This is a delicious treat that I prepare every Christmas to include in my candy assortments that I give as gifts. They're absolutely delicious and people are constantly asking for the recipe.

Ingredients

¼ cup margarine
⅔ cup white sugar
1 egg, beaten
1 (8 ounce) package dates, pitted and finely chopped
1 teaspoon vanilla extract
2 cups crispy rice cereal
¾ cup walnuts, finely chopped
1 cup sweetened flaked coconut

Steps:

Combine the margarine, sugar, egg, and dates in a saucepan. Cook over medium heat until thick, about 7 to 10 minutes. Remove from heat; stir in vanilla.
Combine the crispy rice cereal and the walnuts in a large bowl. Stir in the date mixture; mix well.
Working quickly, form the cereal and date mixture into 1 inch balls. Roll balls in coconut. Store in an airtight container in a cool place. Do not refrigerate.

Ingredients

1 1/4 cups sugar
1 free-range egg
1 1/2 teaspoons almond extract
2/3 cup milk
1 1/4 cups flour
1/2 teaspoon baking powder
1/8 teaspoon cinnamon
8 tablespoons butter, melted

Steps:

Preheat oven to 350°F Beat sugar, egg, almond extract and milk together. Add flour and baking powder, then cinnamon, finally adding the butter.
Spray baking dish (approx. 10" by 7") with spray oil or any non-stick coating. Bake at 350 degrees for 50 minutes or until skewer or toothpick comes out clean when inserted into the middle.
Cool for 20 minutes, then remove from pan.
When ready to serve dust with icing sugar and cut cake into slices approximately 1" by 3.5".

Ingredients

1 cup vegan margarine, room temperature (recipe's author uses Earth Balance)
1/2 cup confectioners' sugar
1 tablespoon water
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup pecans, chopped

Steps:

Cream earth balance vegan margarine with 1/4 cup powdered sugar, add water and vanilla and mix.
Add flour and mix well.
Finally mix in pecans. (The batter will appear dry!).
Form into 1-inch diameter balls, place on an ungreased cookie sheet and chill for one hour.
Bake in a slow oven (roughly 300 degrees Fahrenheit) for 20 minutes or until lightly browned.
While still hot, roll in remaining confectioners' sugar.
Store in an airtight container.
