SLOW COOKER KOREAN MEATBALLS



Slow Cooker Korean Meatballs image

Tender juicy, sweet and spicy Slow Cooker Korean Meatballs simmered in the most tantalizing rich sweet heat sauce that everyone goes crazy for! Perfect stress-free, make-ahead appetizer for New Year's Eve or Game Day or these meatballs make a delicious, easy meal with rice and veggies!

Number Of Ingredients 15

2 pounds lean ground beef
2 eggs
22 saltine crackers, crushed ((approx. 1 cup))
1/3 cup dry minced onion
1/3 cup milk
1 tsp EACH salt, garlic pwdr, onion pwder, ginger pwdr
1/4 teaspoon pepper
1 10 oz. jar seedless blackberry preserves ((1 cup))
1/2 cup hoisin sauce
3 tablespoons Gochujang
1/4 cup red wine vinegar
2 tablespoon low sodium soy sauce
1 1/2 tablespoons cornstarch
1/2 tsp EACH ginger pwdr, garlic pwdr, onion pwdr
1/4 teaspoon pepper

Steps:

  • Preheat oven to 450 degrees F. Line a rimmed baking sheet with foil. Set aside.
  • In a large bowl, add eggs and gently whisk. Add all remaining Meatball Ingredients and mix until well combined. Roll meat mixture into desired meatball size*. Place meatballs onto prepared baking sheet and bake for 8 minutes, or until lightly browned.
  • Meanwhile, add all of the Korean Sauce Ingredients to a medium bowl and whisk to combine.
  • Line the bottom of your slow cooker with a thin layer of the Korean Sauce. Add a layer of meatballs, drizzle with some more Sauce, then remaining meatballs followed by the remaining Sauce.
  • Cover and cook on low heat for 2 hours, gently stirring an hour after cooking. When done, taste and stir in additional Gochujang if desired for more sweet heat. Keep warm until serving.

4 green onions (chopped)
½ cup breadcrumbs (such as Panko)
3 cloves garlic (minced)
1 egg
2 tablespoon Sriracha sauce
1 teaspoon ground ginger
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
½ cup apricot jam
1 tablespoon soy sauce
2 tablespoon Sriracha sauce

Steps:

  • Preheat oven to 400 F degrees. Line a baking sheet with parchment paper; set aside.
  • In a large bowl, add all the meatball ingredients and mix with your hands to combine. Form the meatballs into small 1 inch balls. Place the meatballs on the prepared baking sheet and bake for about 20 to 25 minutes or until done to your liking.
  • Meanwhile, in a medium bowl whisk together all the glaze ingredients. Add the meatballs and toss well until all the meatballs are glazed.
  • Garnish with chopped chives if preferred and serve immediately over cooked rice or as an appetizer.

1 lb ground beef (or combine half ground beef with half ground turkey or ground pork)
1 tablespoon gochujang (spicy Korean chili paste)
2 tablespoons soy sauce
1 teaspoon ginger (minced or grated)
2 garlic cloves (minced or grated)
1 scallion (minced)
1 teaspoon sesame oil
1 tablespoon honey
½ cup panko breadcrumbs
1 egg (lightly beaten)
½ teaspoon kosher salt
¼ teaspoon pepper
3 Tbsp ketchup
2 Tbsp gochujang (Korean chili paste, add 1/2 Tbsp more to make it spicier)
1/4 cup honey
1/4 cup brown sugar
2 Tbsp rice vinegar
1 Tbsp soy sauce
1 Tbsp sesame oil
2 Tbsp minced garlic
1 Tbsp sesame oil
Scallion (thinly sliced)
Sesame seeds

Steps:

  • Preheat oven to 375°F
  • Place all of the meatball ingredients into a large mixing bowl and, using your hands, mix together until just blended, don't overmix.
  • Form 1½ tablespoon sized meatballs; place them about an inch apart onto a parchment-lined baking sheet. Bake meatballs for 15 to 20 minutes or until just cooked through.
  • Meanwhile combine all glaze ingredients in medium pot. Bring to a simmer over medium heat and cook until mixture is slightly thickened, about 5-7 minutes. Set aside and let cool.
  • Brush glaze onto meatballs and garnish with green onions and sesame seeds. Serve warm.

1 pound ground beef
1/2 pound ground pork
1/2 cup panko breadcrumbs
1 large egg, lightly beaten
3 cloves garlic, minced
1 large yellow onion, finely diced
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
Two 10-ounce jars red pepper jelly or hot pepper jelly
1/2 cup orange juice
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix the meats, panko, egg, garlic, onion, paprika, salt and pepper in a large bowl with your hands until completely combined. Scoop mixture into heaping tablespoons, then roll into neat balls. Transfer to a 9-by-13-inch baking dish. Bake until cooked through, 25 to 30 minutes.
  • Add pepper jelly, orange juice and soy sauce to a small pan. Cook over medium-high heat until it simmers, then remove from the heat. Pour jelly sauce over the meatballs and toss to coat.

1 (8 ounce) jar grape jelly
2 tablespoons Dijon mustard
1 (16 ounce) package frozen bite-size meatballs, thawed

Steps:

  • Preheat oven to 350 degrees; lightly grease a 13x9-inch baking dish.
  • In medium saucepan, combine chili sauce, jelly and mustard; cook over low heat until jelly is melted and mixture is smooth.
  • Place meatballs in prepared baking dish; spoon chili sauce mixture over meatballs.
  • Cover, and cook 1 hour, stirring occasionally.
  • Serve warm.
