This is a flaky bar-type treat that my mom made many times when I was a kid. It is a tasty almond-flavored treat that is nice at Christmastime!

Number Of Ingredients 12

1 cup all-purpose flour
½ cup butter
1 tablespoon water, or as needed
1 cup water
½ cup butter
1 cup all-purpose flour
3 eggs
1 teaspoon almond extract
1 cup confectioners' sugar
1 tablespoon heavy cream
1 tablespoon butter, softened
1 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To make the dough cut 1/2 cup butter into 1 cup flour using a knife or pastry blender. Add water as needed and mix until crumbly, leaving pea-sized chunks. On a floured surface roll the dough out to 3 or 4 inches in width. Place on a rectangular cookie sheet.
  • In a small saucepan over high heat, bring 1 cup water and 1/2 cup butter to a boil. Remove from heat and stir in flour; mix until smooth. Beat in eggs one at a time, mixing well after each. Stir in 1 teaspoon almond extract. Spread filling over dough.
  • Bake in preheated oven for 55 to 60 minutes. The pastry will fall a little as it cools.
  • Meanwhile, combine confectioners' sugar, cream, 1 tablespoon butter and 1 teaspoon almond extract. Spread icing over pastry as soon as it's removed from the oven.

I found this in an old cookbook of my Swedish neighbor. I remember her making these at Christmas time.

2 cups flour
1/2 cup wheat germ
1 teaspoon ground cardamom
1 teaspoon salt
1/2 cup sugar
4 teaspoons baking powder
1 teaspoon baking soda
1/2 cup chopped almonds
1/2 cup raisins
1 cup mixed glace fruit (your choosing)
2 eggs
1 cup buttermilk
1/2 cup butter, melted

Steps:

  • Combine all ingredients through the glazed fruit.
  • Whisk together, eggs, buttermilk and butter.
  • Add to dry ingredients.
  • Stir well.
  • Spoon in to greased muffin tins.
  • Bake 375 for 20 minutes.

Swedish yummy muffins; with the caraway butter or serve as an appetizer--with a spread of Swedish sweet mustard, a slice of Back Forest Ham and a hardy Farmers cheese slice; wrap in foil and bake about 15-18 minutes to slightly melt cheese.

1 1/2 teaspoons active dry yeast
1 1/2 teaspoons packed light brown sugar
1 cup warm water (105-115 F)
2/3 cup rye flour
1 3/4 cups all-purpose flour, plus
1 tablespoon all-purpose flour
1 1/2 teaspoons finely grated fresh orange zest
3/4 teaspoon salt
1/4 teaspoon anise seed
1/4 teaspoon ground cumin
3/4 teaspoon caraway seed
2 tablespoons unsalted butter, melted and cooled, plus additional for greasing
2 tablespoons molasses (not blackstrap)
vegetable oil, for greasing
1 large egg, lightly beaten, for egg wash
1/2 teaspoon flaky sea salt
4 ounces unsalted butter
1 tablespoon caraway seed

Steps:

  • Stir together yeast, brown sugar, and 1/4 cup warm water in a large bowl until yeast is dissolved.
  • Let stand until foamy, about 15 minutes. (If mixture doesn't foam, discard and start over with new yeast.).
  • Whisk together rye flour, 1 cup white flour, zest, salt, anise seeds, cumin, and 1/2 teas. caraway seeds.
  • Add flour mixture along with melted butter, molasses, and remaining 3/4 cup warm water to yeast mixture and beat with an electric mixer at medium speed 5 minutes.
  • Reduce speed to low and add 1/2 cup white flour, beating until combined.
  • Add remaining 1/4 cup plus 1 tablespoons white flour and beat until incorporated. (Dough will be very sticky.)
  • Scrape down dough from side of bowl with a rubber spatula and let rise, bowl covered tightly with plastic wrap, in a draft-free place at warm room temperature until doubled in bulk, about 1 1/2 hours.
  • Put oven rack in middle position and preheat oven to 350°F
  • Butter muffin pans.
  • Stir down dough (it will be too sticky to punch down).
  • Divide dough evenly among 24 muffin cups, about a rounded tablespoon per cup. (Grease tablespoon with oil as necessary to prevent sticking.)
  • Let dough rest, uncovered, in a draft-free place at warm room temperature 30 minutes.
  • Gently brush tops of muffins with some of egg wash, then sprinkle with sea salt and remaining 1/4 teaspoon caraway seeds.
  • Bake until muffins are puffed and a wooden pick inserted into center comes out clean, 25 to 35 minutes.
  • Turn out muffins onto a rack and cool to warm or room temperature.
  • Serve with Caraway Butter or as suggested in description.

Make these zesty, spiced muffins ahead of Christmas Day, then begin the festivities by handing them out while everyone opens their gifts under the tree

125g unsalted butter
250g self-raising flour
1 tsp bicarbonate of soda
200g golden caster sugar
2 tsp cinnamon
¼ nutmeg, freshly grated
150g natural yogurt
1 tsp vanilla extract
2 medium eggs
1 orange, zested and juiced
150g chocolate (white, milk or dark), chopped
50g dried cranberries
50g icing sugar
2 tbsp pearl sugar (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and line a 12-hole muffin tray with paper muffin cases.
  • Melt the butter in the microwave or a small pan over a low heat, then set aside to cool for 10 mins. Meanwhile, mix the flour, bicarb, sugar, cinnamon and nutmeg in a large bowl with a pinch of salt.
  • Add the yogurt, vanilla and eggs to the cooled butter and mix well. Pour the wet ingredients into the dry ingredients along with the orange zest, chocolate and dried cranberries. Mix well until there are no pockets of flour.
  • Divide the mixture evenly between the paper cases, then bake for 30 mins until risen and golden. Check they're cooked by inserting a cocktail stick into the centre of one of the muffins (choose one in the centre of the tray). If any wet cake batter clings to the skewer, return to the oven for 5 mins.
  • Remove the muffins from the oven and leave to cool in the tin for at least 10 mins. Meanwhile, mix the icing sugar with enough of the orange juice to make a loose icing. Brush the orange glaze over each muffin, then sprinkle with a little pearl sugar, if using. Leave to cool before eating. Will keep in an airtight container for up to five days, or frozen for up to two months.
