1 romaine heart (3 cups chopped)
5 cups mixed greens
1/4 small red onion
1 to 2 green onions (thinly sliced)
1/2 cucumber (1 cup peeled and chopped)
1 carrot (shredded)
4 radishes (thinly sliced and halved)
1/4 cup pepperoncini
1/4 cup sunflower seeds
Sea salt, for garnish
One of these dressings: Creamy Avocado Dressing (shown here)
Best Balsamic Vinaigrette
Homemade Ranch Dressing
Dijon Mustard Dressing or Honey Mustard Dressing
Italian Dressing
Blue Cheese Dressing
Citrus Salad Dressing

Steps:

  • If using, make the Homemade Croutons.
  • Wash and chop the romaine. If necessary, wash the mixed greens. (You can use any mix of greens here; measure about 2 cups of greens per serving.)
  • Thinly slice the red onion. Thinly slice the green onion.
  • Peel and chop the cucumber.
  • Shred the carrot (we used this Handheld Julienne Shredder).
  • Thinly slice and half the radishes.
  • Choose and make the dressing (select from the dressing recipes above!).
  • Toss together the greens, red onion, green onion, cucumber, carrot, radishes, and pepperoncini. Top with sunflower seeds and croutons, and drizzle with dressing.

2 tablespoons vinegar (cider, balsamic or white)
1 teaspoon honey
seasoned salt & pepper to taste

Steps:

  • Place all salad ingredients in a large bowl.
  • Place dressing ingredients in a small bowl and whisk until well mixed.
  • Toss salad with dressing to taste and serve immediately.

2 hearts romaine lettuce
2 small plum tomatoes, diced
1 Kirby cucumber or 1/4 European seedless cucumber, diced
1 small yellow onion or 1/2 red onion, chopped
1 carrot, peeled and shredded
1/4 cup (a couple of glugs) extra-virgin olive oil
2 to 3 tablespoons (a couple of splashes) red wine vinegar
1 teaspoon sugar
Coarse salt and black pepper

Steps:

  • Place salad greens in a salad bowl and top with tomatoes, cucumbers, onion, and carrot. Place oil, vinegar and sugar in a small plastic container. Put the lid on the container and shake dressing until sugar dissolves, about 1 minute. Pour dressing over salad. Season salad with salt and pepper, to taste, and toss to combine.

5 ears corn, husked
1 (15 ounce) can black beans, rinsed and drained
2 avocados, diced
1 bunch fresh cilantro, roughly chopped
1 pint cherry tomatoes, halved
¼ large red onion, thinly sliced
1 jalapeno pepper, seeded and chopped
¼ cup olive oil
2 limes, zested and juiced

Steps:

  • Place corn into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 5 minutes. Drain and cool corn. Cut kernels from cob.
  • Mix corn kernels, black beans, avocados, cilantro, tomatoes, onion, and jalapeno pepper together in a bowl.
  • Whisk olive oil, lime zest, and lime juice together in a bowl; pour over corn mixture and toss to coat. Refrigerate until chilled, about 1 hour.

4 ounces uncooked buckwheat noodles or 4 ounces spaghetti, broken in half
2 tablespoons sesame seeds
3 tablespoons olive oil
3 tablespoons rice wine vinegar
1 teaspoon sesame oil
3 cloves garlic, minced
1/8 teaspoon crushed red pepper flakes (option)
salt and black pepper, to taste
1 1/2 cups small broccoli florets
1/2 cup sliced celery
1/4 cup chopped green onion
1 medium red bell pepper, coarsely chopped
1 (8 ounce) can sliced water chestnuts, drained

Steps:

  • Cook noodles according to package, drain, and rinse with cold water.
  • Meanwhile, in small bowl, combine all dressing ingredients, and blend well.
  • In large bowl, combine all salad ingredients, and mix well.
  • Add cooked noodles to salad; mix gently.

1 small cucumber, coarsely chopped (1 cup)
1/2 cup red onion, thinly sliced with slices cut in half
