SWEET AND FEISTY BLACK PEPPER AND ORANGE KUGEL



Sweet and Feisty Black Pepper and Orange Kugel image

Normally, a Jerusalem-style kugel is made with noodles and is sweet and peppery at the same time. The orange juice in this recipe adds a great touch, makes it very special.

oil, for greasing the pan
12 ounces fettuccine pasta
1/2 cup sugar
1/2 cup orange juice
2 whole eggs
3 egg whites
1 -1 1/4 teaspoon black pepper (freshly ground recommended)
1/4 cup oil

Steps:

  • Preheat the oven to 350 degrees.
  • (Make ahead directions supplied below in which case don't pre-heat.) Coat a 13" X 9" baking dish with oil.
  • Cook fettucine to the al dente stage.
  • Meanwhile, combine orange juice and sugar in a small saucepan and bring to a boil, stirring constantly.
  • Cook, stirring, over high heat for about 8 minutes, or until the mixture has an aroma and the edges just begin to turn golden.
  • (A line drawn across the sauce with a spoon should take to the count of four to completely fill in.) Combine eggs and egg whites, and beat lightly with a fork.
  • Stir in the black pepper and oil and set aside.
  • (If your timing is right, the noodles should be done now.).
  • Drain the noodles, put them in the baking dish and stir in the caramelized orange sauce.
  • (If the sauce has thickened beyond pouring stage, warm it, stirring, over low heat until it liquifies.) Let the noodle mixture cool for 5 minutes, then stir in the egg mixture.
  • (The dish can be made in advance to this point. Let it cool. Cover with plastic wrap, then with foil and freeze. The night before you serve it, remove the foil and transfer the frozen dish to the refrigerator.) If necessary, remove plastic wrap.
  • Cover the baking dish with foil, poking a few holes in it to let the steam escape.
  • Bake the freshly made or thawed kugel in a preheated oven for 1 hour.
  • Note: If you prefer a more sedate dish, cut the pepper back to less than a teaspoon.

This is my mom's recipe for a traditional Eastern European nonsweet kugel - or "kigel" which is how my her side of the family pronounced it. (I didn't know kugels could be sweet until I was a teen.) It's easy comfort food.

5 eggs, beaten
1 tablespoon schmaltz or 1 tablespoon margarine
salt (if using margarine, you may replace the salt with some powdered chicken soup to add more flavor)

  • Preheat oven to 350.
  • Mix all ingredients together.
  • Put in greased or Pam'd 13 inch square pan.
  • Bake about 1 hour or until set.

Kugel, a traditional Jewish noodle custard dish, is a mainstay of Jewish holiday meals. Defined as a baked pudding or casserole (usually from noodles or potatoes) this one is my own version of kugel, which is adapted from a few recipes to make one that we really love. This is a rich and sweet kugel although they also come in a savory version.

1 (12 ounce) bag egg noodles
1 (16 ounce) container sour cream
12 ounces farmer cheese
1 cup white sugar
1 cup unsalted butter, melted and cooled
6 large eggs, beaten
1 large apple - peeled, cored, and diced
¼ cup golden raisins, or to taste
½ teaspoon ground cinnamon, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13-inch baking pan.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain and set aside.
  • While noodles are cooking, mix sour cream, cheese, sugar, and butter together in a large bowl. Add eggs, apple, and raisins. Add drained egg noodles and cinnamon; stir until well combined. Pour into the prepared pan.
  • Bake in the preheated oven until slightly golden brown and custard has set, about 1 hour. Cool for 10 to 15 minutes before serving.

1/2 cup currants
1 1/3 cups sour cream
1 1/3 cups cottage cheese
3 large eggs
1/2 cup sugar
5 tablespoons unsalted butter, melted
1 tablespoon freshly grated orange zest
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 pound wide egg noodles
1 large Granny Smith apple
1/3 cup sliced blanched almonds

Steps:

  • In a small bowl soak currants in hot water to cover 5 minutes and drain well.
  • In a blender blend together sour cream, cottage cheese, eggs, 1/4 cup plus 2 tablespoons sugar, 3 tablespoons butter, zest, vanilla, 1/4 teaspoon cinnamon, and salt until smooth.
  • Preheat oven to 350°F. and butter a 2-quart gratin dish or other shallow baking dish.
  • In a kettle of salted boiling water cook noodles until just tender, about 5 minutes, and drain well. Peel apple and grate coarse into a bowl. Add noodles and toss with sour cream mixture and currants. Transfer mixture to prepared dish.
  • In a small bowl stir together remaining 2 tablespoons sugar, remaining 1/4 teaspoon cinnamon, and almonds and sprinkle evenly over kugel. Drizzle top with remaining 2 tablespoons melted butter.
  • Bake kugel in middle of oven 40 to 45 minutes, or until cooked through and golden.
