Recipe for Swedish Meatballs. Juicy and tender meatballs with a rich gravy sauce. Serve the meatballs over mashed potatoes, pure comfort food. This recipe makes 24 meatballs.

1 lb lean ground beef ((10%-15% fat))
1 lb ground pork
1 small onion (grated on star side of box grater)
2 garlic cloves (minced)
1 large egg
1/3 cup panko crumbs
1/4 cup whole milk
½ tsp salt
¼ tsp ground black pepper
¼ tsp ground allspice
¼ tsp ground nutmeg
2 Tbsp olive oil ((cooking oil), or as needed)
4 Tbsp unsalted butter
3 cups regular beef broth
1 cup heavy whipping cream
3 Tbsp all-purpose flour
½ tsp Dijon mustard
salt and pepper, to taste

Steps:

  • In a bowl combine the panko crumbs with milk. Add remaining ingredients for the meatballs and mix well. Shape into 24 meatballs.
  • Add 2 Tbsp oil to a large skillet over medium heat. Once hot, cook meatballs in 2 batches until golden brown and cooked through (6-7 minutes), turning as needed. Add more oil as needed. Remove from the skillet and cover to keep warm.
  • In the same skillet, melt the butter. Quickly whisk in the flour and cook until golden.
  • Stir in the broth, heavy whipping cream, Dijon and season with salt and pepper to taste. Bring the sauce to a simmer and cook it thickens.
  • Add back the meatballs and toss in the gravy sauce. Cook until meatballs are heated through.

Meatballs:
1 tablespoon butter
1/2 large yellow or white onion, peeled, grated (use the large holes of a box cheese grater)
1/4 cup milk
3 slices of bread, crusts removed, bread cut into cubes (2 cups of cubed bread)
1 large egg
3/4 pound ground beef
1/2 pound ground pork
1 teaspoon kosher salt
1 teaspoon black pepper
1/2 teaspoon freshly ground nutmeg
1/2 teaspoon ground cardamom
Sauce:
3 tablespoons butter
3 tablespoons flour
2 cups beef stock
1/4 cup sour cream (use full-fat sour cream or the sauce may curdle)
Salt and pepper to taste
2 tablespoons Lingonberry, red currant, raspberry or cranberry jelly, less or more to taste (optional)

Steps:

  • Stir in the sour cream and optional jelly: Remove the pan from heat and stir in the sour cream. If you are including jelly, either stir it in now or serve it on the side. Taste for seasonings and add more salt and pepper to taste. (I use about 1/2 teaspoon of kosher salt, and 1/4 teaspoon of pepper.)

1 tablespoon soy sauce

1 pound ground beef
½ pound ground pork
½ cup chopped onion
¾ cup bread crumbs
1 egg
½ cup milk
1 tablespoon dried parsley
1 tablespoon Worcestershire sauce
2 teaspoons salt

¼ cup vegetable oil
¼ cup all-purpose flour
1 teaspoon paprika
1 tablespoon salt
1 teaspoon pepper
2 cups boiling water
¾ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine ground beef, ground pork, chopped onion, bread crumbs, egg, and milk. Season with parsley, Worcestershire sauce, 2 teaspoons salt, and 1 teaspoon pepper. Mix well with your hands. Shape into walnut-size balls, and place on baking dish.
  • Bake for 30 minutes in preheated oven. Turn frequently so they brown evenly on all sides.
  • To make the sauce: In a saucepan, combine oil, flour, paprika, 1 tablespoon salt, and 1 teaspoon pepper. Cook over medium heat until sizzling. Stir in hot water and sour cream until smooth and heated through.
  • When meatballs have cooked 30 minutes, pour sauce over the top, and return to the oven for 20 minutes, stirring occasionally.

1 slice fresh white bread
1/8 cup skim milk
1 1/2 tablespoons butter, melted and divided
1/4 cup onion, finely chopped
1/8 cup fresh parsley, snipped
1/2 teaspoon kosher salt
1 lb lean ground beef
1/8 cup Egg Beaters egg substitute
1/4 teaspoon black pepper
1/8 teaspoon ground allspice
1/8 teaspoon nutmeg, freshly grated
1/8 cup flour
1 cup mushroom, sliced
1 1/2 cups low sodium beef broth
1/8 cup skim milk

Steps:

  • Preheat oven to 350 degrees F.
  • Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
  • In a 12-inch saute pan over medium heat, melt 1 tbls of butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.
  • In a bowl, combine the bread and milk mixture, ground beef, eggbeaters, 1 tsp Kosher salt, black pepper, allspice, parsley, numeg, and onions. Mix by hand until well combined.
  • Using your hands, roll mixture into meatballs.
  • Bake at 350 degrees F. in ungreased shallow baking pan for 15 - 20 minutes. Remove with a slotted spoon and drain well.
  • Use some of the meatball juices in the saute pan, over low heat, add flour to the pan and whisk until lightly browned, approximately 1 - 2 minutes. Gradually add teh beef stock and mushrooms and whisk until the sauce thickens. Add the milk and continue to cook until the gravey reaches the desired consistency.
  • Serve meatballs and gravy over noodles of choice.

This is my mom's Swedish meatball recipe. This isn't the kind a lot of people are used to in a creamy white sauce. She served them every Christmas Eve in a chafing dish as part of the 'Smörgåsbord.' My mom used to have a vegetable sour cream and a lingonberry sauce on the table for those that might want to dip these in something.

1 tablespoon butter
1 tablespoon minced onion
⅓ cup fine dry bread crumbs
½ cup water
½ cup half-and-half
¾ pound ground beef
¼ pound ground pork
2 teaspoons salt
¼ teaspoon ground white pepper
⅓ teaspoon white sugar
3 tablespoons butter

Steps:

  • Melt 1 tablespoon butter in a frying pan over low heat; cook and stir onion in melted butter until lightly browned, 5 to 8 minutes.
  • Mix bread crumbs, water, and half-and-half in a large bowl; let stand for about 2 minutes. Stir cooked onion, ground beef, ground pork, salt, white pepper, and sugar into bread crumb mixture until thoroughly mixed. Shape mixture into about 48 very small meatballs.
  • Melt 3 tablespoons butter in a skillet; add meatballs. Brown slowly, allowing about 25 minutes, until meatballs are fully cooked in the middle and no longer pink. Shake pan occasionally to cook evenly.

400g lean pork mince
1 egg, beaten
1 small onion, finely chopped or grated
85g fresh white breadcrumbs
1 tbsp finely chopped dill, plus extra to serve
1tbsp each olive oil and butter
2 tbsp plain flour
400ml hot beef stock (from a cube is fine)

Steps:

  • In a bowl, mix the mince with the egg, onion, breadcrumbs, dill and seasoning. Form into small meatballs about the size of walnuts - you should get about 20.
  • Heat the olive oil in a large non-stick frying pan and brown the meatballs. You may have to do this in 2 batches. Remove from pan, melt the butter, then sprinkle over the flour and stir well. Cook for 2 mins, then slowly whisk in the stock. Keep whisking until it is a thick gravy, then return the meatballs to the pan and heat through. Sprinkle with dill and serve with cranberry jelly, greens and mash.

  • In a small bowl, soak the white bread in the heavy cream. Heat 1 tablespoon butter in a skillet over medium heat. Add the onion and the garlic; sauté for 5 minutes until softened. Add the soaked bread and the cooked onion / garlic mixture to the bowl of a food processor. Pulse for 10-15 seconds until mostly smooth.
  • Add your bread / garlic / onion mixture to a large bowl with the remaining meatball ingredients. Mix well. Roll into meatballs.

  • Gravy time! Wipe the skillet out so it’s clean. Melt the butter. Whisk in the flour; sauté for 2-3 minutes. Add the beef broth, slowly, stirring after each addition. Gradually a smooth sauce should start to form. Stir in the sour cream and season with Worcestershire sauce and extra salt.
