SOUTHERN CHICKEN SALAD

Steps:
- Chop chicken as desired and place in a medium size mixing bowl.
- Wash celery stalks under cool water, chop very fine.
- Add chopped celery to mixing bowl.
- Add the chopped onions.
- Add sweet pickle relish.
- Add mayonnaise.
- Add a little sugar if desired.
- Add salt.
- Add black pepper.
- Add Mustard.
- Add the chopped boiled egg.
- Stir mixture well, cover and refrigerate for at least one hour prior to serving.
- Serve cool and enjoy!
TRADITIONAL SOUTHERN CHICKEN SALAD
Traditional Southern Chicken Salad, with two 'secret' ingredients for fabulous flavor - hard boiled eggs and sweet pickle cubes. Creamy and comforting!

Steps:
- Cook chicken; cool. Process chicken in a food processor until finely chopped.
- Finely chop eggs and combine with chicken. Add pickle cubes, salt, and pepper. Stir in mayonnaise, adding enough to make the chicken salad smooth and creamy. Adjust seasoning, to taste.
- Chill for at least about an hour before serving.
SWEET DOWN HOME CHICKEN SALAD
This is an old southern recipe handed down for many gererations and I am sure there are many like it. Plain and simple easy to make but what makes mine set apart from others at a gathering is Dukes mayonaise. It truely makes a different taste. - 1. Boil the chicken until very tender. Pull off the bone and place in large mixing bowl. With a hand chopper chop chicken fine.
- 2. Chop the celery up fine, I use a food chopper to chop it fine. Add to chicken
- 3. Add whole 12oz jsr of Mt. Olive Sweet Salad Cubes
- 4. Add in sugar and whole pint size jar of mayonaise or little at a time making sure it is just the right amount for your chicken to mix in and be covered. Stir all this together and ready

- Mix first 2 ingredients in medium bowl until blended. Add hot water to 1 Seasoning Packet (from soup package) in separate bowl; stir until seasoning mix is dissolved. Add to sauce mixture; mix well.
- Break apart Ramen Noodles into large bowl. Add coleslaw blend, chicken and nuts; mix lightly.
- Add sauce mixture; toss to coat.

TARA'S SWEET AND CHUNKY CHICKEN SALAD
A sweet, but healthy chicken salad. The sweet secret is dried cranberries. Awesome on homemade bread or on crackers. I spread cream cheese on the bread or crackers, and top with chicken salad.
