SWEET ITALIAN SAUSAGE WITH PENNE PASTA
We are Italian and if you go through my recipes you'll find alot of wonderful, quick and easy pasta dishes. We love our pasta and we love garlic, too! Serve this with garlic Texas toast. I can't eat pasta much anymore because I'm diabetic but my husband and daughter love it so I keep making it for them. I usually eat salmon (I have one or two good ones for salmon, too- check them out).

Steps:
- Boil the water and cook the penne according to package directions. DO NOT ever add oil to the water! It will make your sauce slide off the pasta later.
- Meanwhile, heat the oil (medium-high heat) in a large skillet and saute the broccoli, sausage and garlic until tender and starting to brown, about 15 to 20 minutes.
- Toss the butter, hot pasta, sausage mixture and romano cheese together and serve. Pass the grated cheese at the table.
PENNE PASTA WITH ITALIAN SAUSAGE
This penne pasta recipe includes a quick and easy pasta sauce recipe, rich with garlic and herbs. Surprisingly, it doesn't take hours to simmer, but really is a 30 minute meal.

- In a large pot of boiling water, cook the pasta until tender, but firm. Drain and return the pasta to the pot.
- While the pasta is cooking, heat the oil over medium heat in a non-stick pan. Cook the sausage until it is just a bit pink in the centre, about 15-20 minutes. Drain well and cut it into thin round slices. Cook the onion until tender, about 5 minutes. Add the garlic, tomatoes, basil, oregano and the sausage slices. Simmer uncovered for 10 minutes. Pour the mixture over the cooked and drained pasta and toss to mix it all together.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch baking dish. Sprinkle top with mozzarella.
- Bake in preheated oven for 20 minutes, or until cheese is melted.

ITALIAN SAUSAGE PENNE PASTA WITH TOMATOES AND PEAS AND SWEET CORN SALAD

- In a saucepan cook the sausage until almost finished and remove from the saucepan. To the saucepan add 1/4 cup of olive oil and heat. Then add 1 cup of onions, oregano and garlic and saute for 2 minutes. Then add 6 cups of tomatoes, parsley and 1/4 cup of basil. Simmer for 5 minutes than add back to the sausage and simmer for 10 minutes then add the peas. Cook the pasta in a large pot of boiling salted water until al dente. Toss pasta with the sausage, add 1/2 cup of basil and season with salt and pepper.
- Cut the kernels off the ears of corn and in a large bowl mix the corn with, remaining onion, 6 chopped tomatoes, basil and olive oil. Season with salt and pepper.
CREAMY ITALIAN SAUSAGE ONE-PAN PASTA

- Heat the olive oil in a large, deep skillet over medium heat. When the oil is hot, add the sausage and cook until it starts to brown, about 5 minutes. Add the onions and cook until softened and translucent and the sausage is well browned, another 5 to 7 minutes. Add the oregano, fennel seeds, red pepper flakes, garlic and some salt and black pepper and stir again.
- Next, add the broth, tomato puree and tomato paste and stir well. Add the uncooked pasta into the sauce, bring to a simmer and cook, stirring occasionally, until the pasta is al dente, 15 to 20 minutes.
- Remove from the heat and stir in the mozzarella and mascarpone. Taste and add more seasoning if necessary. Serve with shaved Parmesan and torn basil leaves.

This recipe is the best when made using farmer's sausage, but any sausage links will do. Add the red pepper flakes at the end for a little kick, or leave them out if spice isn't for you.

This is one of my husband's family's recipes. It's simple and doesn't require much prep time, especially if you use a food processor to cut the onion and celery. Seasoning amounts are approximate, though I don't recommend shorting the sugar. - Warm olive oil in a skillet over medium heat while dicing onion and celery. Sauté vegetables until onions turn clear. Remove from heat.
- In a large pot (6 qt or larger, I use an 8 qt stock pot) over medium-low heat, combine tomato juice, tomato paste, water, diced tomatoes, onion, celery, sugar, and seasonings.
- Heat gravy to a boil (shouldn't need to raise heat above medium) and add sausages; boil for about 30 minutes, stirring occasionally.
- Prepare pasta according to package directions and drain. Spoon a small amount of gravy over pasta (in its own pot) and stir gently to help prevent sticking.
- Serving size is roughly a cup of pasta, one sausage, and about 3/4 cup gravy.

- Heat oil in heavy large saucepan over medium heat. Add onion and cook until tender, about 8 minutes. Add sausage and cook until no longer pink, breaking up with fork, about 6 minutes. Stir in pepper flakes. Add wine and boil until absorbed. Mix in crushed tomatoes. Bring to boil, reduce heat and simmer 25 minutes. Stir 2 tablespoons marjoram into sauce.
- Cook penne in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return penne to pot. Add half of sauce and stir to coat. - Cook pasta per directions on package.
- Cut asparagus into 1 inch pieces.
- Slice sausage links. In large skillet (we use a wok), sauté sausage and asparagus until almost fully cooked (about 7 - 10 minutes). Remove from skillet / wok and set aside.
- In same skillet / wok, bring butter, garlic, tomatoes (with juices), black olives (drained) and artichokes (including marinade), to a boil.
