Another variation to my tangy style BBQ sauce, I do like this sweet style sauce on ribs, pulled pork or even drizzled lightly on my pulled pork pizza just before it goes into the oven.

- Gently heat water, soy sauce, sugar & BBQ rub in a pan, whisking gently until sugar melts.
- Add ketchup & liquid smoke & whisk until well combined.
- Cool & chill until you need it.

Steps:
- Combine all ingredients, except for the ketchup in a large, deep, saucepan. Cook uncovered, until all ingredients are disolved about 5 minutes.
- Add ketchup and bring to a boil stirring constantly so it doesn't splatter.
- Add salt and pepper to taste.
- Reduce heat slightly and simmer uncovered until dark, thick and richly flavored about 30 minutes, stirring often.
- Use right away or transfer to jars, cover and cool to room temp and refrigerate. Sauce will keep for several months.

The sauce will keep for several months in the fridge.

- Mix vinegar, brown sugar, molasses, honey, Worcestershire sauce, rum, mustard, liquid smoke, ground chile, black pepper, garlic powder, and allspice together in a heavy saucepan over medium heat. - Combine tomatoes, onion, and garlic in a large stock pot and bring to a boil; lower heat and simmer 30 minutes or until vegetables are very soft. Working in batches, puree vegetables until smooth with Harvest Pro food mill or in the bowl of a food processor.
- Return tomato mixture to the pot and add remaining ingredients, bring to a boil over high heat, stirring frequently. Lower heat and simmer until thickened and darker in color, about 1½-2 hours, stirring occasionally to prevent scorching.
- Prepare boiling water canner while sauce is cooking. Heat jars in simmering water until ready to use. Do not boil. Wash lids in warm soapy water and set aside with bands.
- Ladle hot BBQ sauce into a hot jar leaving a ½-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band; adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
- Process jars for 20 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal. They should not flex when center is pressed.

SMOKEY BBQ SAUCE
I have developed this sauce over a few years. The flavors develope a richer more flavorful sauce over the next day or so in the fridge. I always have everything on hand and takes no time to make. I keep an extra bottle in the fridge. If you want spicier, you can add some chopped jalapeno, or onion.
