SWEET PEPPER CHICKEN
Sweet Pepper Chicken - quick and easy chicken stir-fry with mini sweet peppers, in a savory and sweet sauce made with Thai sweet chili sauce and oyster sauce. So delicious!

- Slice and remove the top part of the mini sweet peppers. Cut lengthwise into halves to remove the seeds inside of the peppers. Cut into wedges. Set aside.
- Mix all the ingredients in the Sauce together, stir to mix well. Set aside.
- Season the chicken with salt and ground black pepper. Heat up a wok or skillet over high heat and add 1 tablespoon of the oil. When the oil is heated, add the chicken and cook until both sides of the chicken slightly brown. Dish out and set aside.
- In the same work or skillet, add the remaining oil. Add the garlic and stir fry until aromatic. Add the mini sweet peppers, stir and toss continuously, about 10 seconds. Add the sauce into the wok or skillet, stir to combine well with the mini sweet peppers. Transfer the chicken back into the wok, stir a few times to blend well. Turn off the heat and serve immediately.

- In a large skillet, brown chicken in oil on both sides. Transfer to a 5-qt. slow cooker. Top with mushrooms, onion and peppers. Combine the soups; pour over vegetables., Cover and cook on low for 4-5 hours or until a thermometer reads 170°. Serve with rice.

CHICKEN STIR-FRY WITH MIXED PEPPERS
I used green peppers only for this stir-fry. Try to use a mix of hot and sweet peppers, and feel free to use red, yellow or orange ones if you want to introduce some color. The chicken is "velveted" before stir-frying; a good name for this technique as the texture of the chicken remains velvety and moist after stir-frying.

- In a large bowl stir together the egg white, cornstarch, 1 1/2 teaspoons of the rice wine or sherry, salt to taste and 1 1/2 teaspoons water. When you can no longer see any cornstarch add the chicken and stir together until coated. Cover the bowl and place in the refrigerator for 30 minutes.
- Combine the remaining rice wine or sherry, the hoisin sauce, soy sauce, and sugar in a small bowl and set it near your wok.
- Fill a medium-size saucepan with water and bring to a boil. Add 1 tablespoon of the oil and turn the heat down so that the water is at a bare simmer. Carefully add the chicken to the water, stirring so that the pieces don't clump. Cook until the chicken turns opaque on the surface but is not cooked through, about 1 minute. Drain in a colander set over a bowl.
- Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Add the remaining oil by pouring it down the sides of the pan and swirling the pan, then add the garlic, ginger and chile and stir-fry for no more than 10 seconds. Add the peppers and stir-fry for 1 minute. Add the chicken, cashews and hoisin sauce mixture and salt to taste. Stir-fry for 1 to 2 minutes, until the chicken is cooked through, and serve with grains or noodles.

Steps:
- Core the peppers and slice into thin rings.
- Heat 1 tbsp oil with 1 tsp salt and fry the peppers for 1 minute.
- Add 2 tbsp water and bring to a boil.
- Cover and simmer for 2 minutes.
- Drain and set aside.
- Cut the chicken into 1" pieces.
- Mince or finely grate the ginger.
- Fry the ginger and chicken in 2 tbsp oil until barely cooked.
- Add the sugar and sherry.
- Mix the cornstarch and soya sauce to make a paste, add to the pan and stir until slightly thickened.
- Add the peppers and stir to coat.
- Cook for a minute.
- Serve with fried rice.

- Cut chicken thighs into 1 inch cubes. Pat chicken dry and set aside. Grab three bowls. In the first bowl, whisk eggs. In the second bowl, add cornstarch. In the third, add flour, salt and black pepper. Toss the chicken into the cornstarch and fully coat. Next, drench chicken in egg and lastly coat in flour mixture.
- Heat a large skillet over medium-high heat and add 3 tbsp oil. Carefully add the chicken to the hot skillet and let cook for about 4-5 minutes until bottoms begin to golden and crisp up. Be sure to break chicken apart if sticking together. Flip chicken over and continue to cook until golden, about 4-5 minutes. Remove chicken from skillet and set aside.
- For the sauce: Mix rice wine vinegar, soy sauce, sesame oil, sambal oelek, minced garlic, jalapeno, ketchup and brown sugar.
- Heat the same skillet you cooked the chicken in to medium-high heat and pour in the sauce. Let sauce slightly simmer then add the chicken back to the skillet and toss to fully coat. Serve immediately with steamed rice and sprinkle with chopped green onions (optional).
