A Chinese take-out staple, hot and sour soup is super easy to create at home - and comes together in just 15 minutes. This weeknight version bolsters the traditional mushrooms and tofu with the addition of store-bought pork dumplings, but you could just as easily use chicken or vegetable dumplings, depending on your preference. Cornstarch gives the broth its velvety texture, vinegar adds verve, and white pepper adds subtle complexity, though black pepper is a perfectly fine substitute. Adjust the seasoning with extra soy sauce, ginger and vinegar for a more assertive soup.

3 tablespoons safflower or canola oil
8 ounces fresh shiitake mushrooms, stemmed and thinly sliced (about 3 cups)
2 tablespoons minced fresh ginger
Kosher salt and pepper
8 cups low-sodium chicken broth
6 ounces firm tofu, cut into matchsticks (1 cup)
1/3 cup low-sodium soy sauce
2 ounces drained canned, sliced bamboo shoots, cut into matchsticks (1/3 cup)
1/4 teaspoon ground white pepper (optional), plus more to taste
12 frozen pork gyoza or potsticker dumplings (about 8 ounces)
1/4 cup cornstarch
3 tablespoons distilled white vinegar
Thinly sliced scallions and fresh chiles (such as red Fresno or jalapeño), for garnish

Steps:

  • In a large saucepan, heat oil over medium. Add mushrooms and ginger and season with salt and pepper. Cook until softened, stirring occasionally, about 3 minutes. Stir in broth, tofu, soy sauce, bamboo shoots and white pepper, if using, and bring to a boil over high. Add dumplings and simmer over medium heat until dumplings are cooked through, about 5 minutes.
  • In a small bowl, whisk cornstarch with 1/4 cup water to form a slurry. Add slurry and vinegar to saucepan and simmer until slightly thickened, about 2 minutes. Season with salt and more white pepper, if desired.
  • Divide soup among bowls and garnish with scallions and chiles. Serve hot.

1/2 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons extra virgin olive oil, separated
3 tablespoons unsalted butter, separated
2 1/2 pounds beef chuck cut into 2″ cubes
2 cups onion, chopped
2 tablespoons garlic, chopped
2 tablespoons tomato paste
1/2 cup red wine
3 quarts beef stock
1 quart water
2 bay leaves
2 teaspoons dried thyme
1 teaspoon paprika
1 tablespoon Worcestershire sauce
1 teaspoon granulated sugar
4 cups carrots, peeled and cut into bite-sized pieces (1 1/2 pounds)
4 cups russet potatoes, peeled and cut into bite sized pieces (1 1/2 pounds)
1/2 pound green beans, trimmed and quartered
2 10-ounce packages pearl onions, *see below for instructions
1/4 cup fresh flat leaf parsley chopped
1 cup frozen green peas, thawed
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon granulated sugar
1/2 teaspoon kosher salt
1 teaspoon dried thyme
2 tablespoons unsalted butter
3/4 cup whole milk

Steps:

  • Mix flour, salt and pepper together in a bowl. Dredge beef cubes in flour and remove, shaking off excess flour.
  • Over medium high heat, melt one tablespoon of butter and one tablespoon of oil in 6-quart heavy bottomed stock pot or Dutch oven until slightly brown and frothy. Place half of the beef in the hot fat making sure that meat pieces do not touch each other. Sear two minutes per side. Remove from pan and heat another tablespoon of butter and oil then cook the second half of the meat. Remove meat from pan when done and set aside. Total time to sear all the meat is 15 minutes.
  • Turn heat to medium and add the remaining butter and olive oil to the pan. Add in chopped onions and cook three minutes. Add chopped garlic and cook for one more minute. Add tomato paste and cook for an additional minute.
  • Add in red wine to deglaze pan, scraping up any brown bits from bottom.
  • Add browned beef cubes, stock, water, bay leaf, thyme, paprika, Worcestershire sauce and sugar. Bring to a boil then turn heat down to a simmer and cover pot with lid slightly ajar. Simmer for 2 ½ hours or until beef is tender, adjusting water as needed. If all of the liquid does not fit, set some aside and add later as the liquid in the pan evaporates. Either way, check at the two hour mark and if needed, add more liquid. We used exactly four quarts of liquid (Three quarts beef stock and one quart of water).
  • After 2 1/2 hours, add in carrots, potatoes, green beans, pearl onions and parsley and simmer for 15 minutes or until vegetables are tender.
  • While vegetables are cooking, prepare dumpling batter as follows: Sift flour, baking powder and sugar together. Add salt and thyme into the bowl and then cut in butter with a fork until pieces are rice size. Add milk and stir with spoon until mixed.
  • Add green peas to stew, adjust seasoning and turn heat to low. Remove and discard bay leaves.
  • Drop heaping tablespoons of dumpling batter into stew until all batter is used. (Do NOT just pour the dumpling batter in all at once.) Cover and cook 15 minutes without lifting the lid. Check and if they are not puffed up enough, cook for another minute or two covered. Ours took exactly 15 minutes .
  • Serve bowls of stew with dumplings on top.

½ pumpkin - peeled, seeded, and cut into 2-inch cubes
1 small onion, chopped

½ teaspoon ground black pepper
12 pitted prunes
2 tablespoons vinegar
2 tablespoons sugar

Steps:

  • Heat 1 tablespoon oil in skillet over medium high heat. Add pumpkin and saute until light golden brown, about 5 minutes
  • Heat 2 tablespoons oil in a stock pot over medium high heat. Add onions and garlic and saute over medium-high heat until golden, about 5 minutes. Stir in tumeric. Add beef and saute until brown, about 5 minutes. Add water, salt, and pepper; bring to a boil, reduce heat, and simmer until beef is slightly tender, about 30 minutes.
  • Stir pumkin, prunes, vinegar, sugar, salt, and cinnamon to stock pot and simmer until beef and pumpkin are tender, about 45 minutes. Garnish with saffron.

A recipe from my childhood; Mom found it in a Better Homes and Gardens recipe book from 1977. I prefer the crockpot method, but if you don't have one, you can make this on the stove. There is a note in the cookbook that says she used this recipe to make pot roast in the Crockpot as well.

1 1/2 lbs beef stew meat, cut in 1-inch cubes
2 tablespoons cooking oil
2 medium carrots, shredded (1 cup)
2 medium onions, sliced (1 cup)
1 (8 ounce) can tomato sauce
1/2 cup water
1/4 cup packed brown sugar
1/4 cup vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1 tablespoon cold water
2 teaspoons cornstarch
6 ounces whole wheat egg noodles
poppy seed (optional)

Steps:

  • Brown meat, half at a time, in hot oil.
  • (If cooking on stove top add the next 8 ingredients (carrots through salt). Cover and cook over low heat for 1½ hours or till meat is tender.)
  • If using Crockpot, drain and transfer meat to Crockpot.
  • Add shredded carrot, sliced onion, tomato sauce, ½ cup water, brown sugar, vinegar, Worcestershire and salt. Stir.
  • Cook on high for 6-8 hours.
  • For both stove top and Crockpot methods, at the end of the cooking time add the blended cornstarch and water. Cook and stir until thickened.
  • Cook noodles according to package directions. Serve stew over noodles sprinkled with poppy seed (if using).

1 tbsp rapeseed oil
2 medium onions, chopped
2 bay leaves
4 thyme sprigs, plus extra leaves to serve
550g chunks of lean braising steak
100ml red wine
1 ½ tbsp plain flour
1 tsp English mustard powder
230g can plum tomatoes
500ml vegetable bouillon
280g carrots, halved lengthways and sliced
400g piece butternut squash, deseeded, peeled and cut into 3-4cm/11/4-11/2in chunks
140g chestnut mushrooms, quartered or halved if large
140g self-raising flour
½ tsp English mustard powder
2 spring onions, ends trimmed, finely chopped
3 tbsp chopped parsley
2 tbsp rapeseed oil
100ml buttermilk

Steps:

  • Heat the oil in a large saucepan or deep sauté pan. Tip in the onions, bay leaves and thyme sprigs, and fry over a medium heat for about 8 mins, stirring often, until the onions are turning golden. Raise the heat, add the steak and stir-fry briefly until it starts to lose its raw, red colour. Pour in the wine, stir to deglaze the brown sticky bits from the bottom of the pan, and let it bubble briefly. Lower the heat, sprinkle in the flour and mustard powder, and stir for 1 min. The meat should now be coated in a thick, rich sauce.
  • Mix in the tomatoes, stirring to break them down. Stir in the stock and bring to the boil. Tip in the carrots, squash and mushrooms, lower the heat, cover with a lid and leave to simmer gently for 1 hr 40 mins, stirring occasionally. Uncover and cook for a further 20 mins, still on a gentle simmer, until the meat is very tender. Season with pepper.
  • When the stew is nearly cooked, heat oven to 190C/170C fan/gas 5. Put a 2.25-litre casserole dish in to heat it up. Meanwhile, make the dumplings. Put the flour, mustard powder, some pepper and a pinch of salt in a bowl, then stir in the spring onions and parsley. Mix the oil and buttermilk together and gently stir into the flour. Add a drop or two of cold water, if needed, to pick up any dry bits on the bottom of the bowl, and stir to make a soft and slightly sticky dough. Be as light-handed as you can, as overmixing or overhandling will toughen the dumplings. Cut the dough into 8 pieces and very lightly shape each into a small, rough ball.
  • Carefully transfer the stew to the hot casserole dish and remove the bay leaves and thyme sprigs. Sit the dumplings on top and press them down into the gravy to very slightly submerge. Put the dish on a baking sheet and cook for about 20 mins until the dumplings have risen and are golden on top. Serve with a light scattering of thyme leaves.

1 large red onion , finely sliced
250g bag diced butternut squash and sweet potato
400g can chopped tomatoes
2 x 400g cans chilli black beans or chilli kidney beans
3 tbsp chipotle chilli paste
125g self-raising flour
60g unsalted butter , cubed
70g mature cheddar , grated
1 large green jalapeño , finely sliced (optional)

Steps:

  • Heat a glug of vegetable oil in a large flameproof casserole over a medium heat. Add the onion and a pinch of salt and cook for 7 mins until softened. Tip in the squash and sweet potato and fry for a few minutes before adding the tomatoes, beans and 250ml water. Stir through the chipotle paste and season to taste. Pop a lid on the dish and gently simmer over a low to medium heat for 25 mins or until reduced and the sweet potato is soft.
  • Heat the oven to 200C/180C fan/ gas 6. Mix the flour with ½ tsp salt. Add the butter and rub together with your fingers until the mixture resembles fine breadcrumbs. Stir in the grated cheddar then quickly mix in 4 tbsp cold water. Roll the mixture into eight balls. Put the dumplings on top of the stew and place, uncovered, in the oven for 15-20 mins, or until puffed up and light golden brown. Serve the stew with the sliced jalapeño scattered on top, if you like.

6 carrots, cut in 1-inch pieces

Steps:

  • Place chicken, carrots, celery,onion, boullion cubes or granules, salt, and pepper in stock pot or dutch oven with enough water to cover.
  • Bring to boil, lower heat, simmer 3 hours covered.
  • Remove chicken, cool enough to handle, then strip meat from bones.
  • Remove veggies.
  • At this point, make dumplings:.
  • Mix 1 1/2 cups flour,baking powder,3/4 t. salt, and thyme together.
  • Mix sour cream, 3/4 cup milk and oil together.
  • Fold sour cream mix into flour mix. Beat by hand until thoroughly mixed. Set aside.
  • Bring broth to boil.
  • Mix 1/2 cup flour, 1 cup milk and Kitchen Bouquet; add to boiling broth.,.
  • Cook, whisking constantly, until thick and bubbly.
  • Return chicken meat and veggies to broth.
  • Drop dumpling mix by serving-spoonfuls on simmering stew.
  • Cover tightly, cook 20 minutes without lifting cover.
  • Pick will come out clean when dumplings are done.

1/2 cup apple cider vinegar
2 onions, sliced
2 carrots, sliced
2 bay leaves
1 teaspoon whole allspice
1 teaspoon mustard seeds
3 whole cloves
2 tablespoons black peppercorns
1 tablespoon sugar
1 tablespoon salt
4 cups plain well-mashed potatoes made from peeled red potatoes
flour
3/4 teaspoon baking powder
1 egg
salt
3 1/2 lbs beef round steak (cut into 1 1/2 in thick slices or left whole, see notes)
1 tablespoon canola oil
8 gingersnaps, broken into pieces

Steps:

  • WARNING: This part has to be done the day before you want to serve. Stir together all of the marinade ingredients in a nonreactive bowl. Place the roast in a nonreactive container (or large ziplock bag) and marinate overnight. The day before is also a good time to make the gingersnaps if, like me, you are using homemade.
  • The next day: Remove the meat and pour the marinade in the slow cooker. In a large skillet, quickly brown all sides of the meat in the canola oil. Add the meat into the slow cooker and turn on low for 6 hours.
  • During the last hour or so of cooking time: Start to make the dumplings. Bring a large pot of water to a rolling boil. In a large bowl, combine the cooled mashed potatoes and salt and the egg. Stir in the baking powder and add the flour in 1/2 cup increments until the it resembles a dough and the mixture holds its shape when molded (roughly 3 cups). Form into 2 to 4 inch balls. They should be able to hold their shape but not be too floury. Drop them into the water. They should sink, then rise to the surface when cooked through. Set aside.
  • During the last 1/2 hour of cooking time: Skim off any visible fat that may have risen to the top then add the gingersnaps and turn the heat to high.
  • After the time is up, shred the meat a bit with a fork or break it into pieces. Serve hot, with dumplings on the side.

  • Combine flour, 1 tsp salt and pepper in a plastic bag. Add meat, shake to coat.
  • In a dutch oven brown meat well in hot oil.

  • Stir into browned meat, add onion and carrots.
  • Cover and cook over low heat for approx 2-3 hours, stirring occasionally until meat and carrots are tender.

I adapted this recipe from a now out of print Sunset cookbook, Cooking for Two. I used to buy it and a good chef's knife as a bridal shower present years ago for every wedding. This makes a generous two servings, and can be easily increased.

1/2 teaspoon salt (original recipe uses 1 tsp)
1 dash pepper
1 lb boneless lean lamb stew meat or 1 lb beef chuck, cut in 1 in. cubes
1 1/2 tablespoons butter
1/4 cup catsup
2 tablespoons packed brown sugar
2 tablespoons red wine vinegar
1 1/2 teaspoons Worcestershire sauce
1/2 cup water
6 small white boiling onions, peeled
2 large carrots, peeled and cut in 1 in. chunks
chopped parsley

Steps:

  • Combine flour, 1/2 teaspoons salt, and pepper. Dredge meat pieces in flour, shaking off excess.
  • In a deep 3 to 4 quart pan, melt butter over medium-high heat; add meat and brown well on all sides. Do in batches if necessary. Drain off and discard excess fat.
  • Return meat to pan with any accumulated juices. Combine catsup, brown sugar, vinegar, Worcestershire, water and remaining 1/2 teaspoons salt; add to meat. Add onion and simmer, covered, for 1 hour and 15 minutes, stirring once or twice. Check liquid level and add water, as needed.
  • Add carrots and cook for about 40 minutes longer or until meat and vegetables are fork tender. Check liquid level and add water, as needed. Sprinkle with parsley and serve.
  • Note: You can use olive oil instead of or with the butter. Balsamic vinegar is an OK sub for the wine vinegar, but the wine vinegar gives a better "sour". I often will cut up a medium onion into wedges instead of using boiling onions.
