THAI CHICKEN SOUP
This is a great Thai or maybe Chinese inspired soup that is very fresh with lots of flavours and is like a detox. So it's good for you and very refreshing. You have to slurp it to enjoy all the flavours!

Steps:
- Heat the vegetable oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened and lightly browned, about 8 minutes. Add the garlic and curry paste and cook, stirring, 1 to 2 minutes. Add the chicken broth, coconut milk and fish sauce; cover and bring to a boil.
- Add the bell peppers and noodles and simmer, uncovered, until the noodles are al dente, about 3 minutes. Add the chicken and simmer until just cooked through, about 3 more minutes. Stir in the lime juice and cilantro. Add more fish sauce and lime juice, if desired.

- *NOTE: swedes are known in US as rutabagas. I've also used yams/sweet potatoes, turnips and fingerlings in this recipe. ~fyi~.
- Feel free to use any single vegetable or a mixture of your favorites. Cookgirl says that a mixture of root vegetables is the way to go!
- Peel the root vegetables then chop up into golf-ball sized pieces, place in salted boiling water and cook until very tender.
- Drain in a colander.
- Place the vegetables back in the pan and mash with a potato masher.
- You can mash them as smooth or as chunky as you like. Season with salt and pepper, then enrich the flavor with extra virgin oil or butter, or both, to taste. (I prefer using both olive oil and butter.).
- Jamie continues to say: once cooked, the mashed vegetables can be kept warm in a bowl covered with kitchen foil over simmering water. This is handy when cooking for a dinner party -- (especially when timing is of utmost importance.).
PEA AND MINT SOUP
This is a simple, delicious soup that can be served either hot or cold. Adding ham is optional. Note the chopping of veggies in the ingredient section. Once everything is prepped, the soup comes together in a snap! This soup goes well with a nice piece of crusty bread...or toasted bread drizzled with a little bit of olive oil. - Pour the broth into a medium saucepan and heat until boiling.
- In a separate, large saucepan on medium heat, add 2 T. of olive oil.
- Add the prepped carrots, celery, onions and garlic and mix together. Put a lid on, slightly off center so some steam can escape. Cook this for about 10 minutes, until the carrots are tender but still holding their shape and the onions are golden.
- Add the boiling broth to the veggies.
- Add the peas.
- Stir and bring to a boil.
- Once boiling, bring the soup to a simmer. Simmer for about 10 minutes, until peas are softened.
- Take the pan off the heat and season with salt and pepper and add some mint leaves. *Jamie says to use a small bunch. I think this is a matter of personal taste, in terms of how much mint flavor you like to shine through. Start out small and increase until your taste buds are pleased! I added about half a bunch of chopped mint and thought it was enough for my tastes.
- Using an immersion blender (or blender), blend the soup until smooth. (If you are using a regular blender, do it in batches so the hot soup won't come out the top of your blender).
- Optional:.
- If you are using ham, chop it up into bite-size pieces and stir it into the blended soup.
- Heat the soup through before serving OR let it cool, store it in your fridge and eat it cold anytime you'd like!
CARROT AND SWEDE SOUP
Carrot and Swede Soup yum with lots of salt and pepper

- Place a large saucepan on medium heat with two tablespoons of oil. Add the chopped onion and cook for about five minutes, or until soft, and then add the chopped garlic and cook for a further 2 minutes.
- Add the chopped swede and carrots and cook for ten minutes, making sure to stir frequently, to avoid the vegetables being burnt.
- Add enough vegetable stock to cover the vegetables, and bring the liquid to the boil in the saucepan.
- Once the soup is boiling, reduce the heat and cook for a further 30 minutes, or until the vegetables are nice and soft.
- Once everything is cooked, blend the mixture either in a food processor or with a hand held blender - this will make the soup lovely and thick.
- Finally, season to taste, making sure to add salt, pepper and any other spices you like.

- Heat the sunflower in a deep saucepan over a medium heat. Add the onions and garlic and fry for 2-3 minutes until the onion is soft.
- Tip in the spices - the coriander powder, cumin powder, turmeric, chilli flakes and sugar. Stir the contents to evenly cover the onion.
- Add the swede, carrot and lentils to the pan. Pour over the stock and bring the soup to the boil. Then reduce the heat of the pan, cover, and simmer for 20 minutes or until the swede, carrot and lentils are nicely soft.
- Once the vegetables have cooked, blend about 1/2 of the soup using a hand blender or food processor. Combine the blended portion with the rest of the soup and heat through for a few minutes.
