SUSHI LAYERS
A friend makes these and they are delicious!! Wonderful appetizer from Company's Coming, Cooking for Diabetics. Chill time is cook time. Diabetic choices: 1/2 starch = 1 - 1 1/2 square

Steps:
- Bring water, vinegar, sugar and salt to a boil in medium saucepan.
- Stir in rice.
- Reduce heat, cover, simmer 15 to 20 minutes until water absorbed and rice is cooked.
- Stir in rice wine.
- Cool to room temperature.
- Makes about 8 cups rice.
- Line 9 x 13 inch pan with plastic wrap.
- Arrange thin even layer of lemon slices in bottom of pan.
- Sprinkle with capers.
- Cover 1/2 of pan with smoked salmon and 1/2 with shrimp.
- Using wet hands, pack about 2 1/2 cups cooked rice in an even layer on top.
- Lay 2 sheets of nori, trimmed to fit in single layer, on rice.
- Cover nori with cucumber and green onion.
- Pack 2 1/2 cups rice on top.
- Layer carrot and red pepper.
- Cover with remaining rice.
- Lay 2 sheets of nori, trimmed to fit in single layer, on rice.
- Cover with plastic wrap directly on surface.
- Set another 9 x 13 inch pan on sushi and press down firmly to compress layers evenly.
- Chill 2 hours.
- Remove top plastic wrap.
- Invert sushi onto cutting surface.
- Remove remaining plastic wrap.
- Use sharp, wet, clean knife for each cut.

- Makizushi or Maki Sushi (Sushi Rolls) Makizushi (巻き寿司) is the most well-known type of sushi. Maki means ‘roll’, therefore makizushi refers to rolled sushi.

- Temarizushi or Temari Sushi (Ball-Shaped Sushi) Temari Sushi (手まり寿司) are the prettiest and daintiest sushi you can easily make at home! Named after Temari balls, a traditional Japanese embroidered ball, Temari sushi is made with a mix of colorful toppings and sushi rice that are formed into ball shapes.
- Inarizushi or Inari Sushi (Sushi Wrapped in Fried Tofu Pouch) Made with sushi rice that is stuffed inside seasoned deep-fried tofu pockets called Inari Age, Inari Sushi (稲荷寿司) is one of the fastest and easiest sushi to make at home.
- Oshizushi (Pressed Sushi) Oshizushi (押し寿司) are made from layers of cured fish and sushi rice that are placed in a special box called Oshibako (押し箱), and then compressed together by weight, making them into a tightly pack sushi stack.
- Nigirizuhi or Nigiri Sushi. Nigirizushi (握り寿司), or Nigiri for short, is the most venerable in the sushi world. Sushi rice is formed into bite-size pillow shapes and then topped with fresh raw fish like tuna or salmon sashimi.
- Chirashizushi or Chirashi Sushi. Chirashizushi (ちらし寿司) literally means scattered sushi. Instead of the typically formed sushi, you get a colorful mix of ingredients scattered over the sushi rice that is served in a Hangiri or a large serving platter.
- Sushi Cake. Sushi Cake (寿司ケーキ) is a modern twist on regular sushi rolls. It’s basically Chirashi Sushi in cake form! To make the ‘cake’, use a mold either a round or square container to shape the sushi rice and toppings.
- Cup Sushi. Cup Sushi (カップ寿司) is another inventive take on Chirashi Sushi where the sushi is served in cups or fancy glasses. This allows you to serve the sushi into the individual portion, instead of serving the sushi on a large shared platter.
