Make-Ahead Spinach Phyllo Roll-Ups image

Keep Make-Ahead Spinach Phyllo Roll-Ups in the freezer and pop one in the oven for a quick appetizer later. These spinach phyllo roll-ups are delicious.

1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup ATHENOS Traditional Crumbled Feta Cheese
1 tub (7.5 oz.) PHILADELPHIA Garden Vegetable 1/3 Less Fat than Cream Cheese
4 green onions, finely chopped
1 egg, beaten
15 sheets frozen phyllo dough (14x9 inch), thawed
1/3 cup butter, melted

Steps:

  • Mix first 5 ingredients until blended.
  • Brush 1 phyllo sheet lightly with butter; top with 2 more phyllo sheets, lightly brushing each layer with some of the remaining butter. Place remaining phyllo sheet between 2 sheets of plastic wrap until ready to use; set aside.
  • Spread 1/5 of the spinach mixture along one short side of phyllo stack. Fold in long sides of phyllo; roll up from one short side to make log. Repeat with remaining phyllo sheets and spinach mixture to make 4 additional logs. Brush with remaining butter. Make small cuts in tops of logs at 1-inch intervals. Place in large freezer-weight resealable plastic bags or wrap tightly in plastic wrap.
  • Freeze up to 3 months. When ready to bake, remove desired number of logs from freezer. Refrigerate, tightly wrapped, several hours or overnight until thawed. Unwrap, then place on baking sheet.
  • Bake in 375°F oven 25 min. or until golden brown. Cool 5 min. Transfer to cutting board. Use serrated knife to cut each log into 6 slices.

2 cups ground walnuts, toasted
1/4 cup sugar
2 teaspoons ground cinnamon
12 sheets frozen phyllo dough, thawed
1/2 cup butter, melted
SYRUP:
1/2 cup honey
1/2 cup sugar
1/2 cup water
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350°. Combine walnuts, sugar and cinnamon., Place 1 sheet of phyllo dough on a 15x12-in. piece of waxed paper; brush with butter. Place a second phyllo sheet on top, brushing it with butter. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Sprinkle with 1/4 cup walnut mixture. Using waxed paper, roll up tightly jelly-roll style, starting with a long side, removing paper as you roll. Slice roll into 4 smaller rolls; transfer rolls to a greased 13x9-in. baking dish. Repeat with remaining phyllo dough and walnut mixture, by 1/4 cupfuls. Bake until light brown, 14-16 minutes. Cool dish on a wire rack., Meanwhile, in a small saucepan, combine all syrup ingredients. Bring to a boil. Reduce heat; simmer 5 minutes. Cool 10 minutes. Drizzle cinnamon rolls with syrup; sprinkle with remaining walnut mixture.

These are the most popular appetizers I make! Friends ask for them again and again. These are best when baked right before serving, but they do taste great even as they begin to cool. This appetizer recipe also freezes beautifully before baking. Just bake them, while they are still frozen, for about another 10 minutes until golden brown.

8 ounces cream cheese, softened
2 cups swiss cheese, shredded
2 onions, chopped
3 garlic cloves, minced
1/4 cup butter
1/2 teaspoon dried thyme leaves
1/8 teaspoon pepper
phyllo dough, thawed
1/3 cup butter, melted

Steps:

  • Preparation:.
  • In medium bowl, mix cream cheese and Swiss cheese. Set aside. In heavy skillet, sauté onions, thyme, and pepper in 1/4 cup butter until very soft and beginning to brown, 10-15 minutes. Stir in garlic and cook another 1 minute. Cool 20 minutes. Mix together onion mixture and cheese mixture and refrigerate for 30 minutes.
  • Place one sheet filo dough on work surface. Brush with melted butter. Lay another sheet on top, brush with butter, and put one more sheet on top.
  • Take the onion mixture and form a roll about 1 inch in diameter down one long edge of the stacked filo. Roll up carefully and place on cookie sheet. Brush thoroughly with more butter. Repeat with remaining filo and filling, making six rolls total. I place three rolls on each cookie sheet. Cover well with plastic wrap and chill overnight.
  • When ready to bake, preheat oven to 375 degrees F and remove the rolls from the refrigerator. Bake for 10-17 minutes or until rolls begin to brown and cheese filling melts. Let stand 5 minutes, then, using a very sharp knife, cut rolls into 1" pieces. Let cool for 5-10 minutes, then serve. The onion filling right out of the oven is super-hot. Serves 8-10 - or 4-6, at my parties!
  • You can also freeze these rolls. Wrap well in freezer wrap, label, and freeze up to 3 months. To bake frozen rolls, place rolls on cookie sheets and bake at 375 degrees F for 15-23 minutes or until the rolls are beginning to brown and crisp and cheese melts. Proceed as directed above.

Steps:

  • Line baking sheets with parchment; set aside. Place 1 sheet of phyllo dough on a work surface (keep remaining dough covered with a damp towel to avoid drying out). Brush with butter; fold in half lengthwise. Brush with butter; fold in half widthwise., Brush with butter; top with a prosciutto strip. Place an asparagus spear and a green bean at a diagonal on bottom right corner; roll up. Repeat with remaining dough, butter, prosciutto and vegetables. , Place roll-ups on prepared baking sheets. 1 1/2 pounds boneless, skinless chicken thighs, preferably organic
Kosher salt and freshly ground black pepper
3 to 4 tablespoons ghee
1 small yellow onion, cut into 1/4-inch dice
3 cloves garlic, minced
3 tablespoons sage, minced
1/2 cup dry vermouth
1 large bunch Swiss chard, stems removed and leaves roughly chopped
1 large sweet potato, peeled and cut into 1/2-inch pieces (about 2 heaping cups)
1/2 cup chicken stock or low-sodium chicken broth
One 8.8-ounce container mascarpone cheese
3/4 cup packed grated Parmesan cheese (freshly grated with a rasp grater)
Ten 9-by-14-inch frozen phyllo sheets, thawed
3 tablespoons unsalted butter, melted
Flaky sea salt

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat a large, shallow 10-inch cast-iron pan or Dutch oven up over medium-high heat.
  • While the pan heats up, cut the chicken thighs into 1 1/2-inch pieces and season liberally with kosher salt and pepper.
  • Once the pan is heated, add 2 tablespoons of the ghee and the chicken in a single layer, working in batches and adding more ghee, if needed. Cook for 2 to 3 minutes, flipping the chicken once halfway, until browned evenly. Remove with a slotted spoon or tongs to a plate (the chicken will not be cooked through).
  • Reduce the heat to medium; add the onion, garlic and sage and cook, stirring, until fragrant and the onions start to soften, 2 to 3 minutes. Add the vermouth, scraping up any browned bits from the bottom of the pan.
  • Add the chard to the pan and cook, stirring occasionally, until it starts to wilt, 3 to 4 minutes. Next, add the sweet potato and stock. Stir together and season liberally with kosher salt and pepper. Bring to a simmer, then stir in the mascarpone and Parmesan. Return the chicken to the pan, stir then remove from the heat.
  • Place the phyllo sheets on a baking sheet and cover with a damp towel to prevent them from drying out. Place 1 of the phyllo sheets on a clean work surface then brush or dab with some of the melted butter. Crumple the sheet up like a piece of paper and place on top of the chicken filling. Repeat with the remaining phyllo sheets until the entire surface of the filling is covered, overlapping the sheets, if necessary. Drizzle any remaining butter on top and sprinkle with flaky sea salt.
  • Transfer the pan to the oven and bake for 10 minutes. Reduce the oven temperature to 375 degrees F and bake until bubbly and the top is golden brown, 20 to 25 minutes. Remove from the oven and let cool for 5 to 10 minutes before serving. If the filling under the crust looks too wet, cook on the stove over medium heat to reduce some of the liquid, 5 to 10 minutes. Serve the pot pie in the pan.

1/2 cup green onion, finely chopped
1 egg
1 (8 ounce) package cream cheese with vegetables
1 cup feta cheese
1 (10 ounce) package frozen spinach, chopped, thawed and squeezed very dry
9 sheets phyllo dough, thawed

Steps:

  • Preheat to 375F degrees.
  • Combine all ingredients except dough until well blended.
  • Work with one sheet of phyllo at a time and keep the waiting sheets covered with a damp paper towel or plastic wrap, etc -- to keep from drying out.
  • Brush one sheet of phyllo dough with melted butter or spray with cooking spray- butter flavored is best.
  • Repeat process stacking the newly buttered/sprayed sheets on top of the other until you have three sheets buttered/sprayed stacked together.
  • Spread one third of spinach mixture along one short side of the dough.
  • Fold the sides in about 1 or 2 inches to keep filling inside and roll up to make a log shape.
  • Repeat method using the remaining dough and filling to make two more logs.
  • Spray or butter tops of logs and score diagonally at 1 nch intervals to keep dough from cracking.
  • Place logs on baking sheet and bake for 25 minutes or until golden brown.
  • Place on cutting board and cut each log into 10 slices with a serrated knife.
  • Note: You can freeze uncooked logs for later use. When ready to serve, remove 10 minutes before baking and then follow baking directions.

  • Defrost spinach and drain well.
  • Cook noodles in salted water until barely tender and drain.
  • Mix noodles and spinach.
  • Saute onion in butter until lightly browned. Fold in eggs.

1/4 teaspoon garlic powder
3 -4 drops bottled hot pepper sauce

Steps:

  • In a medium saucepan, cook mushrooms, green onions, and chopped peppers in butter until tender, and drain.
  • Divide mixture evenly among 8 tortillas, spooning mixture into center.
  • Divide the 1 1/2 cups cheese evenly among tortillas.
  • Roll up tortillas, and place seam down in a 2 quart greased baking dish.
  • In a medium bowl combine eggs, milk, flour, garlic powder, and hot pepper sauce.
  • Pour mixture over tortillas in dish.
  • At this point the dish can be covered and chilled for 2 to 24 hours before baking.
  • To bake immediately:Bake in a 350 F.
  • oven for 35 to 40 minutes or until set.
