This recipe was sent to me by my mum,who thought that her beloved grandchildren might enjoy them! The first time I made them they didn't even get a chance to go cold,as the children and I devoured them.I have since made them to take to our local playgroup end of term party,and once again,children and parents alike loved them.They are so simple and delicious,and a great way to get some extra veggies into your children.Perfect for picnics and lunchbags.I often pack a few in a tub for when we go shopping for child friendly snacks.I should imagine that these would be good served warm with pre dinner drinks or as part of a finger buffet.

1 tablespoon olive oil
1 onion, finely chopped
3 slices rindless bacon, finely sliced
1 large carrot, grated
1 large zucchini, grated
3 eggs
1 cup cheese, grated
1/4 cup cream
1/2 cup self rising flour

Steps:

  • Heat the oil in a large pan and sauté onion until translucent. Add the bacon and fry until it starts to colour. Add the carrot and zucchini and cook for about 2 minutes.
  • Transfer mixture to a bowl to cool.
  • Beat the eggs, cream and cheese together; season to taste.
  • Stir the egg mixture into the cooled zucchini mixture. Stir in the flour.
  • Grease and flour little muffin/bun tins. Spoon mixture into the holes.
  • Bake at 180°C/350°F/Gas 4 for 15-20 minutes.

These individual bites are simple to make, tasty and enjoyed by my entire family, which includes my 18-month old twins.

1 tablespoon olive oil
1 onion, finely chopped
3 slices bacon, finely chopped
1 large carrot, grated
1 large zucchini, grated
3 eggs
¼ cup heavy cream
1 cup grated Parmesan cheese
salt and pepper to taste
½ cup self-rising flour

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 12 muffin miniature muffin pan.
  • Heat the oil in a large skillet over medium heat. Stir in the onion and bacon. Cook until onion is translucent and bacon is browned, about 5 minutes. Stir in the carrot and zucchini; cook until they begin to soften, about 2 minutes. Transfer mixture to a bowl to cool.
  • Beat the eggs, cream, and Parmesan cheese together in a large bowl. Season with salt and pepper. Stir egg mixture into cooled zucchini mixture; stir in flour. Spoon the batter evenly into the prepared muffin cups.
  • Bake in preheated oven until a toothpick inserted in the center comes out clean, 15 to 20 minutes.

1 cup walnuts, chopped
1/3 cup flaked coconut
1 (18 ounce) box carrot cake mix
1 cup Egg Beaters egg substitute

Steps:

  • Heat oven to 350°F Grease and flour mini muffin pans.
  • In a large bowl dump in all ingredients and stir till everything is mixed together. Spoon into mini muffin pans.
  • Bake for 15 to 20 minutes, or until theye bounce back when touched lightly with a finger.

  • Spread each with a little soft margarine.

1/4 cup dark raisin
1/2 cup dark rum or 1/2 cup brandy
1/4 cup butter, softened
1/2 cup brown sugar, packed
2 eggs, beaten
1 1/2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice
3 tablespoons milk
1/2 cup green glazed cherries, cut in quarters
1/2 cup candied red cherries, cut in quarters
1/2 cup dates, chopped
2 cups chopped pecans

Steps:

  • Pour the rum over the raisins, cover with plastic wrap and marinate them for several hours or overnight Heat oven to 300 degrees F.
  • Cream butter and sugar, add eggs one at a time beat after each addition.
  • In another bowl mix your dry ingredients (Flour, Baking soda, and spices).
  • Stir the dry mixture into the butter& sugar.
  • Stir in raisins/rum and milk.
  • Stir in the fruit& nuts.
  • Line miniature muffin tins with fancy Christmas paper liners or plain ones.
  • Fill 3/4 full with the batter.
  • Bake 10-15 minutes or until the tops spring back when lightly touched.
