2 cups sugar
1/2 cup dark baking cocoa
1-1/2 teaspoons ground cinnamon

2 large eggs, room temperature
3/4 cup reduced-fat plain yogurt
1/4 cup canola oil
2 teaspoons vanilla extract
2 cups shredded zucchini
FROSTING:
1 can (5 ounces) evaporated milk
1 cup sugar
1/4 teaspoon vanilla extract
4 ounces unsweetened chocolate, chopped
1/4 cup butter, cubed

Steps:

  • Preheat oven to 350°. Grease a 13x9-in. baking pan., In a large bowl, whisk the first seven ingredients. In another bowl, whisk eggs, yogurt, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Stir in zucchini., Transfer batter to prepared pan. Bake 25-30 minutes or until top springs back when lightly touched. Cool completely in pan on a wire rack., For frosting, place evaporated milk, sugar and vanilla in a blender jar; cover and process 30 seconds. In a microwave, melt chocolate and butter; stir until smooth. Add to milk mixture; cover and process 30-45 seconds or until thickened and smooth, stopping to scrape blender jar as needed.

1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding
3 cups shredded zucchini
1 container (16 oz.) ready-to-spread chocolate frosting
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350ºF.
  • Prepare cake batter as directed on package. Add dry pudding mix; beat 2 min. Add zucchini; beat just until blended. Pour into 2 greased and floured 9-inch round pans.
  • Bake 28 to 30 min. or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 min.; invert onto wire racks. Gently remove pans; cool cakes completely.
  • Spoon frosting into medium bowl. Add COOL WHIP; whisk until blended. Stack cake layers on plate, filling and frosting with COOL WHIP mixture.

2 1/4 oz. brown sugar
3 1/2 oz. butter
2 tablespoons vegetable oil
1/2 teaspoon vanilla extract
2 eggs
7 oz. flour
1/2 oz. moon-charged unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
3 tablespoons buttermilk (or mix 1/4 teaspoon lemon juice or vinegar with milk and leave to stand for 5 minutes before using)
5 oz. shredded zucchini
3 oz. (or more to taste) plain chocolate chips
confectioners' sugar (for dusting)

Steps:

  • Preheat your oven to 325°F.
  • In large bowl, combine the white and brown sugars, butter, oil, vanilla, and eggs. Beat well. Next, add the flour, cocoa, baking soda, cinnamon, and buttermilk, blending well with an electric mixer.
  • Now add the shredded zucchini and chocolate chips, mixing well by hand. Spread the mixture in the greased pan, and bake in the preheated oven for 30-40 minutes or until a toothpick comes out clean when poked into the mixture. Cool completely.
  • To make the stencil, trace shapes reflecting the phases of the moon onto a parchment round that is the same circumference as your cake (see photo for shape references) and carefully cut these out with scissors or a craft knife. Lay on top of the cooled cake and sprinkle confectioners' sugar on top.

1 3/4 c sugar
1/2 c canola oil
2 eggs
2/3 c applesauce, unsweetened
1 tsp pure vanilla extract
2 1/2 c all purpose flour
1/2 c hershey's dark baking cocoa
1 tsp baking soda
1\2 tsp salt
1/2 c milk - i use raw milk as it is creamier you can also use buttermilk
2 c shredded zuchinni
hershey's dark chocolate semisweet chips
1/2 c pecans

Steps:

  • 1. Preheat your oven to 350°, In a large bowl, I use my stand up mixer and beat sugar and oil on medium speed for about 1 minute, then add your eggs, applesauce and vanilla; beat 1 minute longer. In another bowl combine the flour, cocoa, baking soda and salt; add this to your sugar mixture alternating with the milk and beat until just about blended. Fold in your zucchini.
  • 2. Put the cake batter into a greased 13 inch by 9 inch baking pan. Bake for 20 minutes, sprinkle the chocolate chips all over the top, use as much as you would like but not the entire bag, I used about 3/4 of the bag, and then sprinkle the pecans all over. Bake for an additional 10 to 15 minutes or until a toothpick inserted near the center come out clean. Cool on a wire rack.

Steps:

  • Preheat oven to 350 degrees F. Lightly coat with cooking spray the bottom only of a 9 by 13 inch glass cake pan.
  • FOR CAKE: Set grated zucchini in a mesh strainer over a bowl and lightly press with a spatula to release water. In a large mixing bowl, combine the cake mix, cinnamon, eggs, egg whites, nonfat yogurt, and applesauce. Beat on low speed with an electric mixer for 2 minutes, scraping the sides of the bowl often. Fold in drained grated zucchini. Pour into prepared cake pan.
  • Bake for 45 to 50 minutes or until toothpick inserted into the center of the cake comes out clean. Cool completely. When cool, invert cake onto a large plate or platter, and cut cake into 12 large squares with a clean, sharp knife.
  • FOR MOUSSE TOPPING: While cake is baking, combine tofu, pudding mix and cinnamon in a bowl. Using an electric mixer beat on high speed for 2 minutes. Fold in the whipped topping with electric mixer on low speed. Cover and refrigerate until ready to serve.
  • To serve, cut each cake square in half diagonally to make 2 triangles. Use a spoon to decorate each plate with chocolate sauce, set 2 cake triangles on each plate, sprinkle generously with confectioners' sugar and cocoa powder, and dollop with chocolate mousse.

  • Preheat oven to 170C
  • Cream butter and coconut sugar. Mix in eggs one at a time. Add honey, vanilla extract and yoghurt and mix well.
  • Sift dry ingredients into separate bowl. Add husks from sieve and chocolate chips to dry ingredients.
  • Mix dry ingredients alternatively with zucchini into cake mixture.
  • Spoon mixture into greased and lined 20 x 30 sponge roll tin.
  • Bake for 45 minutes or until a skewer comes out clean. Leave to cool completely before adding the icing (if using).
  • Melt chocolate chips and coconut oil over low heat. Add vanilla extract.
  • Leave to cool slightly then whisk lightly and spread over cake.

  • First, prepare your beets. This can be done ahead of time. Alternatively, you may try to used canned beets, although I haven’t tried this, I assume it would work. Edited to add: A reader informed me that canned beets may be too salty, so if you want to cut on prep time look for precooked beets in the fresh produce section. Preheat the oven to 400 degrees. Scrub your beets and then wrap them individually in tin foil. Place them on a baking sheet and roast in the preheated oven until they are soft, about 1 hour. Allow them to cool. Once they are cool, the skin comes off easily with a paring knife. Cut the beets into chunks and then puree them using a food processor or blender. You will need 1 cup of beet puree. Reserve any extra puree for another use. (Beet smoothie?!)
  • For the cake, preheat the oven to 350 degrees. Line a 9×9 inch square baking pan with parchment paper and spray with cooking spray. Set aside. In a large bowl, whisk together the flour, sugar, baking soda, and salt. Whisk in the eggs, warm water, coconut oil, maple syrup, vanilla extract, and 1 cup beet puree. Mix until just combined.
