BUTTER SPRITZ COOKIES

One of the most iconic of holiday sweets, spritz are bite-size buttery cookies with vanilla and almond.

Number Of Ingredients 8

2 sticks (8 ounces) unsalted butter
1 cup confectioners' sugar
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract
1 large egg
2 1/4 cups all-purpose flour
1 teaspoon baking powder
Sprinkles for garnish

Steps:

  • Preheat the oven to 350 degrees F. Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy, about 5 minutes. Add the vanilla and almond extracts and the egg and mix to incorporate; don't worry if the mixture seems to separate.
  • Sift together the flour and baking powder and add to the creamed butter. Mix until combined. Using a cookie press, press the cookies onto ungreased baking sheets. Top with sprinkles of your choice. Bake until firm but not yet browning, 6 to 8 minutes. After a few minutes, move cookies to a rack and cool.

1 cup butter, softened
2/3 cup sugar
1 large egg, room temperature
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon baking powder
Prepared frosting, assorted sprinkles and decorating sugars

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and extracts. Combine the flour and baking powder; gradually add to the creamed mixture., Using a cookie press fitted with the disk of your choice, press dough 1 in. apart onto ungreased baking sheets. Bake at 350° until edges are firm and lightly browned, 12-13 minutes. Remove to wire racks to cool. Frost and decorate as desired.

1 cup butter, softened
1 cup white sugar
1 egg
1 ½ teaspoons almond extract
1 pinch salt
1 ¼ cups all-purpose flour

Steps:

  • Combine butter or margarine, sugar, egg, almond extract, and salt. Cream together well. Add 1 1/4 cup sifted flour. Mix thoroughly.
  • Place dough in cookie press, and make long strips. Place on cookie sheet that has been lightly sprayed with oil.
  • Bake at 350 degrees F (175 degrees C) . Check at eight minutes. It will take at least ten minutes to cook. Bake until slightly brown. Cut into two or three inch cookies as soon as taken from the oven. If baked on an air bake cookie sheet, cooking will take a few minutes longer.

1 egg yolk
1 teaspoon almond extract
2 ½ cups all-purpose flour

Steps:

  • In a large bowl, beat butter and sugar with an electric mixer on medium speed until fluffy.
  • Add egg yolk and almond extract; beat well. Beat or stir in flour.
  • Force the unchilled dough through a cookie press onto ungreased cookie sheets.
  • Bake in a 375 degree F oven for 8 to 10 minutes or until edges are firm, but not brown.
  • Cool the baked cookies on wire racks. Makes about 60 cookies.

2 cups butter
1 cup white sugar
2 egg yolks
1 egg white
2 tablespoons almond extract
4 ½ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • Beat butter with an electric mixer in a large bowl until light and fluffy. Slowly add sugar while beating until the mixture should be noticeably lighter in color. Add the egg yolks one at a time, allowing the first to blend into the butter mixture before adding the other. Beat egg white and almond extract into the mixture. Pour the flour in small amounts into the mixture while beating; continue beating until fully incorporated.
  • Using a cookie press, press dough onto prepared baking sheet.
  • Bake in the preheated oven until the edges are golden, 8 to 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

1 1/2 cups butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 teaspoon almond extract
4 cups sifted all-purpose flour
1 teaspoon baking powder

Steps:

  • Thoroughly Cream the Butter and Sugar.
  • Add the Egg the Vanilla and Almond Extract.
  • Beat Well.
  • Sift the flour and baking powder together.
  • Add to the creamed mixture, mix until smooth.
  • Do not chill.
  • DO NOT DOUBLE.
  • Force Cookies through a cookie press onto an ungreased cookie sheet.
  • Decorate the cookies with redhots, sprinkles or whatever you like.
  • Bake in a 400 oven for 8-10 minutes.
  • Cool on newspaper.
  • These freeze well but shouldnt be left out for more than a week or so.
