STUFFED MUSHROOM EYEBALLS



Stuffed Mushroom Eyeballs image

All eyes on this spooky Halloween appetizer! These mushrooms are packed with a garlic-cream cheese filling and topped with sun-dried tomato strips and sliced black olives. The key is to really scoop out the mushrooms and not overfill the caps for a festive snack worth a second look.

1 1/2 pounds white mushrooms (about 28)
8 ounces cream cheese, at room temperature
1 cup shredded sharp white Cheddar (about 2 ounces)
2 small cloves garlic, grated
Kosher salt and freshly ground white pepper
Sun-dried tomatoes (not packed in oil), for decorating
Sliced canned black olives, for decorating

Steps:

  • Preheat the oven to 400 degrees F; line 2 baking sheets with parchment.
  • Remove the stems from the mushrooms and reserve for another use. Use a melon baller or 1/4-teaspoon measuring spoon to scoop out any remaining stems and gills from inside the mushroom caps. You want to create a large enough cavity to fit 1 1/2 to 2 teaspoons of filling.
  • Combine the cream cheese, Cheddar, garlic, 1/4 teaspoon salt and a few grinds of white pepper in a large bowl. Transfer the mixture to a piping bag.
  • Arrange the mushroom caps on the prepared baking sheets. Pipe 1 1/2 to 2 teaspoons of the filling into each mushroom cavity and smooth the tops with a small offset spatula. (The filling will rise as it bakes, so it should not be higher than the opening of the mushroom cavity.)
  • Cut the sun-dried tomatoes into thin strips, trimming as needed to fit the mushrooms. Top each mushroom with a few strips (they look more like veins if you scrunch them before placing them on the filling). Place an olive slice in the center of each mushroom and press into the filling to adhere.
  • Bake until the mushrooms are tender and the filling has risen slightly, 15 to 17 minutes. (If any of the olives slide during baking, move them back into place when they come out of the oven.) Let cool slightly before serving.

This is a recipe my mom made for years and years. I've made it for parties as well as when I've had company over for supper. Everyone loves these meatballs. These meatballs are made without the addition of pineapple.

1 lb ground beef
Worcestershire sauce, to taste
3 tablespoons breadcrumbs
oregano, to taste
1 egg, slightly beaten
salt and pepper, to taste
1 clove garlic, minced
2 tablespoons vegetable oil
1 tablespoon vegetable oil
1/2 cup onion, chopped
3/4 cup brown sugar, packed
2 tablespoons vinegar
1 teaspoon lemon juice
1 cup ketchup
2 tablespoons soya sauce

Steps:

  • For meatballs: Mix all ingredients (minus oil) together. Form into balls. Fry in oil until golden then place on paper towel to drain. Set aside
  • For Sauce: In medium saucepan, fry onion in oil until tender. Add all other sauce ingredients and simmer 20 minutes. Add meatballs and cook 1 hour on medium. Serve and Enjoy!
  • *You can also place browned meatballs and sauce mix into crock pot.

Edible Eyeballs image

2 small packets yellow Jell-O gelatin
1 1/4 cups boiling water
24 blueberries

Steps:

  • Pour boiling water over the gelatin and stir to dissolve completely. Pour the mixture into ice cube trays with rounded bottoms (you should be able to fill 2 trays). Refrigerate until partially set, about 20 minutes. Push the blueberry eyeballs into the partially set gelatin and refrigerate until thoroughly set. Dip the ice cube tray in warm water for 15 to 30 seconds and run a knife around the edges of each ice cube. Turn the "eyes" out on a serving plate and refrigerate until serving time.

WHITE CHOCOLATE ZOMBIE EYEBALLS



White Chocolate Zombie Eyeballs image

6 ounces white chocolate
1 teaspoon green-tinted cocoa butter
1 teaspoon red-tinted cocoa butter
6 ounces dark chocolate
6 ounces milk chocolate
10 ounces heavy cream
1 teaspoon dark espresso syrup

Steps:

  • Temper the white chocolate and green and red cocoa butter separately. With a small paint brush, paint the green and red tempered cocoa butter into small rounds in chocolate molds to resemble an eyeball. Pour the tempered white chocolate into the chocolate molds. Invert and let the white chocolate pour out to 1/8 thickness. Let set for 20 minutes.
  • For the truffle filling: Place the dark and milk chocolate in a 1-quart mixing bowl. In a small saucepot, bring the heavy cream to a simmer, and then pour over the chocolate. Add the espresso syrup, stir until smooth and let cool for 20 minutes. Place the cooled chocolate-espresso filling into a small pastry bag and fill each of the lined chocolate molds. Place the filled truffle eyeballs into the freezer for 10 minutes.
  • Remove the filled truffle eyeballs from the freezer, remove from the chocolate molds and serve.

1/2 cup loosely packed brown sugar
1/2 cup rice wine vinegar
1/4 cup ketchup
1 tablespoon low-sodium soy sauce
2 1/4 cups pineapple juice
1 tablespoon cornstarch
One 25-count bag All-Purpose Meatballs (still frozen is fine), recipe follows
1 tablespoon sriracha hot sauce
1 cup drained small pineapple chunks
Steamed long-grain rice, for serving
2 tablespoons sliced green onions, for garnish
5 pounds ground beef
1 1/2 cups plain breadcrumbs
1/2 cup milk
1/4 cup heavy cream
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons grainy mustard
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
4 large eggs
2 tablespoons olive oil

Steps:

  • In a large skillet over medium-high heat, add the brown sugar, vinegar, ketchup, soy sauce and 2 cups of the pineapple juice. Bring to a boil.
  • Make a slurry by mixing the cornstarch into the remaining 1/4 cup pineapple juice, whisking to get out all the lumps. Whisk the slurry into the skillet and add the All-Purpose Meatballs. Bring to a simmer and add the sriracha. Cover and cook until the sauce is thickened and the meatballs are heated through, 8 to 10 minutes. Stir in the pineapple chunks.
  • Serve over steamed rice, garnished with green onions.
  • To make the meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, mustard, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. Place the meatballs onto parchment-lined baking sheets and put the baking sheets in the freezer for 5 to 10 minutes for the meatballs to firm up.
  • To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs in batches, making sure not to overcrowd the pot. Cook, turning the meatballs to make sure they brown all over, 5 to 7 minutes per batch. Drain on paper towels.
  • Freezer instructions: Put the cooked meatballs in a single layer on baking sheets and put into the freezer. When frozen, divide them into freezer bags, 25 per bag, and return them to the freezer. Yield: 125 meatballs.

AIR FRYER SWEET-AND-SOUR MEATBALLS

1/4 cup panko
3 tablespoons milk
1 large egg
1/2 onion, grated
1 tablespoon chopped fresh rosemary

1 cup lingonberry or red currant jam
1/2 cup sweet chili sauce
1/4 cup balsamic vinegar

Steps:

  • Make the meatballs: Preheat an air fryer to 375˚ F. Mix the ground beef, panko, milk, egg, onion, rosemary, salt and pepper in a large bowl until well combined. Roll the mixture into 24 to 26 two-inch meatballs.
  • Working in batches, arrange the meatballs in the air fryer basket. Cook until browned and cooked through, about 8 minutes.
  • Make the sauce: Whisk the jam, chili sauce and balsamic vinegar in a small saucepan. Cook over medium-high heat until thickened, 6 to 8 minutes. Toss the meatballs in the sauce.

1 lb italian sausage meat
1/2 cup Italian seasoned breadcrumbs
1 egg (slightly beaten)
3/4 cup ketchup
1/8 cup white vinegar
1/8 cup soy sauce
1/4 cup brown sugar

Steps:

  • Combine the sausage, bread crumbs and egg with your hands until well mixed and sticking together.
  • Form meatballs by hand and brown in a large skillet over Medium/High heat.
  • Pour sauce over meatballs and simmer over Medium/Low heat for about 30 minutes.
  • Note: You will need to add a little water to the sauce as it cooks to avoid it getting too dry.
  • Serve over rice or just eat them plain!
