SOUTHERN FRIED OKRA WITH CORNMEAL

Deep Fried Okra is a perfect Southern Side dish made with seasoned corn meal - golden brown, delicious and a great way to enjoy this uncommon and unique vegetable.

Number Of Ingredients 6

20 fresh okra stalks (cut into 1/4" pieces)
2 eggs
1 cup corn meal
1 teaspoon salt
1/2 teaspoon black pepper
vegetable oil for frying

Steps:

  • Cut Okra stalks down to 1/4th inch pieces. Discard ends.
  • Beat 2 eggs in a bowl and place cut pieces of okra directly into egg mixture. Mix well to evenly coat all pieces.
  • Let okra set for about 5 minutes while oil is heating up.
  • Heat at least 2-3" of oil in a saucepan until 375 degrees.
  • In a separate bowl, add corn meal, salt and pepper seasoning and mix well to combine.
  • Divide the okra (from the egg mixture) into fourths.
  • Add one fourth of the okra to the corn meal mixture and mix well to evenly coat all sides.
  • Place cornmeal covered okra into hot oil and fry until browned on both sides, about 3-5 minutes.
  • Carefully remove, drain on paper towels and repeat, frying okra in batches and draining. Sprinkle with additional kosher salt as pieces come out of hot oil.
  • Serve fried okra immediately while still warm.

1 cup chopped green pepper
1/2 cup chopped onion
3 tablespoons canola oil
2 cups fresh or frozen corn or 1 can (15-1/4 ounces) whole-kernel corn
1-1/2 cups sliced fresh or frozen okra
3 medium tomatoes, peeled and chopped (1-1/2 cups)
1 tablespoon tomato paste
1/4 teaspoon dried thyme
Salt to taste
1/4 teaspoon coarsely ground pepper
1/2 teaspoon hot pepper sauce, optional

Steps:

  • In a large skillet, saute green pepper and onion in oil until tender. Add corn and okra; cook over medium heat for 10 minutes, stirring occasionally. , Stir in the tomatoes, tomato paste, thyme, salt, pepper and, if desired, pepper sauce. Cover and simmer for 3-5 minutes, stirring occasionally.

1 medium onion, chopped
2 tablespoons butter
2 cups sliced fresh okra
3 to 4 medium tomatoes, peeled and chopped
2 cups frozen corn
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, saute onion in butter until tender. Add okra; cook and stir for 5 minutes. Stir in the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until corn is tender.

3 cups sliced fresh or frozen okra, thawed
6 tablespoons buttermilk
2 teaspoons Louisiana-style hot sauce
1/4 cup all-purpose flour
1/4 cup cornmeal
1/2 teaspoon seasoned salt
1/4 teaspoon cayenne pepper
Oil for deep-fat frying
Additional salt and pepper, optional

Steps:

  • Pat okra dry with paper towels. Place buttermilk and hot sauce in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt and pepper. Dip okra in buttermilk mixture, then roll in cornmeal mixture., In a cast-iron or other heavy skillet, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, until golden brown, 1-1/2 to 2-1/2 minutes on each side. Drain on paper towels. If desired, season with additional salt and pepper.

2 cups okra
1/4 cup chopped yellow sweet onion
1 -4 small sweet pepper, red & green chopped and seeded
2 tablespoons margarine

1 chopped medium tomatoes

Steps:

  • Mix all ingredients, except tomato in large frying pan. Stir on medium heat till color turns to deep yellow on corn. (This is a good hint to test cooking time ).
  • Now, keeping stirring and add chopped tomato. Cook a few more minutes and serve hot !

4 cups fresh corn (about 9 ears of corn)
1/4 cup hot water
1 jar (2 ounces) diced pimientos, drained
1 tablespoon honey

Dash pepper
1/2 cup shredded cheddar cheese
4 bacon strips, cooked and crumbled

Steps:

  • In a large skillet, saute green pepper and onion in butter until tender. Add the corn, water, pimientos, honey, salt and pepper., Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until corn is tender. Sprinkle with cheese and bacon.

1 quart fresh okra
2 -3 tablespoons all-purpose flour
1 1/2 cups yellow plain cornmeal (stoneground is best)
1 egg, beaten
1 teaspoon salt
1/2 teaspoon pepper
lard or vegetable oil

Steps:

  • Wash okra and cut into 1/2 inch rounds.
  • Put in a mixing bowl and sprinkle with flour. Shake it around vigorously to coat evenly, then bounce in a wire strainer to remove all excess. Final coat should be very light!
  • Return to mixing bowl and add beaten egg. Stir to cover each piece of okra.
  • Place cornmeal in zipper bag with salt and pepper.
  • Add okra in 1 cup batches and shake until each piece is coated. Remove with something that will allow extra cornmeal to fall away. Put on a plate until all okra is coated.
  • Fry in 1/2 inch lard or oil at 400 degrees or med-high until pieces are golden brown.
  • Drain on brown paper or a wire rack.
  • Salt additionally if desired.

This is another recipe I grew up with. This is passed down from word of mouth, no one has ever written it down before! Fresh, fried okra is soo simple to fix and soo good!

Number Of Ingredients 6

1 lb fresh okra, cut into pieces (don't use the top of the stem but the bottom is wonderful to eat)
2 -3 cups cornmeal
1 egg
2 cups buttermilk (regular or lowfat milk is fine, too)
salt and pepper
oil

Steps:

  • In a big bowl beat egg with a fork, pour milk in and combine. Pour the cornmeal in another big bowl.
  • Pour enough oil in a big skillet, halfway up, or you can use a deep fryer. Set heat to Medium-high.
  • Put some okra pieces in milk mixture and then coat in cornmeal batter. Fry in skillet 10-15 min, occasionally turning/stirring them around. They are done when crispy and golden brown but not black!
  • Drain on paper towel lined plate. Sprinkle with salt and pepper (i don't use pepper but some people prefer it).
  • Repeat with rest of okra till all gone. Enjoy!
