or chilli sauce, chilli powder and red chilli and stir well. Add the tomatoes, stock and tomato purée, stir well then bring to the boil.
  • Add the red pepper, paprika, oregano and kidney beans and stir well, cover and place in the oven.
  • Cook for 3 - 3 ½ hours or until the beef is very tender. Check the casserole from time to time to ensure it does not dry out - add more stock if necessary.
