¼ cup olive oil
2 cloves garlic, crushed
1 large red bell pepper, sliced thin
1 small yellow onion, sliced thin
1 (10 ounce) package frozen broccoli, thawed
½ cup chicken broth or water
½ cup tomato sauce
2 cups instant rice
½ cup shredded mozzarella cheese

Steps:

  • Heat olive oil and crushed garlic, stir in smoked sausage slices and cook until smoked sausage is browned.
  • Add pepper, onion, broccoli, chicken broth and tomato sauce and simmer for about 10 minutes until vegetables are tender and the liquid is absorbed.
  • In the meantime, cook rice according to package instructions. Stir rice into the skillet, sprinkle with cheese and serve.

1 tablespoon olive oil
1 medium red onion, (coarsely chopped)
1 small zucchini, (thickly sliced and quartered)
1 small summer squash, (thickly sliced and quartered)
4 ounces chopped broccoli or broccoli florets
2-3 ounces sliced cremini mushrooms
1-2 tablespoons minced garlic
Salt & black pepper to taste
1 jar spaghetti sauce ((24 ounces))
1/2 cup water
1 cup Instant Brown Rice ((or 2 cups pre-cooked brown rice))
4 ounces spinach
1 1/2 cups shredded mozzarella, (divided)

Steps:

  • In a large skillet over medium heat, melt butter.
  • Add COLEMAN ORGANIC® Spinach Chicken Sausage, onion, zucchini, summer squash, broccoli, mushrooms, and garlic to skillet. Season with salt and pepper.
  • Saute until tender.
  • When vegetables are tender, about 7-10 minutes, pour in spaghetti sauce and 1/2 cup water. Stir to combine.
  • Add instant rice, and stir to combine.
  • Cover and simmer for 15 minutes, or until rice is tender.
  • Uncover. Stir in spinach and 1/2 cup mozzarella. Stir to combine.
  • Top with remaining 1 cup mozzarella. Cover just until cheese is melted. Remove from heat.
  • Serve warm.

2 cups baby potatoes (diced)
12 ounces andouille sausage (sliced)
1 small zucchini (diced)
1/2 red bell pepper (diced)
1/2 green bell pepper (diced)

2 teaspoons Italian seasoning
1 teaspoon onion powder
salt and pepper (to taste)

Steps:

  • Heat 2 tablespoons ghee or butter over medium heat. Add the potatoes and cook until golden brown and tender. About 7-10 minutes. Remove the potatoes from the skillet and set aside.
  • Add the sausage to the same pan and cook until browned, 5 minutes, set aside with the potatoes.
  • Add in the zucchini and bell peppers. Sauté until tender 3-4 minutes.Stir in garlic and cook for an additional minute.
  • Add the potatoes and sausage back into the pan along with the Italian seasoning and onion powder.

1 pound of ground pork sausage
1 cup of uncooked white rice
One 15-ounce can of diced tomatoes
1 cup of water
1/2 cup of chopped onion
1 teaspoon of minced garlic
1 tablespoon of cooking oil
Salt and pepper to taste
1 medium sliced zucchini (optional)

Steps:

  • Pour the oil into the bottom of a large skillet heated on medium-high. Swirl it around until the pan is well coated.
  • Add the pork sausage to the skillet and break it up. As the sausage browns, turn the heat down to medium-low.
  • If there is excess oil after the sausage browns, drain all but a tablespoon because you need some oil to help cook the onions and add flavor.
  • Add the onions and garlic. Sauté until the onions are translucent.
  • If you want to add the sliced zucchini, add it now. Sauté for about 5 minutes.
  • Stir in the tomatoes. Mix well.
  • Add the rice, water, salt, and pepper. Stir. Turn the heat down to low.
  • Cover and continue to cook for about 20 minutes or until the rice is tender.
  • Serve hot.

1 tablespoon olive oil
1 pound smoked kielbasa (thinly sliced)
1 onion (finely chopped)
3 cloves garlic (minced)
1 small head Savoy or green cabbage (cored and thinly sliced)
1/2 cup dry white wine
Salt and freshly ground pepper (to taste)

Steps:

  • In a large skillet, over medium heat, heat the olive oil. Working in batches if necessary, add the sliced kielbasa and cook until browned, about 1-2 minutes per side. Remove with a slotted spoon and reserve.
  • Add more oil if necessary, then sauté the onion until translucent, about 2-3 minutes. Stir in the garlic and continue cooking until fragrant, about 1 minute.
  • Add the cabbage and stir to combine. Then, pour in the white wine, using a wooden spoon to deglaze the bottom of the pan. Cover and cook - stirring every now and then, until the cabbage is soft, about 10 minutes. Uncover and continue cooking another 5 minutes, to let the cabbage caramelize.
  • Season with salt and pepper. Then, stir back the sausage, tossing to combine, and cook for another couple of minutes, until the sausage is warmed through.
  • Serve immediately!

Steps:

  • Season shrimp with a small drizzle of oil, smoked paprika, and Old Bay seasoning.
  • Season potatoes with smoked paprika, adobo, cayenne pepper, cajun spice seasoning, onion powder, garlic powder salt, black pepper, roasted herb and garlic seasoning.
  • Add oil to a hot skillet along with potatoes. Allow the potatoes to cook for 8-10 minutes on medium heat. Toss the potatoes from side to side every 2-3 minutes to allow even cooking.
  • Push potatoes over to one side of the pan and onions, bell peppers, and saute' until translucent.
  • Using a separate pan/skillet fry the sausages until brown and cooked.
  • Saute' shrimp in a separate pan if necessary.
  • Combine both bell pepper mixture with potatoes. Add sausages and cooked shrimp.

1 lb breakfast sausage (i use reg. but hot is good also!)
1/2 green pepper
1/2 onion
1 can(s) tomatoes i use a pint jar of tomatoes i can all my own tomatoes so 16 oz is what i use in this recipe (i have used diced and whole either is good)
2 c sharp cheddar cheese
1 tsp minced garlic or powdered
1 pkg muller's ruffles pasta uncooked (or any thicker pasta that holds well)

Steps:

  • 1. In a large skillet add sausage, peppers and onions. Cook until sausage is just done.
  • 2. Add garlic and tomatoes and cook until it starts to bubble.
  • 3. Add 2/3 box of dry pasta (or more if you like more pasta) fold into sausage mixture. Add 2 cups water and stir into the mix bring to a low boil and reduce heat to simmer. Cover and let simmer until pasta is done adding more water as pasta absorbs it if needed.
  • 4. When pasta is cooked through turn off heat and top with cheese and re cover to melt.
  • 5. I serve this with with a homemade rustic Italian bread and a small side salad! :)
