SWEET RICE PORRIDGE
Transform tonight's leftover rice into tomorrow's breakfast by simmering it with milk, Medjool dates, and cinnamon.

- In a saucepan, combine rice, milk, dates, cinnamon, and a pinch of kosher salt. Bring to a boil, then reduce heat and simmer, stirring, until thick and creamy, 5 to 7 minutes. Serve, topped with berries, apple, almonds, and a drizzle of honey.
SWEET RICE
Often called Arroz con Leche, this is a sweet custard-like pudding. I haven't had a single person not love this traditional Mexican rice pudding. You might want to double the recipe!

Steps:
- Bring the rice, butter, and water to a boil in a large saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
- Whisk together 2 cups of milk, flour, sugar, egg, and vanilla extract in a bowl, and pour the milk mixture over the cooked rice. Stir to combine, and simmer over low heat for 15 minutes. Stir in 1 cup whole milk, the cream, raisins, and cinnamon until thoroughly mixed, and allow to cool for a few minutes. Serve warm or cold.

SWEET BREAKFAST RICE
We love to use our leftover rice for this and then eat it for breakfast like oatmeal. Very tasty and filling! The kids love it as well.

- Combine all ingredients (except egg) in heavy sauce pan. Bring to a boil on medium high heat. Reduce heat to simmer and cook for 7-10 minutes or until flavors are blended and rice has absorbed most of the liquid. Slowly add the beaten egg, stirring continuously so the egg does not "scramble". Simmer 2-3 minutes more. Serve either warm or cold. A little cream on top makes it extra rich!

Steps:
- In a large, heavy skillet saute sausage, green peppers, onions and mushrooms until sausage is crumbled and cooked through, around 10 minutes.
- Pour off all but 1 T of the fat.
- Add the rice, garlic powder and black pepper, cooking for another 5 minutes, stirring often.
- In a small saucepan or microwaveable dish melt the velvetta or cheese whiz with a little milk to make a"just pourable" sauce.
- Remove rice skillet from heat, add the cheese sauce and mix well.
- The rice mixture should be sticky.
- Serve hot.

MOM'S SWEET RICE CEREAL
Do you like Oatmeal? Hot cereal? This is another great recipe handed down. Doesn't matter how old you are, when you are sick you want your Mom! Recently while being sick and not having much of an appetite, I remembered this hot cereal my mom made us girls while growing up. - Add rice and stir to combine. Remove from Heat and cover 5 minutes.
