6 1/2 cups (24 ounces) fresh cranberries
2 cups sugar
2 teaspoons finely grated, peeled fresh ginger
1 tablespoon unflavored gelatin, plus more for pan and bowl

Steps:

  • Put cranberries, sugar, ginger, and 2 cups water into a medium saucepan. Cover, and bring to a simmer; cook, stirring occasionally, until berries are soft, about 10 minutes. Pour through a sieve into a medium bowl; discard solids.
  • Meanwhile, put 1/2 cup cold water into a bowl; sprinkle with gelatin. Let soften 5 minutes. Add cranberry mixture; stir until gelatin has dissolved. Refrigerate, covered, at least 4 hours (up to 1 week).

1 pound whole cranberries (washed and picked over for any bad berries)
1 1/2 cups of sugar
1/2 cup apple cider
lemon juice (optional)

Steps:

  • Combine the first three above ingredients and simmer until the berries begin to burst. Remove from the heat and taste. If it's too sweet for you, add a bit of lemon juice to increase the tartness. If it's too tart, you can add a bit more sugar and return to the heat in order until the sugar is integrated.
  • Once the flavors are adjusted and the fruit has cooled a bit run it through a food mill or press it through a sieve, to remove the skins.
  • Pour into clean jars (leaving 1/2 inch head space), wipe rims, apply lids (make sure to simmer your lids at approximately 180 degrees for about ten minutes prior to use) and process in a boiling water canner for fifteen minutes (starting the time when the canner returns to a boil).
  • If you can't help but mess around with recipes, try adding some cinnamon, orange zest or a bit of vanilla bean (it's delicious, it just didn't match the food memory I was trying to satisfy). Make it your own!

SUNNY'S APPLE AND GINGER CRANBERRY JELLY MOLDS



Sunny's Apple and Ginger Cranberry Jelly Molds image

2 pounds Granny Smith apples, quartered
4 cups cranberry juice
One 8-inch piece fresh ginger, sliced
1 cinnamon stick
3/4 cup sugar
Two 1-ounce packages unflavored gelatin
Nonstick cooking spray, for the party cups

Steps:

  • Add the apples (seeds and all), cranberry juice, ginger and cinnamon stick to a large pot. Bring to a boil, then reduce the heat and steep on medium until the apples are mushy, about 25 minutes. Strain the contents of the pot using a fine-mesh sieve and a moist paper towel or cheesecloth. Do not press anything through the sieve. Allow to drip to about 2 cups of liquid. Discard the solids.
  • Wipe the pot clean or rinse with water. Pour all but 1/4 cup of the liquid back into the pot and add the sugar. Cook on medium high until the sugar dissolves.
  • Add the gelatin to the reserved 1/4 cup liquid and stir. Stir this into the pot and remove from the heat. Let cool until just warm.
  • Coat the inside of four 8-ounce ridged party cups (or several shot glass-size party cups) with cooking spray (you may want to double the cups so you don't warp them). Once the liquid has cooled a bit, divide among the cups. Place on a tray and refrigerate until firm, about 3 hours.
  • To unmold, dunk the sides of the cups in warm water and wiggle out the jelly.

4 Cups Whole cranberries (Fresh or frozen)
2 Cups White Sugar
1 Cup Fresh orange juice (Juice of 1 orange + enough water to = 1 Cup)
1 Peel Peel from one orange - Chopped
1 Stick Cinnamon

Steps:

  • In a heavy saucepan, combine all ingredients
  • Bring to a boil. Cranberries will burst and mixture will begin to coat your spoon.
  • Strain mixture through fine mesh strainer to remove seeds, orange peel, and spices if desired. Alternately, remove cinnamon stick and use a stick blender to blend to your preferred consistency.
  • Pour into serving dish and allow to cool until thickened
  • *I prefer to use Clementines because of their super sweet, orange flavor.

FILLING:
2 cups fresh or frozen cranberries
2 teaspoons cornstarch
1 teaspoon minced fresh gingerroot
3 large egg whites
3/4 cup confectioners' sugar
TOPPING:
1 cup heavy whipping cream
1 tablespoon confectioners' sugar
1/2 teaspoon grated orange zest
1/4 cup finely chopped crystallized ginger

Steps:

  • In a small bowl, combine the almonds, butter and sugar; press onto the bottom and up the sides of an ungreased 9-in. fluted tart pan with removable bottom. Bake at 375° for 10-12 minutes or until edges are golden brown. Cool on a wire rack., Meanwhile, in a large bowl, combine the cranberries, cornstarch and ginger. In another bowl with clean beaters, beat egg whites on medium speed until soft peaks form. Gradually beat in confectioners' sugar, 1 tablespoon at a time, on high until stiff peaks form; gently fold in cranberry mixture., Spread cranberry mixture into prepared crust. Bake at 375° for 18-22 minutes or until meringue is lightly browned. Cool completely on a wire rack., In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar and orange zest; beat until stiff peaks form. Stir in crystallized ginger. To cut tart, use a knife dipped in hot water; serve with whipped cream. Store in the refrigerator.

2 cups sugar
2 teaspoons finely grated peeled fresh ginger
1 tablespoon unflavored gelatin

Steps:

  • Combine cranberries, sugar, ginger, and 2 cups water in a medium saucepan. Cover, and bring to a simmer; cook, stirring occasionally, until berries have burst and softened, about 10 minutes. Pass through a sieve into a medium bowl, pressing on solids with a wooden spoon to extract as much liquid as possible; discard solids.
  • Meanwhile, sprinkle gelatin over 1/2 cup water in a bowl. Let soften 5 minutes. Add cranberry mixture; stir until gelatin has dissolved. Refrigerate, in an airtight container, at least 4 hours (or up to 1 week).

1/2 teaspoon butter
1 teaspoon orange zest (optional)
3 tablespoons liquid fruit pectin (be sure to use the liquid kind and not the powdered kind)

Steps:

  • Crush the cranberries in a food processor until you have cranberry mush (if they are frozen, it will be more like cranberry powder).
  • Bring the cranberries, sugar, and butter to a full rolling boil in a medium-sized heavy-bottom saucepan on high heat, stirring periodically.
  • Quickly stir in the liquid fruit pectin.
  • Boil for one more minute.
  • Remove from heat, store in a bowl, Tupperware, glass jar, or whatever you'd like in the refrigerator for up to two weeks.

1 tablespoon fresh ginger (minced)
2 tablespoons lime juice

Steps:

  • Rinse and drain the fresh cranberries.
  • Grate ginger and set aside.
  • In a food processor, add the cranberries and pulse to mince. Do not over mince or it will be mushy.
  • In a medium sized bowl, mix together blended cranberries, sliced green onions, jalapeno peppers, cilantro and ginger.
  • Add sugar and lime juice. Mix to combine.
  • Cover bowl and refrigerate to let the flavors develop.
  • Serve!
