This recipe for Eggless Waffles makes a delicious breakfast and is easy to make. Yes, you can make waffles without eggs! And this recipe can be adapted to suit common food allergies - egg free, dairy free, or vegan. Make these egg free waffles if you are simply caught without eggs for your usual recipe.

1 1/2 cup milk
1 tablespoon vinegar ((I prefer cider vinegar, but any type will do))
1/4 cup unsalted butter
2 tablespoons maple syrup
1 teaspoon quality vanilla extract
1 3/4 cup flour ((I usually use a mix of all-purpose and spelt flour))
1/2 cup quick cooking oats
1 1/2 teaspoons baking powder
1 pinch salt

Steps:

  • Preheat a waffle iron.
  • In a medium bowl, mix together the milk and vinegar. Allow to sit aside for about 5 minutes.
  • In the meantime, in a small bowl, melt the butter in the microwave until it is just about melted (about 30-45 seconds). Whisk in the maple syrup while it is still warm. Mix in the vanilla.
  • In a large bowl, mix together the flour, oats, baking powder and salt. Make a well in the dry ingredients, and slowly add in the milk mixture and the butter mixture. Whisk together until everything is mixed and the batter has come together.
  • Pour or scoop the waffle batter into a hot waffle iron (I used a ¼ cup measuring cup for each waffle, but waffle makers vary). Cook waffles for about 4 minutes each, until cooked through. Once done, transfer the waffles to a cooling rack.

I finally created a delicious allergy-friendly Belgian waffle style recipe for my 8 year old! Plus, to pack in as many nutrients as possible I've added coconut milk, chia seeds and steel cut oatmeal for a wonderfully buttery, crunchy and healthy waffle - that no one can tell is allergy friendly! I often double the recipe and freeze extras that we can later heat up in the toaster. Hope you enjoy!

1 tablespoon chia seeds
4 teaspoons baking powder
1 tablespoon powdered egg substitute (no need to mix with water in advance)
1/3 teaspoon salt
3 tablespoons steel cut oats
1 1/3 cups flour
1/2 cup dairy-free butter substitute, melted
1 3/4 cups coconut milk (from carton or can, rice or soy milk works also)

Steps:

  • Add all ingredients into a blender and blend until well mixed.
  • Ladle mixture into hot waffle iron and bake.

For the food-allergic people in your life, egg-free, dairy-free French toast casserole! Crispy on the outside, chewy on the inside, it's nice as a brunch item. This is our version of a recipe from a Food Allergy and Anaphylaxis newsletter ( http://www.foodallergy.org/ ). The original recipe called for unflavored rice milk, 1/4 tsp vanilla extract, and milk-free, soy-free margarine, so it can be converted to a soy-free dish as well, though we haven't tried it. I think the critical thing is using bread with a nice, crisp texture; it wouldn't be as good with bread that was soft and squishy!

2 tablespoons soy margarine, melted (milk-free)
1 cup vanilla-flavored soymilk
1/3 cup light corn syrup (we use Karo light corn syrup)
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/8 cup dark molasses
1 (16 ounce) artisan bread (milk-free, egg-free) or 1 (16 ounce) French bread, cut into 1 inch cubes (milk-free, egg-free)
1/2 teaspoon cinnamon (again)

Steps:

  • Pre-heat oven to 400°F.
  • Spray a 9x13" baking dish with cooking spray (note: do _NOT_ use butter-flavor cooking spray! This contains dairy ingredients).
  • Combine melted margarine, vanilla soy milk, corn syrup, 1/2 tsp cinnamon, salt, and molasses in a large bowl.
  • Fold bread into mixture so that it absorbs liquid evenly. Place in prepared baking dish, and cover with aluminum foil.
  • Bake 15 minutes.
  • Remove foil, and bake 15 minutes more.
  • Sprinkle 1/2 tsp cinnamon over the top.
  • Top as desired - allergen-safe syrup, fruit, or powdered sugar.

4 eggs
1/3 cup orange juice
1 teaspoon vanilla
1 1/4 cups milk
1 1/2 cups flour
1/2 cup whole wheat pastry flour
1 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Separate eggs.
  • Beat the whites until stiff.
  • Mix egg yolks, orange juice and vanilla until frothy.
  • Add milk and stir a couple of times.
  • Mix dry ingredients together and add slowly to liquids mixing until there are no lumps.
  • Fold the egg whites.
  • Server with fresh fruit (raspberries, blueberries, bananas, strawberries, applesauce) and vanilla yogurt.
  • If you must use syrup remember that the orange juice provides sweetener.
  • Can be used to make pancakes too.

  • Mix the nut milk, vanilla extract and the lemon juice or ACV together in a small bowl/measuring cup. Set aside for about 5 minutes - this will make the vegan buttermilk.
  • In a large bowl, sift the flour, baking powder and salt. The sifting really helps to make the waffles fluffy.
  • Add the sugar, melted butter/oil, buttermilk mixture into the dry ingredients and using a spatula, gently mix the batter until JUST combined. It's okay (and normal) to have some lumps. The batter should be thick and scoopable.
  • Turn on and preheat your waffle maker according to which done level that you want. I set mine to about medium because I like mine crisp and golden but also very fluffy.
