1 egg
¼ teaspoon baking soda
¼ teaspoon salt
2 cups all-purpose flour, divided
4 skinless, boneless chicken breasts, cut into cubes
vegetable oil for frying
4 tablespoons cornstarch
3 tablespoons water
1 cup white sugar
½ cup ketchup
½ cup white vinegar
½ cup water
½ cup orange marmalade
½ cup chopped fresh pineapple
2 tablespoons pineapple juice
2 teaspoons soy sauce
1 ½ teaspoons minced fresh ginger root
1 teaspoon minced garlic
¼ teaspoon red pepper flakes

Steps:

  • Beat ice water and egg together in a bowl using a whisk or a fork. Add baking soda and salt and mix to combine. Add 1 cup flour to water mixture; mix until blended but lumpy.
  • Place remaining 1 cup flour in a separate bowl. Cover each piece of chicken in flour, then move to egg mixture and cover, letting excess batter drip off.
  • Heat vegetable oil in a wok or large, deep frying pan over medium heat until a drop of water crackles when placed into oil.
  • Place chicken into the hot oil and fry, flipping if needed, until no longer pink in the center and golden brown, 3 to 4 minutes. Set aside and keep warm.
  • Combine cornstarch and 3 tablespoons water in a small bowl.
  • Combine sugar, ketchup, vinegar, 1/2 cup water, orange marmalade, pineapple, pineapple juice, soy sauce, ginger, garlic, and red pepper flakes in a medium saucepan. Bring to a boil; add cornstarch mixture. Reduce heat and let simmer, stirring frequently, until desired thickness is reached.
  • Pour sauce over chicken and serve.

1 broiler/fryer chicken (3 to 4 pounds), cut up and skin removed
2/3 cup orange marmalade
2/3 cup barbecue sauce

Hot cooked rice or rice noodles, optional

Steps:

  • Place flour in a dish or bowl; add chicken, a few pieces at a time, tossing to coat. Place in a 3-qt. slow cooker., In a small bowl, combine the orange marmalade, barbecue sauce, soy sauce and ginger; pour over chicken. Cover and cook on low until chicken juices run clear, 6-8 hours. Serve with rice or noodles if desired. Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little broth or water if necessary.

1 1/4 lbs boneless skinless chicken thighs, trimmed of excess fat (4-5 medium thighs)
1 tablespoon Splenda brown sugar blend
1/4 cup orange juice
1/4 cup soy sauce
1 teaspoon hot sauce
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 cup orange marmalade (reduced sugar or no sugar added are OK)
2 tablespoons rice vinegar
2 tablespoons reserved marinade
1 teaspoon cornstarch
1 teaspoon cold water

Steps:

  • Put chicken, juice, Splenda, soy sauce, hot sauce, pepper and garlic powder in a zip-lock bag, seal, and shake to evenly coat the chicken with the marinade. Refrigerate for 30 minutes.
  • Remove the chicken from the marinade. Measure 2 tablespoons of marinade into a small saucepan and set aside. Grill or broil the chicken thighs for 4-5 minutes per side, until juices run clear. Transfer the chicken to a serving plate and set aside while you prepare the sauce.
  • Mix the cornstarch and water in a small bowl until the cornstarch is dissolved. Add the orange marmalade and rice vinegar to the marinade in the small saucepan and heat over medium-high heat until mixture is boiling. Reduce heat to medium and simmer for 1 minute. Add the cornstarch mixture and continue to cook, stirring constantly, until the sauce is thickened. Remove from heat and serve the sauce drizzled over the chicken thighs.

8 (5 ounce) bone-in, skin-on chicken thighs
2 teaspoons kosher salt
1 tablespoon olive oil
½ cup diced onion
1 pinch kosher salt
1 tablespoon white sugar
2 cloves garlic, minced
1 medium orange, zested
⅔ cup freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
2 cups chicken broth
1 pinch ground cinnamon
1 pinch cayenne pepper
⅛ teaspoon freshly ground black pepper
1 tablespoon caraway seeds
1 splash water, or as needed
1 teaspoon grated orange zest

Steps:

  • Generously season chicken thighs on both sides with 2 teaspoons kosher salt.
  • Heat olive oil in a large cast iron skillet over high heat. Add chicken, skin-side down, to the hot oil and sear until skin is golden brown and releases from the bottom of the skillet, 4 to 5 minutes. Turn and sear on the other side for 3 to 4 minutes. Turn off the heat and remove chicken to a plate. Drain fat from the skillet and reserve for another use.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place the skillet back on the stove. Add onion, a pinch of kosher salt, and sugar. Turn heat to medium-high; cook and stir until onion turns translucent and sugar starts to caramelize on the bottom, 3 to 4 minutes. Add garlic; cook and stir until fragrant, about 30 seconds, being careful not to burn.
  • Add orange zest, orange juice, lemon juice, and chicken broth. Increase heat to high, and stir in cinnamon, cayenne, and black pepper. Stir occasionally and bring to a boil. Boil until liquids are reduced by half, 2 to 3 minutes.
  • Turn off the heat and transfer chicken and any accumulated juices back into the skillet; make sure the skin is facing up. Baste chicken with the liquid and sprinkle caraway seeds over top.
  • Cover and bake in the center of the preheated oven for 1 hour. Remove from the oven, remove the lid, and baste chicken.
  • Return to the oven and bake, uncovered, until no longer pink at the bone and the juices run clear, about 20 more minutes, adding a splash of water if the liquid dries out. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Remove from the oven and baste again. Garnish with grated orange zest and serve.

2/3 pound boneless skinless chicken breasts
2 tablespoons soy sauce
1 tablespoon shao hsing wine or dry sherry
2 teaspoons cornstarch
2 teaspoons vegetable oil
COOKING:
2 tablespoons oil
1/2 cup sliced water chestnuts
1/3 cup sweet and sour sauce
1/4 teaspoon crushed red pepper
1 can mandarin oranges - (11 oz) drained
3 green onions cut 2" slivers

Steps:

  • Combine marinade ingredients in a medium bowl. Remove skin from chicken and cut meat into bite-sized pieces. Place in the bowl with the marinade and set aside. Place a wok or large skillet over high heat until hot. Add oil, swirling to coat sides of pan. Add chicken; stir-fry for 2 minutes or until chicken turns opaque. Add water chestnuts, sweet and sour sauce and crushed red pepper; cook for 1 minute. Gently stir in half of the mandarin oranges and half of the green onions. Transfer to a serving platter. Garnish with remaining mandarin oranges and green onions. This recipe yields 2 servings.

1 cup fresh pineapple chunks or 1 cup canned pineapple chunk
1 cup green onion, cut into pieces
1 cup green pepper strip
1/2 cup jicama, cut into pieces
1/4 cup brown sugar
4 teaspoons cornstarch
1/4 cup red wine vinegar
1/2 cup fresh pineapple juice or 1/2 cup canned pineapple juice
1 teaspoon soy sauce
1/8 teaspoon red hot pepper sauce

Steps:

  • Cut chicken; set aside. Prepare pineapple, onion, green pepper and jicama; set aside. Combine brown sugar and corn- starch, stir in vinegar, pineapple juice, soy sauce, pepper sauce and salt to taste; set aside. In a 2 quart glass casserole dish put chicken pieces.
  • Microwave on High for 5 to 6 minutes stirring every 2 minutes until chicken is done. Add vinegar mixture and cook on High for 4 minutes, stirring every 2 minutes.
  • When sauce is clear and boiling, add pineapple, onion, green pepper and jicama; mix well.
  • Cook 1 to 2 minutes until vegetables are desired doneness.
