3 bone-in chicken breasts
4 tablespoons unsalted butter, (softened)
1 teaspoon salt
1 teaspoon pepper
1/2 red onion, (chopped)
1/2 tablespoon olive oil
1 teaspoon brown sugar
2 (8-ounce) blocks cream cheese, softened to room temperature
2/3 cups ranch dressing
2/3 cups your favorite BBQ sauce
8 ounces sharp cheddar cheese, (freshly grated)
crackers or chips for serving

Steps:

  • Preheat oven to 425 degrees F. Rub chicken breasts with softened butter then season with salt and pepper. Place on a baking sheet and roast for 30-40 minutes. Let cool completely then pull chicken off the bone into bite-size pieces. While the chicken is roasting, heat a skillet oven medium-low heat. Add olive oil and onions, cooking until soft, about 5 minutes. Add in brown sugar and cook, stirring occasionally, until caramely. Remove from heat.
  • In a large bowl, mix together softened cream cheese, ranch dressing, 1/3 cup of the BBQ sauce, onions and half of the cheddar cheese. Fold in chicken.
  • In a casserole or baking dish (mine was 8-inch round, 4-inch deep), layer the cream cheese mixture, smoothing the top off. Cover it with the remaining BBQ sauce, then the remaining cheese. Bake for 20-25 minutes, until bubbly and hot. Serve with crackers or chips.

3 cups diced boneless skinless chicken breasts
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese
2 cups KRAFT Shredded Three Cheese with a TOUCH OF PHILADELPHIA
1 cup hot sauce
1/4 cup KRAFT Sweet & Spicy Barbecue Sauce
2 Tbsp. KRAFT Classic Ranch Dressing
1/4 cup canned jalapeño pepper slices
tortilla chips

Steps:

  • Add all ingredients except peppers and chips to a slow cooker.
  • Stir ingredients until mixed well.
  • Cook on low for 3 hours or on high for 1 hour.
  • Stir mixture well and transfer to a serving dish. Top with jalapeño pepper .
  • Serve with tortilla chips.

1/4 teaspoon cayenne pepper
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon chili powder
salt & pepper
2 lbs chicken leg quarters
1/4 cup honey

Steps:

  • Combine cayenne pepper, paprika, garlic powder, chili powder, salt and pepper together.
  • Rub the chicken with honey and then sprinkle with the spice mixture, being sure that the chicken is well-coated.
  • Place chicken into a covered container, and refrigerate for at least 30 minutes.
  • Preheat oven to 350F degrees.
  • Place chicken thighs on a baking tray.
  • Bake for about 45-55 minutes, ensuring the chicken is completely cooked.

This BBQ sauce packs a powerful punch of vitamins and antioxidants from the mango, raisins and sundried tomatoes. Try it with grilled pork chops too.

2 cups plus 2 tablespoons lowfat plain yogurt
2 cups frozen mango chunks
3 tablespoons honey
1/4 cup plus 1 tablespoon apple cider vinegar
1/4 cup golden raisins
2 tablespoons olive oil, plus more for brushing
1/4 teaspoon cayenne pepper
5 sun-dried tomatoes (not packed in oil)
2 small cloves garlic, finely chopped
4 ears corn, shucked
8 boneless, skinless chicken thighs, trimmed (about 1 1/2 pounds)
Kosher salt
6 cups mixed salad greens
2 medium carrots, thinly sliced

Steps:

  • To make the smoothies, combine 2 cups of the yogurt, 2 cups ice, 1 cup of the mango and all of the honey in a blender, and blend until very smooth. Divide among four glasses and refrigerate until ready to serve. Rinse out the blender.
  • Preheat the grill to medium-high heat. Combine the remaining 1 cup mango, 1/4 cup water, 1/4 cup of the vinegar, the raisins, olive oil, cayenne, tomatoes and garlic in a microwave-safe bowl. Cover with a piece of plastic wrap and microwave until the tomatoes are soft, about 3 minutes. Let cool slightly and puree in a blender. Transfer to a small bowl. Set aside 2 tablespoons for the dressing, the rest will be used for tossing with the chicken.
  • Place the corn on the grill, cover and cook, turning as needed, until nicely charred, about 10 minutes. Remove and keep warm.
  • Turn the grill down to medium and brush the grates with some of the oil. Toss the chicken thighs with half of the remaining sauce and 1/2 teaspoon salt. Arrange on the grill and cook until nicely marked and the internal temperature registers 170 degrees F on an instant-read thermometer, 8 to10 minutes per side. Baste a few times with the remaining sauce while grilling.
  • While the chicken cooks, whisk together the remaining 2 tablespoons yogurt, the reserved 2 tablespoons sauce, the remaining 1 tablespoon vinegar, 1 tablespoon water and 1/4 teaspoon salt in a large bowl. Toss the mixed greens and carrots together. Divide the chicken, corn and salad among four dinner plates. Drizzle the greens with the reserved dressing. Serve each plate with a mango smoothie.

I came up with this dip when I was in the mood for Buffalo chicken dip, but didn't have the necessary ingredients. It is a creamy cheesy dip with a nice bit of back-end heat. I don't usually measure when I cook, so feel free to adjust any measurements to fit your taste. We ate this with sliced french bread, pretzels, and chips.

1 teaspoon olive oil
¼ sweet onion, cut into small dice
1 stalk celery, cut into small dice
1 (5 ounce) can chicken chunks, shredded
½ teaspoon granulated garlic

¼ cup chicken broth
¼ (1 pound) package processed cheese food (such as Velveeta®), cut into cubes
2 tablespoons blue cheese salad dressing

Steps:

  • Heat olive oil in a saucepan over medium heat; cook and stir sweet onion and celery in hot oil until translucent, 5 to 7 minutes. Add chicken, granulated garlic, and seasoned salt; continue cooking until chicken is warmed, about 3 minutes.
  • Stir cream cheese, chicken broth, and processed cheese food into the chicken mixture. Reduce heat to low, place a cover on the saucepan, and cook until the cheeses are melted, about 5 minutes.
