Mom's Cheese Pie image

"My mother brought this Old World recipe with her from the Ukraine," says Anne Kulick of Phillipsburg, New Jersey. A sprinkling of cinnamon enhances the pie's subtly sweet flavor.

2 large eggs
1 sheet refrigerated pie pastry
1 teaspoon ground cinnamon, divided
1-3/4 cups ricotta cheese
4 ounces cream cheese, softened
3 tablespoons confectioners' sugar
1-1/2 teaspoons cornstarch
1/2 teaspoon vanilla extract
1/2 teaspoon salt

Steps:

  • Separate one egg. In a small bowl, lightly beat egg white; set aside. In another small bowl, combine egg and egg yolk; set aside., On a lightly floured surface, unroll pastry; cut in half. Roll out one half of pastry into an 8-in. circle. Transfer to a 7-in. pie plate; trim pastry even with edge. Brush with egg white; sprinkle with 1/2 teaspoon cinnamon., In a large bowl, combine the cheeses, confectioners' sugar, cornstarch, vanilla, salt and egg mixture. Pour into prepared pastry., Roll out remaining pastry to fit top of pie. Place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush remaining egg white over pastry; sprinkle with remaining cinnamon., Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool completely on wire rack. Refrigerate leftovers.

1 cup chopped pecans
1 package (8 ounces) cream cheese, softened
1/2 cup mayonnaise
4 cups shredded sharp cheddar cheese
6 green onions, chopped
1/2 pound bacon strips, cooked and crumbled
1 jar (10 ounces) seedless raspberry or strawberry preserves
Sliced green onions, optional
Assorted crackers

Steps:

  • Spread pecans evenly over bottom of a greased 9-in. springform pan. In a large bowl, beat cream cheese and mayonnaise until smooth. Stir in cheddar cheese, green onions and bacon. Carefully spread over pecans. Refrigerate, covered, overnight., Loosen sides from pan with a knife; remove rim from pan. Spread preserves over top. If desired, top with sliced onions. Serve with crackers.

1 1/4 cups graham cracker crumbs (from nine 4 3/4- by 2 1/4-inch crackers)
5 tablespoons unsalted butter, melted
1/2 cup plus 2 tablespoons sugar
1/8 teaspoon salt
1 lb whole-milk cottage cheese
3 large eggs
2/3 cup whole milk
1 teaspoon vanilla
1/4 teaspoon freshly grated nutmeg

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Butter a 9-inch glass pie plate.
  • Stir together crumbs, butter, 2 tablespoons sugar, and salt with a rubber spatula until combined well. Press crumbs evenly onto bottom and side of pie plate. Chill crust 10 minutes.
  • Stir together remaining ingredients (including 1/2 cup sugar), then pour into crust. Bake until filling is puffed, pale golden, and lightly set, about 1 hour.
  • Cool to warm on a rack, about 30 minutes.

16 ounces ricotta cheese
1 cup sugar
3 tablespoons all-purpose flour
1 teaspoon fresh lemon juice
1 dash salt
3 eggs, separated
12 ounces evaporated milk
1 1/2 cups milk
2 (9 inch) unbaked pie crusts (graham is nice)

Steps:

  • Place the cheese in a strainer; drain for about 1 hour or until most of liquid has drained.
  • Preheat oven to 425°.
  • Combine all the ingredients except the egg whites; mix well.
  • Beat the egg whites until firm, fold into batter until smooth.
  • Pour into pie crusts.
  • Bake 15 minutes and reduce oven to 350°; bake additional 25 minutes or until knife in center comes out clean.
  • Cool on racks, then chill.
  • The flavors improve a day after baking.

1 cup heavy cream
1 cup milk
3 drops hot sauce
¼ teaspoon salt
¼ teaspoon pepper

1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spread shredded cheese in the bottom of pie crust.
  • In a large bowl, combine eggs, cream and milk. Season with hot sauce, salt, pepper and paprika. Pour filling over shredded cheese in the pie crust.
  • Bake in the preheated oven for 40 to 50 minutes, or until golden brown. Cool 10 minutes before serving.

175 g plain flour
150 g butter
50 g vegetarian parmesan cheese, grated
1 egg yolk
450 g leeks, trimmed and sliced
1 tablespoon fresh thyme, chopped
350 g sweet potatoes, chunked
150 ml dry white wine
150 ml vegetable stock
300 ml double cream, aka heavy cream
200 g goat cheese, cubed
1 medium egg, beaten
1 teaspoon black pepper

Steps:

  • First make the pastry.
  • Sift the flour into a bowl and rub in half the butter until it resembles breadcrumbs. Add 2/3 of the parmesan. Beat the egg yolk with 2 tbsp of water and add to mixture to form a soft dough. Wrap in clingfilm and place in fridge for 20 minutes.
  • Heat oven to 190°C.
  • Melt the remaining butter in a frying pan and fry the leeks, potato and thyme for 10 minutes.
  • Add wine and stock and bring to the boil. Boil rapidly until the liquid is reduced by 50%.Add the cream and bring to the boil and boil rapidly until the sauce resembles thick cream,.
  • Place mix in a large pie dish and scatter with the cheese.
  • Roll the pastry into a circle large enough to cover the pie dish. Brush the rim with a little water and cover the pie. Trim any excess and make decorations if you wish.
  • Brush the pastry with the egg.
  • Scatter the pie with the remaining parmesan and black pepper.
  • Cook for 35 minutes until golden brown.
