SWEET AND SOUR GERMAN RED CABBAGE
Steps:
- Sauté the cabbage: Melt the butter in a large pot over medium heat. Add the thinly sliced red cabbage and toss to coat with the butter. Sauté until slightly wilted, about 5 minutes.
- Add the sugar and vinegar, simmer: Sprinkle sugar over the cabbage and toss to coat evenly. Add the balsamic vinegar to the pot. Bring to a simmer, then reduce the heat to medium low. Cover and simmer until the cabbage is completely tender but not mushy. Stir often, about 30 to 45 minutes total.
- Season: Season to taste with salt and pepper.

SWEET AND SOUR GERMAN GREEN CABBAGE RECIPE, HEALTHY VEGAN SIDE DISH

- The first thing you need to do is add oil and onions into a quite large pot. Fry the onions for about five minutes until they are soft and start to caramelize just a bit.
- Next, add the salt to soften the onions, pepper, and bay leaf to enhance the flavors. To get most out of cumin flavor, fry it together with the onions. We are actually making sort of a paste here, which will be a base for the cabbage.
- Next is garlic. It would be best if you didn't fry the garlic for a long time. It is enough just to smell the aroma of the garlic after you put it in - that's after a few seconds.Now comes the sweet in the cabbage part, so add the sugar. You should just slightly caramelize it for about a minute and not brown it.The sweetness of the paprika and tomatoes will add the aroma and color. Cook all these ingredients for about 15 minutes, so you get a nice and smooth paste and then add shredded cabbage.
- First, you need to coat the cabbage with a paste. There is quite a lot of cabbage at the beginning, but after you sauté it for a few minutes, the cabbage will shrink, and you will be able to mix everything easily. To help the cabbage sauté, just add about half a cup of water, cover the pot with a lid and let it sauté for a few minutes. Then add the flour, mix a bit and sauté for a minute or two. Then comes the parsley, another mix, about 2 cups of water and another mix. Cover it with a lid and cook on low to medium temperature until the cabbage is soft, that's about 20 minutes to half an hour, mixing a few times in between.
- This dish goes perfectly together with mashed potatoes, or you can eat it for the main course.

BOHEMIAN SWEET AND SOUR CABBAGE
This recipe is so old it could be considered "antique." It was my Grandmother's recipe. When I prepared it, I was an adult but it definitely rang childhood memory bells. I did remember the delicious taste. My Grandmother wrote out this recipe as I am reproducing it and on the recipe she noted that this dish is good with roast pork or pork chops, dumplings and applesauce. An excellent meal from Central Europe! (Bread dumplings are now available in the freezer section of the supermarket.)

Steps:
- Brown the onion in the shortening, only to a golden color. Do not brown.
- Add the water, vinegar, sugar, salt and pepper. Bring the liquid to a boil. (This liquid is just enough for this size cabbage.).
- Put cabbage in; sprinkle with caraway seed if you wish.
- Boil for 1/2 hour.
- Sprinkle with flour. Stir it up and boil just a few seconds for the flour to dissolve.
- Grandmother notes that you shouldn't "put cooked cabbage in the freezer -- just in box." (Box is the old-time short way of saying "icebox" -- we would say refrigerator!).
SWEET AND SOUR RED CABBAGE
Steps:
- In a 12-inch skillet, saute the shallots and garlic in the butter over medium heat for 1 minute, until golden brown. Add the shredded cabbage. Add the wine to deglaze the pan, loosening any browned bits on the bottom of the pan with a wooden spoon. Stir in the vinegar and sugar. Season with salt and pepper to taste. Increase the heat to high and bring to a boil, stirring constantly to prevent the sugar from burning. Reduce the heat and simmer about 10 minutes, until the liquid is reduced by 3/4.
VEGETARIAN SWEET AND SOUR CABBAGE SOUP
Modified from the NY Times by ofallytasty.com, who adapted it from The National. I put my spin on it by using vegetable broth, and adjusting some of the measurements. If you have smoked salt, by all means sprinkle some over the soup when you serve it.

Steps:
- Heat oil in a large pot over medium heat; add garlic and cook until soft.
- Add the onion and sauté until transluscent.
- Add 3 c vegetable broth, carrots, tomatoes and purée, tomato paste, ketchup, sugar and the bay leaf.
- Bring to a boil then reduce to a simmer and cook for 10 minutes.
- Crush the whole tomatoes and continue to simmer until carrots are tender (10 more minutes).
- Discard bay leaf and, using an immersion blender, blend until slightly chunky (this step is not necessary, texture is good).
- Add lemon juice and cabbage and remaining 3 cups vegetable broth (there will be a LOT of cabbage, but it will cook down).
- Again, bring to a boil, then reduce heat and simmer until the cabbage is done however you like it (1 hour for al dente,2 hours for soft, or anywhere in between).
- Add 3-6 cups water, until the soup reaches your desired consistency.
- Add the raisins 10 minutes before serving.
- Season with salt and pepper.
- Serve with sour cream.

- Stir in the flour and then the vinegar and water.

- Cook cabbage in water for 8-10 minutes; drain.
- Fry bacon and remove from pan; Add onion and saute until limp, 3-5 minutes.
- Add sugar and flour to bacon fat; blend until smooth.
- Add water, vinegar, and seasonings; cook until thick.
- Add diced bacon, and cabbage.
- Heat through.
- If bland, add more salt, sugar, or vinegar, whichever is needed.
