2 Tblsp vegetable oil
2 large onions, chopped
3 cloves garlic, chopped
1 lb. ground beef
1 lb. beef sirloin, cubed
14 oz can diced tomatoes, with juice
1 bottle dark beer
1 cup strong black coffee
2 6oz cans of tomato paste
1 14 oz can beef broth (2 - 3 cups)
1/2 cup brown sugar
1 Tblsp ground cumin
1 Tblsp cocoa powder
1 tsp dried oregano
1 tsp ground cayenne pepper
1 tsp ground coriander
1 tsp salt
3 cans black beans
1 -2 fresh jalepenos, chopped
sirloin marinade:
1/3 cup soy sauce
1/3 cup vegetable oil
2 garlic cloves, chopped
1 Tblsp brown sugar
1 Tblsp ketchup
2 tsp ground cumin

Steps:

  • On the night before the game, combine marinade ingredients in a glass bowl and marinate sirloin cubes overnight. One hour before kick off: Heat vegetable oil in a large pot until smoking. Add chopped onions and heat until soft. Add garlic and ground beef, cook until beef is browned. Remove ground beef and onions and set aside (you'll put them back in the pot in the next step). Drain sirloin of marinade and cook until well browned. Here's the fun part: Add everything (except beans) -- ground beef, onions, garlic, diced tomatoes with juice, beer, coffee, tomato paste, beef broth, brown sugar, cumin, cocoa powder, oregano, cayenne pepper, ground coriander, salt, and jalapenos. Cook on medium heat, covered, until the start of the second quarter At the start of the second quarter: Add black beans and cook on low until half time. Serve with beer, tortilla chips and sour cream.

6 large garlic cloves, minced
3 lbs ground beef
5 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon dried basil
3 bay leaves
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
2 mild jalapenos, seeds & ribs removed and chopped finely
1 (28 ounce) can crushed tomatoes in puree
1 (14 1/2 ounce) can low sodium chicken broth
1 (12 ounce) bottle beer
1 (6 ounce) can tomato paste
1/2 cup barbecue sauce
1 (15 ounce) can beans in chili sauce

Steps:

  • Heat oil in large Dutch oven over medium-high heat. Add onions and garlic. Sauté until onions are soft and lightly browned, about 8 minutes. Add beef and sauté until browned, about 5 minute Add chili powder, cumin, basil, bay leaves, oregano and thyme. Stir 2 minutes. Mix in jalapeños, tomatoes, broth, beer, tomato paste, and barbecue sauce. Bring to a boil and then reduce heat to a simmer. Let simmer until thickened to desired consistency, stirring occasionally to reincorporate the ingredients, about 1 hour and 15 minute Mix in the beans and heat an additional 5 minutes.

This rich thick chili is suprisingly healthy using ground turkey (and no one needs to know)!!!! The basis of this recipe came from Bon Apetit 1996/Epicurious. I have made my own changes and used this recipe for 5yrs...potlucks, game nights, blizzards... Ofcourse you can use ground beef/venison, different types of beans, but do not be afraid of the amount of garlic, it mellows out during the cooking.

1 1/2 cups onions, diced
8 garlic cloves, diced
3 lbs ground turkey
6 tablespoons chili powder
2 tablespoons cumin
2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon dried thyme
2 teaspoons cayenne pepper (omit for mild)
1 (28 ounce) can crushed tomatoes in puree
1 (14 1/2 ounce) can low sodium chicken broth
12 ounces beer (Shiner Bock or other med dark beer)
1 (6 ounce) can tomato paste
1 (15 ounce) can kidney beans
1 (15 ounce) can black beans
1 (15 ounce) can chili beans
1 ounce bittersweet chocolate (optional)
1 tablespoon cornmeal (optional if you need to thicken it up at the end)
1 (4 ounce) can chipotle peppers (optional)

Steps:

  • Dice onion and garlic.
  • Heat oil in heavy large Dutch oven over medium heat.
  • Add onions and garlic.
  • Saute until onions are translucent, about 8min.
  • Add turkey and brown.
  • When 1/2 browned add chili powder, cumin, basil, oregano and thyme.
  • Stir 2 minutes.
  • Mix in crushed tomatoes, chicken broth, beer and tomato paste.
  • Simmer 2hrs until thickened to desired consistency, stiring occasionally to prevent sticking.
  • Mix in beans (not drained).
  • Simmer 5 minutes.
  • Season with salt and pepper to taste.
  • Best prepared day before and refrigerated to allow flavors to come together.
  • Serve with diced onion, extra sharp cheddar cheese and cornbread.

Great for game day - start simmering this hearty chili In the morning and it'll be prime for halftime. I usually serve it with grated cheese, chopped onion, sour cream, hot sauce, and corn chips.

2 lbs pork sirloin chops (cut into 1/2 inch cubes)
1 lb ground pork
2 poblano peppers (diced) or 2 green pasilla chiles (diced)
2 large onions (diced)
salt and pepper
28 ounces canned diced tomatoes
16 ounces salsa (medium spicy)
10 ounces condensed tomato soup
15 ounces canned red beans
15 ounces canned kidney beans
4 ounces diced green chilies
1 cup red wine
1 cup water
3 tablespoons chili powder
1 1/2 tablespoons oregano
1 1/2 tablespoons garlic powder
1 teaspoon cumin
2 teaspoons black pepper
hot sauce

Steps:

  • Salt and pepper the meat liberally, then saute diced pork and ground pork with the onions and peppers in batches.
  • Add all remaining ingredients and bring to a boil.
  • Reduce heat and simmer covered for 2 hours, stirring occasionally.
  • Add additional chili powder and/or hot sauce to taste.
  • Continue simmering uncovered on low heat for 1 hour to thicken.

3/4 cup chopped onions

1 1/2 pounds ground chuck
1 1/2 teaspoons ground cumin
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1 can 14-oz can crushed tomatoes with added puree
6 ounces beer
1/2 can 6oz can tomato paste

Steps:

  • Heat oil in heavy large Dutch oven over medium-high heat. Add onions and garlic. Sauté until onions are translucent, about 8 minutes. Add chuck and sauté until brown, breaking up meat with back of spoon, about 5 minutes. Add chili powder, cumin, basil, oregano and thyme. Stir 2 minutes. Mix in crushed tomatoes, chicken broth, beer and tomato paste. Simmer until thickened to desired consistency, stirring occasionally to prevent sticking, about 1 hour 15 minutes. Mix in beans. Simmer 5 minutes. Season to taste with salt and pepper. (Can be prepared 3 days ahead. Refrigerate until cold, then cover. Rewarm over low heat before serving.)
