Steps:
- Preheat the oven to 375F°F.
- Spray a 9 x 13-inch baking dish and set aside.
- In a large frying pan, cook white onion and garlic with olive oil over high heat until the onions have softened and the garlic is just starting to brown. Pour the onion mixture into the prepared baking dish.
- Using the same frying pan, cook ground beef over high heat. Break up beef into crumbles while baking. Be careful not to overcook, it shouldn't be crispy.
- Once the meat has thoroughly cooked, drain off a bit of the grease and then pour it into the baking dish.
- Add corn, black beans, taco seasoning, salsa, uncooked minute rice, and 1 cup of shredded cheese to the baking dish and stir well to mix. Leave the remaining cheese for the top.
- Pour chicken broth over ingredients and mix well.
- Cover baking dish with foil and bake for 35 minutes.
- Remove from the oven and check that the rice has softened. If not, place it back into the oven for an additional 5 minutes and check again. If the rice has softened, remove all foil and sprinkle the remaining 1 cup of cheese over top of the casserole, and bake uncovered for an additional 5 minutes to melt the cheese.
- Serve hot.

- Set oven to 350 degrees.
- Grease an 11 x 7-inch baking dish.
- In a large skillet brown the ground beef with onion, garlic, green bell pepper and jalapeno (if using) until the beef is no longer pink; drain any fat then return to skillet and add in one can of enchilada sauce, black beans, corn and cumin.
- Bring the ground beef mixture to a boil; reduce heat to medium-low and simmer for 20-25 minutes stirring occasionally, then season with salt and lots of black pepper.
- Arrange 3 corn tortillas in the bottom of the baking dish, cutting as needed to cover bottom of the dish.
- Spread 1/4 cup canned enchilada sauce over the tortillas in the baking dish.
- Cover the sauce with 1/3 of the cooked ground beef mixture, then about 1/3 of the shredded cheese.
- Repeat the layers twice but omitting the final cheese layer on top.
- Drizzle any remaining canned enchilada sauce (from the second can) on top.
- Cover with foil and bake in a 350 degree F oven for 25 minutes.
- Remove foil and sprinkle with more cheese (any amount desired) then return to oven and bake for another 5 minutes or until the cheese has melted.
- Let stand 10-15 minutes before slicing.
- Top with sour cream and/or tomatoes, green onions and crushed tortilla chips if desired.

- Preheat oven to 350 and grease a 9x13 baking pan with nonstick cooking spray. Set aside.
- In a large skillet, heat beef and onion until no longer pink. Add taco seasoning and oregano and mix well.
- Stir in beans, corn, tomatoes and tomato sauce. Mix well and heat for 5 minutes on medium high or until bubbly. Remove from heat.

- Heat the olive oil in a large lidded skillet, over medium high heat.
- Add the ground beef and cook, breaking it apart with a wooden spoon, until no longer pink, about 2 minutes. Then, stir in the taco seasoning and continue cooking until the beef is browned, 2-3 minutes.
- Add the onion and garlic, and sauté until softened and fragrant, about 2-3 minutes.
- Add the bell pepper and sauté until softened. Then, add the rice, tomato paste, fire roasted tomatoes, black beans, corn kernels and chicken broth. Give it a good stir and season with salt and pepper.

- Preheat the oven to 350 degrees F. Coat a 2 or 3 quart casserole dish with cooking spray.
- Heat the oil in a pan over medium heat. Add the ground beef and crumble with a spoon. Cook until browned, 6-7 minutes.
- Add the onion and cook for an additional 4-5 minutes or until softened.
- Stir in the taco seasoning and 2 tablespoons of water.
- Add the tomatoes and corn and stir to combine.
- Spread 1/4 cup of enchilada sauce over the bottom of the baking dish. Layer 4 halves of tortilla over the sauce so that the bottom of the pan is covered.
- Layer 1/3 of the beef mixture, 1/2 cup of the cheese and 1/3 cup of enchilada sauce over the tortillas.
- Place a second layer of tortillas on top and layer 1/3 of the beef, 1/2 cup of the cheese and 1/3 cup enchilada sauce over the tortillas.

Brown rice usually takes about 45 minutes so I'm including that in the cooking time. *If you would like some heat or a chile flavor consider adding tabasco, jalapenos or diced mild green chilies. I just made this with salsa instead of tomatoes and added black pepper. I was very pleased with the results. A simple flavored hearty meal. I'm used to mexican dishes having cumin and it may work with this but I liked it being different and it may appeal to people who don't like cumin. I think black olives and bell pepper would be good in it too. Some people may also want to add layers of cheese but I was really surprised at how good it was without it. To cut down the fat more you could cook the onions with the ground beef and skip the butter.

- When the rice is nearly done, saute onion in butter.

- Chop avocado flesh and mash in a bowl. Add tomatoes, onion, lime juice, garlic, cilantro, and salt. Cover with a lid or plastic wrap and refrigerate guacamole until ready to serve.

- In a large skillet, over medium heat, cook the chopped onion, and bell pepper in oil for about 5 minutes or until the onion and bell pepper are softened.

- Preheat oven to 350°F (175°C) and grease a 9x13 or 2-quart casserole dish.
- Crush the tortilla chips and layer the bottom of the casserole dish. Set aside.
- In a large skillet, brown the ground beef over medium high heat.
- When the beef is browned add the RoTel tomatoes, green chiles, and taco seasoning. Mix well. Reduce heat and simmer for another 3 to 5 minutes.
- Pour the beef mixture over the tortilla chips.
- Next layer the creamed corn, then the black beans, and then the cheese.
- Bake at 350°F (175°C) for 30 minutes or until the cheese is bubbly.
- Remove from oven, allow to cool slightly and serve.

- Preheat the oven to 350°F. Coat a 9×13-inch pan or 2-quart baking dish with nonstick spray and set aside.
- Meanwhile, in a very large skillet, heat the oil over medium heat. Add the beef and, using a spatula, press the beef into an even, flat layer in the pan. Let cook untouched for 4 minutes.
- Stir the beef, breaking it up, and continue cooking until the meat is cooked through, about 3 minutes.
- Stir in the salsa and bring to a boil. Cook, stirring occasionally, until the liquid is cooked off, about 20 minutes.
- Add the beans and cook until heated through, about 3 minutes. Remove from the heat.
- Add the tortilla chips to the prepared pan or baking dish. Top with the beef mixture and cheese.
- Bake until heated through, about 20 minutes.

Steps:
- Preheat oven to 160⁰C/325⁰F/140⁰C Fan/Gas Mark 3. Pour 1 tbsp of the oil into a large ovenproof casserole dish or deep sauté pan and heat on a medium setting.
- Add the onions and garlic and fry gently until softened. Lift out and drain.
- Add the remaining oil and fry the beef until evenly browned. Return the onions and garlic to the pan.
- Add the pepper or chilli sauce, chilli powder and red chilli and stir well. Add the tomatoes, stock and tomato purée, stir well then bring to the boil.
- Add the red pepper, paprika, oregano and kidney beans and stir well, cover and place in the oven.
- Cook for 3 - 3 ½ hours or until the beef is very tender. Check the casserole from time to time to ensure it does not dry out - add more stock if necessary.
