This is a very simple but delicious way to prepare fresh salmon using just a few ingredients from your pantry.

1 tablespoon garlic powder
1 tablespoon dried basil
½ teaspoon salt
4 (6 ounce) salmon
2 tablespoons butter
4 lemon wedges

Steps:

  • Stir together the garlic powder, basil, and salt in a small bowl; rub in equal amounts onto the salmon fillets.
  • Melt the butter in a skillet over medium heat; cook the salmon in the butter until browned and flaky, about 5 minutes per side. Serve each piece of salmon with a lemon wedge.

6 -8 ounces salmon fillets
4 cups mixed salad greens (red leaf and herbs & spring greens salad mix)
1 -2 ounce parmesan cheese, shaved
1 -2 tablespoon sliced almonds (suggest Almond Accents brand Italian Parmesan flavored)
1 tablespoon extra virgin olive oil (I use Mt. Kofinas brand Mediterranean Blend infused Cretan olive oil)
1/4 cup caesar salad dressing (I highly recommend Cindy's Kitchen Roasted Garlic Caesar if you can find it)
1/4 teaspoon kosher salt (to taste)
1/2 teaspoon fresh ground black pepper (to taste)

Steps:

  • Preheat broiler to 425 deg F.
  • Place filet on non-stick foil in a shallow baking pan.
  • Drizzle fillet with the oilve oil; use your fingers or a brush to spread until coated.
  • Sprinkle with salt & freshly ground black pepper to taste.
  • Broil on top rack for 5-10 minutes, to desired doneness.
  • Meanwhile, chop leaf lettuce and soak together with spring mix in cold water in bowl; drain and spin dry.
  • Toss lettuce with Caesar dressing.
  • Divide lettuce between 2 serving plates.
  • Remove salmon from oven when done and allow salmon to rest for 5-10 minutes, then cut in half lengthwise and carefully slice the halves into strips on a bias.
  • Top lettuce on each plate with half of the sliced salmon and sprinkle with almonds, cheese and freshly ground black pepper to taste.

2 celery ribs, sliced
1 large apple, peeled and chopped
5 green onions, sliced
1/2 cup mayonnaise
2 teaspoons snipped fresh dill or 3/4 teaspoon dill weed
3/4 teaspoon minced fresh basil or dash dried basil
1/4 teaspoon garlic salt
1/4 teaspoon minced fresh tarragon or dash dried tarragon

Steps:

  • Place salmon in a large bowl and flake. Add remaining ingredients; stir gently. Cover and refrigerate until ready to serve.

100g couscous
1 tbsp olive oil
2 salmon fillets
200g sprouting broccoli , roughly shredded, larger stalks removed
juice 1 lemon
seeds from half a pomegranate
small handful pumpkin seeds
2 handfuls watercress
olive oil and extra lemon wedges, to serve

Steps:

  • Heat water in a tier steamer. Season the couscous, then toss with 1 tsp oil. Pour boiling water over the couscous so it covers it by 1cm, then set aside. When the water in the steamer comes to the boil, tip the broccoli into the water, then lay the salmon in the tier above. Cook for 3 mins until the salmon is cooked and the broccoli tender. Drain the broccoli and run it under cold water to cool.
  • Mix together the remaining oil and lemon juice. Toss the broccoli, pomegranate seeds and pumpkin seeds through the couscous with the lemon dressing. At the last moment, roughly chop the watercress and toss through the couscous. Serve with the salmon, lemon wedges for squeezing over and extra olive oil for drizzling, if you like.

1 lb salmon fillet, fresh or frozen
2 tablespoons butter
salt and pepper

Steps:

  • Preheat broiler to high with rack placed about 4 inches from heat source.
  • Put salmon skin side down in a roasting pan.
  • Sprinkle with salt and pepper and dot with butter.
  • Broil 6-7 minutes, then check, the top should be browning.
  • To tell if it's done, use a thin-bladed knife to cut a slit in the thickest part of the fillet and peek inside. The fish should be flaky and light in color.
  • If needed, broil for 1-2 minutes more.
  • When cooked, use a metal spatula to lift the salmon right off the skin and serve it browned side up.
  • For added yumminess, top with leek sauce. Recipe #388486.

  • Sear salmon: Season salmon filets with sea salt and ground pepper. Heat oil in a large skillet (a cast-iron works great) over medium-high heat.
