2 cups all-purpose flour
½ teaspoon salt
⅓ cup white sugar
1 egg yolk
½ cup water
2 tablespoons all-purpose flour for dusting
2 tablespoons melted butter for brushing

Steps:

  • Whisk together the 2 cups flour, salt, and sugar in a bowl until evenly blended; make a well in the center of the mixture. Whisk the egg yolk and water together in a small bowl until smooth; pour into the well and mix to form a stiff dough. Transfer the dough to a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Roll the dough with a rolling pin until thin, sprinkling with flour to prevent from sticking. Brush with melted butter and roll it like a jelly roll. Cut with a sharp knife into 1 1/2-inch slices. Roll each piece into a circle and fill with about 1 tablespoon filling. Fold over into half moons and seal.

This recipe is Mexican in origin. Borrowed from Recipes4us.co.uk and posted for Zaar World Tour. I must admit that I haven't tried them yet, but seeing as how I've made an awful lot of jam recently, it's a cert that I'll make them sooner or later. Eat them as a dessert, for breakfast, or just a sweet snack. You need to allow 8 hours chilling time for the dough; this time is not included in the cooking time.

4 ounces butter, softened
3 ounces cream cheese
5 ounces plain flour
11 ounces fruit jam
3 ounces superfine sugar
1/2 teaspoon ground cinnamon

Steps:

  • Cream butter and cream cheese together in a large mixing bowl until well blended and smooth; add the flour and beat well.
  • Shape the dough into a smooth ball, wrap in cling film, and chill in the fridge for 8 hours.
  • Remove dough from refrigerator 20 minutes before using and preheat the oven to 190C, 375F, gas mark 5.
  • Lightly flour a work surface and roll the dough out to 1/4-inch thick; cut into circles using a 3-inch biscuit cutter.
  • Place a small spoonful of jam in centre of each circle, moisten edges with water then fold over to form a half circle and press the edges together.
  • Place on un-greased baking sheets and bake for 15 to 20 minutes; while the empanadas are baking mix the sugar and cinnamon together.
  • Remove from the oven and immediately roll in the cinnamon sugar.

How to make sweet empanada dough image

Easy recipe for sweet empanada dough or how to make sweet pastry dough for dessert empanadas or hand pies/turnovers using a food processor.

3 cups all-purpose flour
¼- ½ cup sugar
Pinch of salt
8 ounces butter (8 ounces = 225grams= 2 sticks, cut into pieces)
2 eggs
2-4 tablespoons of cold water or cold milk

Steps:

  • Mix the flour, sugar and salt in a food processor.
  • Add the butter, eggs and water until a clumpy dough forms.
  • Knead the dough for a few minutes.
  • Form dough into 2 balls, flatten into thick discs, and chill in the refrigerator for at least 30 minutes.
  • Roll out the dough into a thin sheet and cut out round disc shapes for empanadas, use round molds or a small plate or cup as a mold, you can choose how large based on whether you want small or medium sized empanadas .
  • Use the empanada discs immediately or store in the refrigerator or freezer to use later.
  • To assemble these sweet empanadas or dessert turnovers, place the filling of your choice on the center of each empanada disc. Don't add too much filling since it makes it harder to close or seal the empanadas when they're overstuffed.
  • To seal the empanadas, fold the disc and seal the edges by pressing the dough with your fingers. If needed, you can brush the inside edges with egg white, it will act as a glue for the empanadas. You can do a final seal by pressing the top of a fork against the edges. You can also try a curl type seal, called repulgue or churito, by using your fingers to twist the curl the edges - this is harder with sweet empanadas than with regular savory empanada dough.
  • For best results, refrigerate the empanadas for at least 30 minutes before baking - this also helps them seal better and prevents the filling from leaking out.
  • If you want your empanadas to have a nice golden finish, then you can brush them with egg wash (a whole egg whisked or egg yolk plus a few drops of water whisked). After brushing the empanadas with egg wash, you can sprinkle sugar (I prefer brown sugar or demerara) on top. You can also sprinkle them with regular or powdered sugar after baking.
  • Bake the empanadas in a pre-heated oven. I usually bake them at 375F/190C. The baking time will vary based on the oven and size of empanadas, and should be in the range of 18-25 minutes - the empanadas will be ready once they are golden on top.

1 1/2 teaspoons salt (divided, or to taste)
3 tablespoons sugar
2 tablespoons unsalted butter (chilled)
3/4 cup lard (or vegetable shortening, chilled)
2 egg yolks
3/4 to 1 cup water

Steps:

  • Gather the ingredients.
  • Sift the flour into a bowl. Stir in the salt and sugar.
  • Cut the butter and lard (or shortening) into the flour mixture with a pastry cutter or with 2 butter knives until fairly well blended.
  • Whisk the egg yolks with 3/4 cup water. Stir in 1/2 cup of the water-egg mixture, a little bit at a time, until the dough starts to come together smoothly, adding more as needed.
  • Keep kneading the dough, adding more of the water-egg mixture as needed (you may need a few tablespoons extra of water), until the dough is smooth. The dough will seem a bit shaggy until it has thoroughly chilled.
  • Cover the dough with plastic wrap and refrigerate for about 1 hour. When ready to use, the dough should be soft and smooth, not elastic. If you poke the dough with your finger, the indentation should remain.
  • Turn the dough out onto a floured surface and roll into desired thickness before cutting.
  • Use in your desired recipe and enjoy.

Savory Empanada Dough Ingredients(makes 11):
3 TBSP vegan butter
1 1/2 TBSP olive oil
1/2 cup lukewarm water
1/2 tsp salt
2 cups flour
Savory Empanada Filling Ingredients:
1/3 cup chopped sweet onion
13 grape tomatoes
2 small chopped purple garlic cloves
1 medium portabella, chopped
1-2 TBSP olive oil
1 TBSP butter
2 TBSP dehydrated veggie soup mix
pinch of salt and pepper
1 TBSP white wine
Sweet Empanada Dough Ingredients (makes 11):
3 TBSP vegan butter
1 1/2 TBSP canola oil
1/2 cup lukewarm water
1/2 tsp salt
3 TBSP sugar
2 cups flour
Sweet Empanada Filling Ingredients (yields leftovers!):
3/4 lb sweet potato (steamed for 20-25 minutes in steamer)
2 TBSP honey
1/2 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
(top with cinnamon and sugar)
1 TBSP melted butter, to cover all of the empanadas with.

Steps:

  • For the dough: Mix all ingredients together in large bowl, shape into a ball. Cover ball of dough with saran wrap and stick in freezer for about 15 minutes. Cooking Instructions for Filling: Sautee all the ingredients together (except for the wine) on high for about 1 minute. Lower flame to a low setting, cook covered for about 8-10 minutes. After dough is cooled, roll out between two sheets of wax or parchment paper; should be about 1/4 inch. Cut dough with a mason jar lid, or large, round cookie cutter. To assemble empanadas: Lightly flatten out each cut out piece of dough, so that it's a slightly larger circle. Fill with about 1 tsp worth of filling. Fold in half, pinch edges together with thumb and index finger. Brush melted butter on top. (Sprinkles cinnamon and sugar on top of the sweet ones.) Use savory filling leftovers to make omelets for breakfast the next morning :)! For the Sweet Dough: Follow steps from savory dough using 'sweet dough'ingredients. For the Sweet filling: Mash sweet potatoes with the spices in a bowl using a large spoon or potato masher. Slightly puree with hand mixer until smooth but still thick. To assemble sweet empanadas: Follow instructions from above Bake both sets of empanadas at 350 for about 18 minutes

1/2 cup partially frozen butter (cut into small cubes, place the butter cubes in the freezer until ALMOST completely frozen)
1 large egg
1/3 cup ice water
1 tablespoon vinegar

Steps:

  • In a large bowl sift together flour and salt.
  • Blend in the cold butter cubes using you fingers or a pastry blender until the mixture resembles coarse meal (the mixture should be pea-size).
  • In a small bowl whisk together egg, ice water and vinegar.
  • Add to the flour mixture, stirring with a fork just until incorporated (the mixture will look somewhat lumpy).
  • Transfer the mixture onto a LIGHTLY floured surface.

  • Form the dough in a semi-flat ball or rectangle.

  • Fill with favorite fillings then close the dough over the filling as you would a pierogi.
  • Brush the ends with egg wash then seal together with a fork.

Steps:

  • Whisk the flour, kosher salt, and cinnamon together in a large bowl,
