Great for a bake sale, a gift, or simply an afternoon treat to enjoy with a cuppa, this rocky road is quick to make and uses mainly storecupboard ingredients.

- Grease and line an 18cm square brownie tin with baking paper.
- Place 200g digestive biscuits in a freezer bag and bash with a rolling pin or just the side of your fist until they're broken into a mixture of everything between dust and 50p-sized lumps. Set aside.
- In a large saucepan melt 135g butter or margarine, 200g dark chocolate and 2-3 tbsp golden syrup over a gentle heat stirring constantly until there are no or almost no more lumps of chocolate visible, then remove from the heat. Leave to cool.
- Take the biscuits, 100g mini marshmallows and up to 100g of additional ingredients (dried fruit, nuts, popcorn, honeycomb), if you like, and stir into the chocolate mixture until everything is completely covered.
- Tip the mixture into the lined baking tin, and spread it out to the corners. Chill for at least 2 hrs then dust with icing sugar and cut into 12 fingers.

EASY ROCKY ROAD FUDGE RECIPE

- Lightly grease an 8 x 8-inch baking pan. Line the pan with foil or parchment paper, allowing the excess paper to overhang the sides, set aside.
- Place the chopped chocolate in a large, heatproof bowl. Fill a saucepan with a few inches of water (you want it about 1/4 full) and bring it to a boil. Reduce the heat to barely a simmer.
- Place your heatproof glass bowl holding your chocolate on top of the pot. Stir frequently, until the chocolate has melted and is completely smooth, about 8 minutes.
- Add in the butter and continue cooking until butter has melted. Add in sweetened condensed milk and stir well to combine.
- Remove from heat. Stir in the vanilla and almond extracts. Stir in the salt.
- Fold in the almonds and marshmallows and stir until combined.
- Using a sturdy spatula, scrape the fudge into the prepared pan and smooth the top. Refrigerate for at least 2 hours.
- Gently run a butter knife around the edge of the pan to loosen the fudge. Remove the fudge and transfer it to a cutting board.
- Peel off parchment paper, then slice the fudge into small pieces. Serve at once or store in the refrigerator for up to 1 month.
- You may also freeze the fudge, in an airtight freezer safe container for up to two months.

- 1. Prepare both boxes of cake mix per package directions so they are thick and cakey. Add 1-2 extra eggs to the batter. Pour batter into a greased 13x9" dish and bake per directions. It may take a little longer to cook so keep an eye on it and check for doneness with a toothpick. Cool for approximately 10 minutes.
- 2. Stir the chocolate frosting and add mini chocolate chips. Set aside.
- 3. Spread one container of marshmallow cream over brownies while they are still warm.
- 4. Slightly melt frosting in the microwave for approximately 20-30 seconds. Stir and drizzle over marshmallow cream. Run a butter knife gently through marshmallow and frosting mixture down one side and up the other to swirl the two together.
- 5. Sprinkle with chopped walnuts and toffee bars. If you place in the refrigerator for a few hours it will allow the brownies to be really dense and yummy and will make it a lot easier to cut apart. Happy baking!

- Preheat oven to 325 degrees.
- Spray a 9x13" baking pan with non-stick cooking spray. Stir cocoa and melted margarine together in a bowl.
- Add sugar and eggs and mix well.
- Add vanilla, flour, nuts and salt. Bake for about 20-25 minutes. Remove brownies from oven and top with chocolate chips, marshmallows, and chopped nuts.
- Place back in the oven for about 3 minutes, or until the marshmallows double in size. Remove from oven and let cool. Top with chocolate drizzle (completely optional) and serve.
- Mix all ingredients together. If it's too thick, add a little milk to thin it. If it's too thin, add a little more powdered sugar.

- Preheat the oven to 350 degrees F. Fit a sheet of foil over a 9 by 9-inch baking pan and leave a 2-inch overhang for the handles. Spray with nonstick spray.
- Add the butter and chocolate to a medium saucepan over low heat. Stir until melted and smooth, then remove from the heat. Stir in the brown sugar, and vanilla. Add the eggs, 1 at a time, and stir until well combined.
