GARLIC CHILI SHRIMP

Asian style stir fried garlic chili shrimp or prawns is juicy, spicy and sweet. Often in Asian cuisine, shrimp or prawns are cooked as a whole that have head and shell on. Not only is it convenient to cook, but also it retains shrimp juicy and gives more flavor to the food.

5 cloves Garlic
1 pound Raw whole shrimp
1 tablespoon Lee Kum Kee garlic chili sauce
1/2 tablespoon Soy sauce
1 tablespoon Water
1/2 tablespoon Brown sugar
1/2 tablespoon Vegetable oil
3 sticks Green onion

Steps:

  • Mince 5 cloves of garlic.
  • Cut 3 sticks of green onion.
  • Pour ½ tablespoon of vegetable oil into a non-stick pan and turn on medium to high fire. Then, add minced garlic and stir fry for a minute.
  • Next, add the washed whole raw shrimp and stir fry a little bit.
  • After that, add 1 tablespoon of chili garlic sauce, ½ tablespoon of soy sauce, ½ tablespoon of brown sugar and 1 tablespoon of water and stir fry a few minutes.
  • Until the shrimp cooks. It turns orange red. (Around 3-5 minutes and don't over cook them because the texture of shrimp will change.)
  • When the shrimp is cooked, add the chopped green onion, mix it and ready to serve.

12 large raw shrimp (wild U-10 or 15/20 count) peeled, deveined and cut in "fan" shape (similar to butterfly)
1 tablespoon fresh lime juice (from1 small lime), plus lime wedges for garnish
1 teaspoon Thai chili sauce (recommended: Sriracha) or more, to taste
1 tablespoon light brown sugar
2 tablespoons bottled minced garlic or 6 fresh cloves, minced
2 tablespoons ketchup
1 Thai chile, sliced thin or habanero or Scotch bonnet
1/4 cup canola or olive oil
1/4 cup toasted sesame oil
1/4 cup soy sauce
4 to 5 grinds black pepper

Steps:

  • Heat a grill to medium-high heat.
  • Put the shrimp into a glass bowl. Whisk the remaining ingredients in a medium bowl and pour 1/2 to 2/3 if it over the shrimp. (Reserve the remaining marinade to brush on the shrimp during grilling.) Allow the shrimp to marinate for only 8 to 10 minutes or the lime juice will begin to "cook" the shrimp. Grill the shrimp, approximately 2 to 3 minutes per side while brushing with the reserved marinade. I use a silicone brush. Remove the shrimp from the grill to a platter and serve garnished with lime wedges.

1 1/2 teaspoons cornstarch
1/2 teaspoon salt
1 1/2 tablespoons soy sauce
1 tablespoon ketchup
1 tablespoon honey

1/4 cup yellow onion, finely diced

  • Heat up some Oil in a skillet. As the oil shimmers, throw in the Shrimp. Keep some gap between each shirmp. Cook over medium-low heat for 2-3 minutes or until the Shrimps curl up. Cook both sides until they get light pink. Once the Shrimps gets cooked, take them out of the skillet and keep in a separate plate.
  • To Make the Sweet Chili Sauce combine all the sauce ingredients in a mixing jar or bowl. Whisk until combined. Pour it in the same skillet where you had previously cooked the Shrimps. Allow the sauce to simmer over medium-high heat for 4-5 minutes. Stir occassionally and scrape off anything sticking to the bottom of the skillet. After 5 minutes turn off the heat and see of the sauce has thickened and got sticky. It should get sticky after 5minutes of simmering.
