SWEET AND SPICY PORK WITH APPLES IN UNAGI SAUCE
Spicy pork recipe with apples and bell peppers in a unagi (fish) sauce. Serve with white or brown rice.

Steps:
- Heat the peanut oil in a large skillet over low heat. Stir in the ginger, brown sugar, and chili powder. Cook and stir for several minutes until the brown sugar has melted and the ginger is fragrant. Add the onion, red bell pepper, yellow bell pepper, and garlic. Increase heat to medium and continue cooking until the onion has softened and turned translucent, about 7 minutes.
- Stir the soy sauce, unagi sauce, paprika, mirin, and coconut extract into the vegetable mixture; bring to a simmer. Add the pork cubes and chicken stock; return to a simmer. Reduce heat to medium-low, cover, and simmer until the pork is tender and no longer pink in the center, about 15 minutes.
- Dissolve the cornstarch in the water; stir into the simmering pork. Add the apple and orange cubes; cover and cook until the apple is becoming tender, about 5 minutes. Stir in the basil, green onions, and black pepper; cook 2 minutes more before serving.

PORK & APPLE SAUCE

- Quarter the apples and remove the cores, peel and finely chop the ginger and place both in a pan with 300ml of boiling water. Boil hard for 10 minutes, stirring occasionally.
- Tip the contents of the pan into a blender and blitz until smooth. Rinse the pan, return to the heat and cook the rice according to the packet instructions.
- Steam the carrots in a colander above the rice for 20 minutes with a lid on, then remove them to a plate. Add the broccoli to the colander to steam for the last 5 minutes, then put aside and drain the rice.
- Meanwhile, season the pork all over with a pinch of sea salt and black pepper, finely grate over a quarter of the nutmeg, then pick over the sage leaves and really press them into both sides of the pork.
- Put 1 tablespoon of oil into a large frying pan on a medium heat, then add the pork and steamed carrots. Cook the pork for 4 minutes on each side (depending on its thickness - use your instincts), or until golden and cooked through.
- Remove the pork to a board to rest for a few minutes. Reduce the heat to low, squeeze the orange juice over the carrots, shake the pan to coat them and pick up the sticky bits from the bottom, then leave until it becomes a natural syrupy glaze.
- Slice the pork and serve with the rice, broccoli and carrots. Swirl the yoghurt through half the apple sauce (keep the rest for another day) and serve on the side. Drizzle with any pan and resting juices, and tuck in.

SWEET & SPICY ASIAN PORK
Makes a great less than 30 minute week night dinner. An original recipe that I created for the 2 for 1: Leftovers Challenge in Cooking Photos. Make it your own by adding other or more veggies, and by increasing the hot red chili sauce--if you're a red hot lover. LOL

- In jar with lid, combine all the sauce ingredients; shake to blend and refrigerate at least 2 hours.
- Cook rice or noodles, drain and set aside,covered.
- Heat oil in wok or large skillet over Med-Hi heat.
- Add pork and cook for about 3 minutes; add onion, celery, and green pepper (and mushrooms, if using).
- Saute all for another 2-3 minutes. (The pork will brown nicely.).
- Add sauce and lower heat to medium.
- Cook until sauce thickens slightly; stirring to coat veggies and meat with sauce. Do not overcook the veggies; need to be crispy.
- Place rice or noodles in bowls or on plates and pour on the pork mixture.
- Sprinkle with green onions to serve.
SWEET AND SPICY CHINESE PORK
Delicious sticky pork served with soft noodles

- For the pork marinade, place the diced pork into an ovenproof dish. Finely chop the coriander, spring onions, red chillies, garlic and ginger and add to the pork. Pour over the honey, soy sauce and oil, add the chinese 5 spice and give it a good mix, so the pork is fully coated. Cover with foil and put in the fridge for 4-6 hours.
- When the pork has finished marinating, preheat the oven to 220C/200C fan assisted.
- When the oven has reached the right temperature, put the foil covered pork on a middle shelf. The pork should take 30 mins to cook, stir it halfway through and remove the foil for the last 10 mins.
- Meanwhile, slice the vegetables and boil the noodles according to the pack instructions. Once the noodles have cooked and are being strained, heat the oil in a wok. It is important that the noodles dry out as much as possible. When the oil is hot add the vegetables, you do not want them to fry to quickly so put them on a low heat. Test the vegetables after 7 mins, they should still slightly crunchy.
- Next, add the soy sauce, the noodles and the pork with the juice from the oven dish, carry on frying that for 1 min, garnish with the chopped coriander and it is ready to serve!
PORK SAUSAGE AND APPLE PATTIES
Something different to do with sausage. Makes a very tasty sausage patty with very little effort and simple ingredients. This recipe is from my mother. She made them when I was growing up and I have no idea where the recipe came from.

- Bake, covered, for 30 minutes at 350° F.
- Uncover and bake for 10 minutes longer.
- Note: If desired, you can slice some additional apples into 1/4 inch thick rings, sprinkle them with a little sugar and bake them at the same time as the patties, covered.
- Serve each patty on an apple ring.

APPLE SAUCE
This simple, tangy apple sauce takes no time to make and freezes brilliantly. Fantastic with roast pork, but also great on pancakes or latkes.

- Put the apples in a saucepan with the lemon zest and water. Cover and cook over a low heat until they are soft and mushy.
- Take off the heat and beat in the butter and the sugar. Cool.
PORK CHOPS WITH SPICY APPLESAUCE
Steps:
- Make the Pork Chops: Preheat oven to 425 degrees F. Sprinkle both sides of pork chops with salt and pepper.
- Heat large skillet over medium-high heat; add vegetable oil. Place chops in skillet; cook 3 minutes per side.
- Transfer to oven and bake 6 to 8 minutes or until internal temperature reaches 145 degrees F for medium-rare (or 160 degrees F for medium). Transfer chops to serving platter and let rest 3 minutes before serving.
- Meanwhile, make the Spicy Applesauce: Heat olive oil in medium pot over medium-high heat. Add apples and cook 5 minutes, stirring occasionally. Add brown sugar, vinegar, red pepper flakes, cayenne, salt and pepper; cook an additional 5 minutes, stirring occasionally. Remove from heat and stir in rosemary. Serve pork chops with warm applesauce.
