CRAB AND SWEETCORN SOUP



Crab and Sweetcorn Soup image

A firm favourite from the Chinese restaurant that you can make at home in minutes. This is the cheats version, so easy and tasty. This recipe uses crab sticks, not whole crab, and a few crab claws. Makes a great starter to your Chinese meal. If you don't have crab claws, a few peeled prawns also work well with this dish.

Number Of Ingredients 6

1 pint chicken stock (can be made with a cube or two )
150 g tinned sweetcorn
6 imitation crab sticks, cut into 1-inch pieces
4 crab claws, cracked open
1 egg, beaten
2 teaspoons soy sauce

Steps:

  • Boil the stock and add all the other ingredients EXCEPT for the egg.
  • Let cook for five minutes, stir in the egg.
  • Serve.
  • I said it was easy !

This is the perfect soup when the summer crop of fresh corn is bountiful. Frozen corn makes a great substitute when the snow flies.

2 tablespoons olive oil
2 cups frozen or fresh whole kernel corn
1 onion, minced
3 cups water
1 tablespoon HERB-OX® Chicken Flavored Bouillon Granules
1 (6 ounce) can crab, drained
1 cup fresh basil leaves, shredded
1 cup cream
¼ cup dry sherry
2 tablespoons tomato paste

Steps:

  • Heat the oil in a large pan over medium heat and add corn and onions. Stir until the corn and onions are soft, about 5 minutes. Add remaining ingredients and simmer for about 20 minutes or until flavors blend.

1 tablespoon oil
1 onion, diced
2 garlic cloves, minced
1 -2 teaspoon gingerroot, minced
1 red chile, seeded and diced
2 tablespoons dry sherry or 2 tablespoons rice wine
8 ounces crabmeat
12 ounces corn kernels
2 1/2 cups chicken stock
1 tablespoon soy sauce
1 dash salt & pepper
2 ounces spinach leaves, sliced
2 eggs, mixed

Steps:

  • Heat oil in pot.
  • Add onion, garlic, ginger and chili and saute until softened.
  • Add sherry and reduce by half.
  • Add crab, corn, stock, soy sauce, salt, pepper, and simmer for 8 minutes.
  • Stir in spinach and season.
  • Remove from heat,.
  • Add eggs and stir into pot with a fork, forming ribbons.

4 tablespoons vegetable oil
2 sweet onions (such as Maui), chopped
8 ears white corn, kernels removed from cobs (about 8 cups), cobs reserved
10 cups water
3/4 cup whipping cream
1/2 cup chopped fresh basil

Steps:

  • Heat 2 tablespoons vegetable oil in heavy large pot over medium heat. Add half of onions and sauté until translucent, about 5 minutes. Add corn cobs and 8 cups water. Simmer until liquid is reduced to 4 cups, about 25 minutes. Cool slightly. Refrigerate overnight. Strain corn broth; discard cobs.
  • Heat remaining 2 tablespoons oil in another heavy large pot over medium heat. Add remaining onions and sauté until soft, about 5 minutes. Add corn kernels and sauté until almost tender, about 15 minutes. Add strained corn broth and remaining 2 cups water. Simmer uncovered 40 minutes. Cover and simmer until corn is very tender, about 20 minutes longer. Cool slightly.
  • Working in batches, puree soup in blender until smooth. Return soup to pot. Stir in cream. Season to taste with salt and pepper. (Can be made 1 day ahead. Cool slightly, then cover and refrigerate. Bring to simmer before continuing.) Divide soup among 6 bowls. Sprinkle with basil and serve.

1/4 cup extra virgin olive oil
1 large yellow onion, chopped
1 large potato, peeled and chopped
1 large garlic clove, minced
1 medium bay leaf
4 cups fresh corn kernels
1/4 cup shredded fresh basil leaf
4 cups chicken stock
1/2 cup dry white wine
1 lb lump crabmeat
1 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Heat the oil over medium-high heat in a large, heavy stockpot. Add the onion, garlic, potato and bay leaf and saute 5 min or until the onion becomes transparent.
  • Add the corn, basil, chicken stock and white wine, and bring to a rolling boil. Cook for 10 min, stirring from time to time.
  • Add the crabmeat, heavy cream, salt and white pepper and continue cooking over high heat for an additional 10 min, stirring to prevent the soup from sticking to the pan.
  • Remove the pan from the heat, adjust seasoning to taste and serve hot.
