SWEET CHILI CHICKEN STIR FRY
This stir fry is hard to beat with it's sweet, slightly spicy flavors!

- Start by prepping all parts of the stir fry before beginning to cook.
- Cut both ends off the onion, peel away the tough outer layer and slice in half from the top to the bottom. Lay each half flat side down and slice across the rounded top to create half moon slices.
- For the broccoli, peel the tough outer layer of the stem with a peeler and slice the stem into 1/4″ thick slices. When you reach the florets, break them apart into roughly 1/2″ pieces.
- Cut both ends off the zucchini and quarter them lengthwise. Then slice across the quarters into 1/4″ thick triangular slices.
- For the chili sauce, mix together the tapioca starch and coconut aminos together in a bowl until the tapioca starch is completely dissolved and there are no lumps. Mix in the chili paste and the honey, don't worry if the honey is clumpy, it will dissolve and mix in when you add the sauce to the pan.
- Heat a large 15″ skillet over high heat. When the pan is almost smoking, add 2 Tablespoons of the avocado oil and sear the cubed chicken for about 2 minutes on each side to create a nicely browned exterior. Remove the chicken from the pan and set it aside, it will finish cooking completely at the end of the stir fry.
- Add the remaining 2 Tablespoons of avocado oil to the pan along with the onion, bell pepper, brocolli, carrots, and minced garlic.
- Sauté the veggies for about 4 minutes, or until they're just starting to soften. Add the zucchini and stir fry for an additional 2 minutes or until the zucchini begins to soften and all the veggies are crisp tender.
- Add the chicken back to the pan along with the chili sauce.
- Cook just until the chicken is cooked completely through and serve immediately.

- Mix all the ingredients for the Batter until well combine. Add the chicken into the batter.
- Heat up a wok/skillet with about two inches of oil. As soon as the oil is fully heated, deep-fry the chicken until golden brown. Transfer the chicken out to a dish lined with paper towels to sock up the excess oil.
- Clean the wok/skillet and heat it up on medium heat. Add the oil and stir-fry the garlic until aromatic. Transfer the fried chicken into the wok, follow by the sweet chili sauce, lime juice and salt. Stir to coat the chicken well with the sweet chili sauce.
- Dish out, garnish with the white sesame and cilantro leave. Serve immediately.

- Begin the coconut rice first. Add the jasmine rice, garlic, salt, coconut milk, and water to a sauce pot, then give it all a brief stir. Place a lid on the pot and bring it up to a boil over high heat. As soon as it reaches a full boil, turn the heat down to low and let it simmer for 15 minutes. After simmering for 15 minutes, turn the heat off and let it sit undisturbed, with the lid in place, for 5 minutes. Fluff the rice, and set it aside until ready to serve.
- While the rice is cooking, prepare the steamed broccoli. Cut the broccoli crown into florets. Add one inch of water to a large pot, place a steaming basket in the pot, then place the broccoli crowns in the basket. Place a lid on the pot, then place it over medium high heat. Allow the water to come up to a boil, and steam the broccoli until it is bright green and tender (about 5 minutes). Remove the broccoli from the heat and set aside until ready to serve.
- While the rice and broccoli are cooking, prepare the chicken stir fry. Dice the chicken into 1-inch pieces. Season with a pinch of salt. Heat 1 Tbsp cooking oil in a large skillet over medium-high heat. Once hot, add the chicken and stir and cook until the chicken is cooked through and slightly browned on the outside.
- Drain the can of pineapple, then add the pineapple to the skillet along with the sweet chili sauce. Stir and heat the sauce and pineapple through (about 2 minutes).
- To serve, place about 1 cup rice in each bowl, add 1/4 of the sweet chili chicken mixture, and 1/4 of the broccoli. Enjoy immediately, or refrigerate until ready to serve. Lasts about 4 days in the refrigerator.

One of my favorite Vietnamese dishes is bun thịt nuong, which consists of cold or room temperature rice vermicelli topped with grilled pork and pickled and fresh vegetables. When I can't get to my favorite Vietnamese restaurant, I make this easy and tasty riff at home. It's layered with incredible flavor, which comes from sweet and tangy stir-fried chicken, aromatic basil and the best-ever quick pickles. Don't have the rice noodles? Swap in your favorite grain, pasta or spiralized vegetable.

- Bring a medium saucepan of water to a boil, then add a small handful of salt. Cook the noodles according to the package directions. Drain in a colander and rinse under cold water. Add 1 tablespoon of the canola oil and toss to coat.
- While the noodles cook, in a medium bowl, mix the cucumber, onion and jalapeno with the 1/4 cup rice vinegar and a generous pinch of salt. Let stand for 10 minutes, stirring occasionally.
- Meanwhile, in a small bowl, whisk the sweet chili sauce with the soy sauce, cornstarch and the remaining 1 tablespoon of the rice vinegar. In a large cast-iron skillet or wok, heat the remaining 1 tablespoon canola oil over medium-high heat. Add the chicken and cook, stirring occasionally, until lightly browned and just cooked through, about 5 minutes. Stir in the chili sauce mixture and cook until the chicken is glazed, about 2 minutes.
- Transfer the noodles to bowls and top with the chicken. Serve with the pickled vegetables and basil leaves.
SWEET CHILLI CHICKEN

- To make the glaze, preheat the grill to high. Mix together the chilli sauce, honey and oil in a large bowl. Using a sharp knife make 3-4 slits across the skin side of each chicken breast. Season with salt and pepper then lift the skin on each breast and tuck under the crushed garlic. Now dip the underside of each chicken breast in the glaze until evenly coated. Reserve the rest of the glaze for later.
- To cook the chicken, put the chicken on the grill pan, glazed side up, and grill for 8 minutes until golden and sticky. Turn the chicken breasts over, brush with the remaining glaze, then cook for another 6-8 minutes until the chicken is firm and cooked through. Serve straight away with wedges of lime for squeezing over, if liked.

- Combine the first eight ingredients in a glass bowl, add the chicken, mix.
- Cover and refrigerate for several hours or overnight.
- Snap off the tough ends of the asparagus, discard, cut asparagus in approx 1 ½ inch pieces.
- Cook, steam or microwave the asparagus until just tender, rinse under cold water, drain.
- Now drain the chicken from the marinade, reserve the marinade.
- Heat one tablespoon of oil in the wok and stir-fry the onions until going soft, remove.
- Heat the rest of the oil, stir-fry the chicken until just browned, add marinade, simmer for approx 10 minutes, until tender, probably less when you use chicken breast, stir now and then.
- Add the onion, asparagus and bok choy, cook until heated through and the bok choy starts to wilt (this wont be long).
- Transfer to a serving dish and sprinkle on the green onions .

CHILLI CHICKEN STIR-FRY

- Slice the chicken into thin bite-size strips.
- In a bowl, mix soy sauce, oyster sauce, five-spice powder and black pepper and add in the chicken strips and give it all a good mix till the chicken pieces are coated evenly.
- Leave to marinate for atleast 30 minutes.
- Heat a wok over high heat, and when hot, add the oil.
- Stir-fry the garlic and ginger for about 30 seconds before adding the chicken and its marinade and cook for about 6-8 minutes or so stirring constantly (till the chicken is cooked).
- Add the vegetables and chillies to the wok, and fry briskly for a minute.
- Pour in the hot chicken stock and add the dark soy sauce and give it a good stir.
- Mix cornflour in hot water till dissolved and pour into the wok.
- Stir until the sauce is thickened, season to taste, and serve straight away.

SWEET CHILI CHICKEN

- Heat oil in a large non-stick skillet over medium-high heat.
- Add ginger, green onions and garlic and stir 30 seconds.
- Add chicken cubes and stir-fry 2 or 3 minutes, until browned.
- Mix the hoisin, chili sauce and soy sauce and add to the chicken.
- Cook until chicken is fully cooked.
- Add spinach and cook a minute until just wilted.
- Serve over rice and garnish with cilantro.
- If you prefer a thick sauce combine a teaspoon of cornstarch with a bit of water and stir in until sauce thickens.
- Leftovers make a good wrap filling with additional vegetables.
