DREAM BARS
Steps:
- Line a 9 by 13-inch baking pan with foil so that it covers the bottom and overhangs 2 sides by at least 1-inch. Tuck the overlap around the outside of the pan. Coat with nonstick vegetable spray.
- Set a rack in the middle of the oven and preheat to 350 degrees F.
- In a bowl, combine 1 cup of the flour, 1/2 cup of the brown sugar, and the pecans. Work in the butter, rubbing and pinching it between your fingertips, until the mixture looks mealy and lumpy. Lightly pat the streusel onto the bottom of the pan.
- In a mixing bowl, beat together the eggs and the remaining 1/2 cup brown sugar until doubled in volume. Beat in the vanilla extract.
- In another bowl, sift together the remaining 1/2 cup flour, baking powder, and salt, then beat into the egg mixture. Spread on top of the streusel.
- Sprinkle on the coconut and the sweetened condensed milk. Bake for 25 to 30 minutes, until the first tiny bubbles come up. Set on a rack to cool. Run a knife around the 2 unfoiled pan sides to loosen, then lift the whole cake out of the pan. Cut into 2-inch bars.
SWEET DREAM PIE
This pie uses cookie type dough with fruit filling (apples or apricots come out the best). The pie is easy to make, and it tastes very fresh. I like to make it when the apricots are in season.

Steps:
- Heat the oven to 350°F Prepare 8" round spring form.
- In a separate bowl, mix dry ingredients: flower, salt, baking soda, and baking powder. In another bowl, combine butter, sugar, yokes, vanilla - mix with an electric mixer for 1-2 min or until smooth. Add flour mixture to the butter mixture, and combine. The dough will be soft and smooth, like playdough ;).
- Divide the dough into 3 parts, and place one part into freezer. Using your fingers spread the remaining dough in a baking form. I use metal spring form (silicon ones work ok as well).
- Prepare the fruit filling: For apple filling, wash and core apples, skin them, and grate them. Spread them over the dough in the baking form - this layer should be about 1-2 inches deep. If you are using apricots, wash and break then into halves. Spread them over the dough so that you have about 2 layers of apricot halves.
- Beat the egg whites with confectioner's sugar, until white foam becomes more or less stable. About 5 minute. Pour the foam over the filling.
- Get the piece of dough from the freezer, and using the larger grater, grate the frozen dough over the filling. Spread the pieces evenly.
- Place in the oven. Bake for about 1 hour. After the pie is ready, let it cool before serving. It tastes best when it is room temperature.

I forgot how quick and easy and inexpensive this pie was! My sister made this a while back, and I'm so glad she did! This is such a great summer pie...light and fluffy and can be made with any flavor pudding to please everybody! I also use a little bit of Cool Whip on top to make extra yummy! This recipe is from the back of the Dream Whip box.
