- Place the Jell-O and 1/2 cup boiling water in a medium-size bowl. Stir until the Jell-O is dissolved, and then chill until it's thickened, but not completely set; set aside. Whip the cream cheese in the bowl of an electric mixer with the whip attachment until fluffy. Add the Jell-O and continue whipping until smooth. Fold in the whipped topping. Add the pecans, 1/2 cup coconut, oranges, marshmallows, cherries, kiwi, grapes, pineapple, and apple. Fold all the ingredients together and place the salad in a serving dish. Top with the remaining coconut.

- In a large bowl, combine sweetened condensed milk, sour cream & lime juice; mix well. Stir in the remaining ingredients (except cherries & nuts); cover & chill at least 3 hours or overnight. To prevent cherries from "bleeding", fold them gently into the salad just before serving, and top with chopped nuts if desired.
- Salad may also be frozen and served like ice cream.

- Position an oven rack in the center of the oven and preheat to 350 degrees F.
- Spread the pecans on a small baking sheet and bake, stirring once halfway through, until lightly browned and toasted, 6 to 8 minutes. Transfer the pecans to a medium bowl and cool completely.
- Whip the heavy cream in a medium bowl with an electric mixer to stiff peaks. Stir in the sour cream by hand until combined. Stir in the marshmallows, pineapple and coconut. Gently fold in the mandarin oranges. Cover with plastic wrap and refrigerate until chilled, at least 2 hours and up to overnight.
- Right before serving, roughly chop the pecans. Fold the pecans and maraschino cherries into the ambrosia salad. Transfer to a serving bowl and serve immediately.

This recipe is from the "Betty Crocker New Picture Cook Book" that I received as a wedding present in 1964. This book is so used the front cover is now missing and pages have many happy stains. This is our favorite Ambrosia Salad served at our Holiday meals.

This is a great fruit salad that doesn't need in season fruit! It is pretty and I have served it for brunches. If you use a little of the maraschino juice, it is a pink color. I got this recipe online when I was searching for an easy and different fruit salad.
