GERMAN CHOCOLATE PIE
This German Chocolate Pie recipe idea comes straight from Amish country. The rich, gooey, chocolate filling it to die for!

Steps:
- Preheat oven to 350 degrees.
- Place uncooked pie crust in pie tin.
- In small bowl, microwave butter until completely melted.
- Add 1 c. chocolate chips and stir until smooth.
- In separate bowl, stir together flour and sugars.
- Slowly add chocolate/ butter mixture and stir until blended.
- Add eggs, one at a time, and vanilla.
- Fold in pecans, coconut, and 1/4 cup chocolate chips.
- Pour into unbaked pie crust.
- Bake 35-40 minutes or until top is set. DON'T OVER BAKE!
- Allow to cool before serving.

- Preheat oven to 375°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a microwave, melt chocolate and butter; stir until smooth. Gradually add milk; set aside. , In a large bowl, combine sugar, cornstarch and salt. Stir in eggs and vanilla. Gradually stir in chocolate mixture. Pour into crust. Combine pecans and coconut; sprinkle over filling. , Bake until puffed and browned, 45-50 minutes. Cool on a wire rack 4 hours. Refrigerate until serving (filling will become firm as it cools).

- Sift the flour, sugar and salt into a large bowl. Add the butter and shortening. Rub the fats between your fingertips and thumbs, or use a pastry blender, until the mixture resembles coarse crumbs. One tablespoon at a time, work in enough ice water just until the dough comes together, being careful not to over mix.
- Shape into a smooth ball of dough, flatten into a disk, and wrap in plastic wrap. Refrigerate for at least 30 minutes, and up to two days.

Steps:
- Mix walnuts and margarine or butter in a 9 inch pie plate until well blended. Press on the bottom and sides of pie plate. Refrigerate.
- Microwave chocolate and 2 tablespoons of milk in large microwaveable bowl on high 1 1/2 to 2 minutes, or until chocolate is almost melted, stirring halfway through heating time. Stir until chocolate incompletely melted.
- Beat in cream cheese,sugar and remaining milk. Refrigerate 10 minutes to cool.
- Gently stir in whipped topping until smooth.
- Spoon into crust.
- Freeze 4 hours or until firm. Garnish as desired. (I used chocolate curls).
- Let stand at room temperature about 15 minutes or until pie can be cut easily. Store leftover pie in the freezer.

- Microwave chocolate and 2 tablespoons of the milk in large microwave-safe bowl on HIGH 1 1/2 to 2 minutes or until chocolate is almost melted, stirring halfway through heating time. Stir until chocolate is melted and mixture is smooth.
- Beat in cream cheese, sugar, and remaining milk with wire whisk until blended. Refrigerate 10 minutes. Gently fold in 3 1/2 cups of the whipped topping until no streaks remain. Spoon into crust.
- Freeze pie 4 hours. Before cutting pie, let stand at room temperature 15 minutes. Serve with remaining whipped topping. Store pie in freezer.

This pie was my very favorite dessert... and I was thrilled to find this recipe on the label of Baker's sweet chocolate. *Mumble mumble* years later, it's still a favorite.

- Melt butter and chocolate over low heat, stirring until blended; remove from heat and gradually blend in milk.
- Mix sugar, cornstarch, & salt in lg bowl.

Steps:
- Crust:.
- Separate eggs and let come to room temperature.
- Beat egg whites with an electric mixer on med-low until frothy.
- Add cream of tartar.
- Increase mixer speed to med-high to high and continue beating until soft peaks form.
- Add sugar a little at a time.
- Add vanilla and beat until stiff peaks form.
- Fold in pecans.
- Spread on bottom and up sides of a GREASED 9 inch pie plate.
- Bake for 1 hour at 300 degrees.
- Remove from oven and set aside to cool on a rack.
- Filling:.
- Melt German Chocolate in 3 TBLS water on LOW heat. Set aside to cool.
- Whip cream, adding sugar, salt and vanilla.
- Fold in melted chocolate last.
- Spoon mixture into cooled crust and chill for at least 2 hours before serving. Overnight is best.
GERMAN'S SWEET CHOCOLATE PIE
I got this recipe from a German's brand baking chocolate package. Very simple no-bake recipe and freezes well. I keep one on hand in the freezer at almost all times for those last minute needs (like when I've forgotten there's a potluck at church tomorrow or my son's school is having a party).
